Steps:
- Preheat the oven to 375°F. Spray a large baking pan with raised sides with cooking spray.
- Cut a thin slice from the bottom of each apple so they will stand up straight in the pan. Slice the tops. Using a corer or a melon baller, remove the center and the seeds from the fruit. Carefully remove most of the flesh to create a "bowl," leaving about 1/4 inch of flesh around the sides and bottom. Avoid creating a hole at the bottom, or breaking the apple.
- Place the apples in the prepared baking pan.
- In a food processor, combine the nuts, dried fruit, 1/4 cup brown sugar, cinnamon, and sea salt. Pulse until roughly minced.
- Stuff each apple with the mixture, letting it overflow slightly outside of the apple for a rustic look.
- In a small bowl, combine the cider and the other 1/4 cup of brown sugar. Mix until the sugar is dissolved.
- Spoon about 1 teaspoon of the liquid over each apple. Pour the remaining liquid in the pan.
- Top each apple with a slice of butter. Cover the pan with foil and bake for 20 minutes. Remove the foil and bake for another 15-20 minutes, or until the apples are tender when pierced with a fork.
- Place the apples in bowls and pour any extra sauce over them. Serve with whipped cream or ice cream, and a dash of cinnamon.

- In a small bowl, combine the chopped walnuts, cinnamon, brown sugar, maple syrup and melted butter.
- Stuff the apples on the mixture, then place them on an oven-proof dish. Divide the filling evenly between each half.
- Mix the corn flour with a cup of water, and add it to the dish (if not using corn flour, just add the water), then bake in the preheated oven at 200 degrees C (390 degrees Fahrenheit) covered with a kitchen foil for 20 minutes, then uncovered for a further 20-30 minutes or until the apples are tender, but still holding their shape.

- Core each apple, leaving the bottom of the apple intact. Use a small melon baller or spoon to scoop out a little bit of the top and inside flesh to form a cavity. Alternately: Halve each apple lengthwise and use a melon baller or small spoon to scoop out the core and form a cavity.
- For the filling: combine flour, brown sugar, cinnamon, salt, nuts, and oats. Add the butter, and stir to combine. The mixture should hold together if you gather clumps and press them together.
- Divide the filling between the prepared apples. I used between 3-4 tablespoons of filling per apple (this will depend on the size of your apples, and how large of a cavity you created). Place the filled apples in a baking dish, and fill the bottom of the baking dish with about an inch of water.
