BAKED FRUIT DUMPLINGS
A wonderful light dessert. Good with apples, pears, blueberries, raisins, nuts, and probably anything you think of. Serve with vanilla ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 7x11 inch baking dish.
- In a large bowl, mix flour, baking powder, salt and brown sugar. Cut in butter. Pour in milk and stir to form a dough. Turn out onto a well-floured surface and roll out. Cut into 6 - 6 inch squares.
- Place a whole apple in the center of each square. Fill the core with blueberries. Drizzle with maple syrup. Pull up corners of dough and pinch edges together to seal. Place dumplings in prepared pan and sprinkle with cinnamon and nutmeg.
- Combine remaining maple syrup with enough water to pour over dumplings to a 1 inch depth in dish. Submerge remaining blueberries and apple peelings with dried orange peel in liquid.
- Bake in preheated oven 45 minutes, basting as necessary, until crisp and browned. Serve warm with sauce.

- Heat the oven to 425 degrees F.
- Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

- Preheat oven to 350°F (180°C).In a small pot, bring cider to a boil.Add apricots, figs, prunes, cranberries and raisins.Cook 2-3 minutes, turn off heat, and let stand for 1 hour. - Preheat the oven to 375°F. Spray a large baking pan with raised sides with cooking spray.
- Cut a thin slice from the bottom of each apple so they will stand up straight in the pan. Slice the tops. Using a corer or a melon baller, remove the center and the seeds from the fruit. Carefully remove most of the flesh to create a "bowl," leaving about 1/4 inch of flesh around the sides and bottom. Avoid creating a hole at the bottom, or breaking the apple.
- Place the apples in the prepared baking pan.
- In a food processor, combine the nuts, dried fruit, 1/4 cup brown sugar, cinnamon, and sea salt. Pulse until roughly minced.
- Stuff each apple with the mixture, letting it overflow slightly outside of the apple for a rustic look.
- In a small bowl, combine the cider and the other 1/4 cup of brown sugar. Mix until the sugar is dissolved.
- Spoon about 1 teaspoon of the liquid over each apple. Pour the remaining liquid in the pan.
- Top each apple with a slice of butter. Cover the pan with foil and bake for 20 minutes. Remove the foil and bake for another 15-20 minutes, or until the apples are tender when pierced with a fork.
- Place the apples in bowls and pour any extra sauce over them. Serve with whipped cream or ice cream, and a dash of cinnamon.

- 1. Preheat oven to 375^. Butter or spray a baking pan. Set aside. Wash stem and core apples. Then remove apple pulp from apples, leaving about 1/4-inch shell all around, being careful not to break apples. Dip apples in salted water to prevent browning. Drain upside down on paper towels. Set aside.
- 2. In a large bowl combine the remaining ingredients, plus the apple pulp, but not the rum. Mix well to combine. Place apples in prepared baking dish and fill with this mixture. Pour melted butter evenly over mixture in apples. Drizzle some of the rum over the apples and mixture; reserving some of the rum to baste the apples halfway into the baking.Add a small amount of water(1/4 cup)bottom of the pan. SPICED ROASTED APPLES & BLACKBERRIES

- Preheat the oven to 180C/gas 4/fan 160C. Core the apples so you have a hole the size of a pound coin in each one. Make a cut just into the skin around the middle of each apple.
- Stand the apples in a shallow baking dish large enough to take all four. Mix together the honey, cinnamon and orange zest, put an equal amount into the cavity of each apple, then pour the orange juice into the dish.
- Roast the apples for about 40 minutes, spooning the juices over them occasionally. Then, when the apples are almost ready, spoon the blackberries around and over the top of each apple. Steps:
- Preheat oven to 350°F. Core apples with corer. Stand apples up and make 4 evenly spaced vertical cuts starting from top of each apple and stopping halfway from bottom to keep apple intact. Brush inside of apples with lemon juice and stand apples in a 9-inch ceramic or glass pie plate.
- Toss together apricots, currants, pecans, brown sugar, cinnamon, and nutmeg in a bowl. Rub softened butter into dried-fruit mixture with your fingers until combined well, then pack center of each apple with mixture. Put a piece of remaining butter on top of each apple. Pour cider and vanilla around apples and cover pie plate tightly with foil.
- Bake in middle of oven, basting once, until apples are just tender when pierced with a fork, about 40 minutes. Remove foil and continue to bake until apples are very tender but not falling apart, 20 to 30 minutes more.
- Transfer to serving dishes and spoon sauce over and around apples. Serve with dollops of yogurt.

- Pre-heat the oven to 180C/160C Fan/Gas 4. Wash and dry the apples, then remove the cores using an apple corer or a sharp knife. Enlarge the holes slightly with a knife. Make a cut in the skin around the middle of each apple and put in an ovenproof dish.
- Mix together the chopped apricots, sugar, pomegranate seeds and sultanas. Carefully fill the apples with the mixture. Cover the filling at the top of each one with a small piece of foil to stop it burning.
- Bake in the oven for 35 minutes, basting with the juices halfway through. Remove the foil, baste again and return to the oven for another 10 minutes. Spoon over the juices to serve.
