BAKED ANGEL HAIR WITH EGGPLANT

1/3 cup plus 1/4 cup extra-virgin olive oil
4 to 6 Japanese eggplants (about 2 pounds total), cut into 1-inch cubes
Salt and freshly ground black pepper
1 tablespoon minced garlic
1 pound mild Italian turkey sausage, casings removed
1/3 cup dry red wine
3 cups marinara sauce
1 teaspoon dried crushed red pepper flakes
8 ounces angel hair pasta
1 pound mozzarella, diced
1 cup freshly grated Parmesan
1 (17 1/4-ounce) package frozen puff pastry (2 sheets), thawed

Steps:

  • Heat 1/3 cup of oil in a large nonstick frying pan over medium-high heat. Add half of the eggplant and toss to coat in the oil. Sprinkle with salt and pepper. Saute the eggplant until it is golden and tender, about 10 minutes. Decrease the heat to medium. Add half of the garlic and saute until it is tender, about 2 minutes longer. Using a slotted spoon, transfer the eggplant mixture to a large bowl. Repeat with the remaining 1/4 cup oil and the remaining eggplant and garlic.
  • Add the sausage and wine to the same frying pan. Cook over medium-high heat until the wine evaporates and the sausage is brown, breaking the sausage into pieces with the back of a spoon, about 8 minutes. Add the sausage, marinara sauce, and crushed red pepper to the eggplant mixture, and toss to combine.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the angel hair and cook for 1 to 2 minutes, stirring constantly, until pasta is still slightly crunchy and undercooked. Drain. Toss the angel hair with the eggplant mixture. Cool completely. Add the mozzarella and Parmesan and toss to combine.
  • Preheat the oven to 375 degrees F.
  • Roll out 1 pastry sheet on a floured surface to a 13 1/2-inch square. Transfer to a 9-inch springform pan, allowing the excess pastry to hang over the rim. Spoon the pasta mixture into the pan. Place the second pastry sheet atop the pasta filling. Pinch the edges of the pastry sheets together to seal. Trim the overhanging pastry edges to about 1-inch. Fold the pastry edges in to form a decorative border. Cut a slit in the center of the top pastry to allow the steam to escape.
  • Bake until the pastry is brown and puffed on top, about 1 hour and 30 minutes. Let stand for 20 minutes. Remove the pan sides and serve.

6 tablespoons unsalted butter, diced, at room temperature, plus extra for greasing pan
1 pound capellini (angel hair) pasta
1 cup plus 1/2 cup grated Parmesan
3 eggs, at room temperature, beaten
3/4 cup chopped fresh flat-leaf parsley
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup plain breadcrumbs
1 pound prosciutto, sliced 1/8-inch thick and coarsely chopped
2 cups (8 ounces) shredded smoked mozzarella
3 tablespoons olive oil
1 (25-ounce) jar marinara or tomato-basil sauce, warmed

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch diameter nonstick spring form pan. Set aside.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 4 to 5 minutes. Drain well and place in a large bowl. Add 4 tablespoons butter, 1 cup Parmesan, eggs, parsley, salt and pepper. Toss well until coated.
  • Sprinkle 1/4 cup breadcrumbs in the bottom of the prepared pan. Spread 1/3 of the seasoned pasta on top. Arrange half of the prosciutto in a single layer on top. Sprinkle half of the mozzarella on top. Add 1/3 of the pasta and push down lightly to form an even layer. Repeat the layers with 1/4 cup breadcrumbs, the remaining pasta, prosciutto, and mozzarella. In a small bowl, mix the remaining 1/2 cup breadcrumbs and Parmesan together. Sprinkle over the layers and dot with the remaining 2 tablespoons butter. Drizzle with olive oil and bake until light golden on top, 45 to 50 minutes. Cool for 10 minutes.
  • Remove the sides of the pan and cut the pasta into wedges. Serve with warm marinara sauce.

EGGPLANT PARMESAN WITH ANGEL HAIR PASTA

This is one of my most favorite recipes. The key to this is to soak the eggplant slices in warm salt water to take out the bitter taste of the eggplant. This particular recipe you don't fry the eggplant , your bake it until lightly browned , transfer to a lasagna or 9x12 baking dish to finish making this great tasting dish....

2 small (or 1 medium) eggplant (rinsed, peeled and cut 1/4 inch thick slices, soaked in warm salt water)
1 1/2 c seasoned italian bread crumbs w/ few shakes of garlic powder and parsley flakes added to crumbs
2 eggs beaten w/ 2 tablespoons milk
3 1/2 c (approx) "meatless" pasta sauce (jar or homemade)
1 pkg (8oz) shredded italian cheese or shredded mozzarella cheese with 1/3 cup of grated parmesan and romano cheese
salt / pepper to taste
parsley flakes for garnish (optional)
1/2 lb cooked pasta ( i prefer angel hair or vermicelli )

Steps:

  • 1. Once eggplant slices have been soaked in warm salted water (approx 2tbs salt) for approx 15 minutes. Rinse and drain eggplant and lay slices on paper towel and blot excess water. Dip each slice into beaten egg mixture, transfer to bread crumbs, coat well , place slices on non stick cookie sheet, parchment paper lined sheet. Bake in 375 degree oven for 12 minutes on each side ... or until slightly browned. Remove from oven, set aside and LOWER oven to 325 degrees.
  • 2. Spread evenly approx 2/3 cup of prepared pasta sauce on bottom of baking dish. Place eggplant slices 1 each to cover bottom of sauce lined dish. Place 1 heaping tablespoon of pasta sauce over each eggplant slice spreading sauce over entire slice with back of spoon ( you can add more sauce / your choice) Place 1 heaping tablespoon of shredded chesee over each sauce coated eggplant slice. Repeat this process, (like when making lasagna) layering eggplant slices, sauce and cheese (use all the remaining cheese .. if you like a lot of cheese add extra to final topping). Set aside remaining sauce.
  • 3. Bake 30-40 minutes until cheese is melted and a golden brown. Use remaining sauce to spoon over cooked angel hair / vermicelli pasta (or pasta of your choice)
  • 4. Suggestion: Serve with garlic bread and Italian style green beans (sold in frozen bags )and side salad. Enjoy !!

2 cups (165 g) diced eggplant (1 small globe eggplant or 2 Asian eggplants)
1 package (8 ounces, or 225 g) tempeh, cut into 1/2-inch (1 cm) cubes
2 tablespoons (30 ml) water or olive oil
1 small-size yellow onion, chopped
1 celery stalk, chopped
1 teaspoon (2 g) fennel seeds
1 to 2 tablespoons (8 to 16 g) capers, rinsed
2 tablespoons (30 ml) balsamic vinegar
1 can or jar ( 15 ounces, or 420 g) tomato sauce
1/2 teaspoon red pepper flakes or hot sauce
Salt and pepper, to taste
1 2/3 cups (210 g) all-purpose flour
1 tablespoon (15 g) baking powder (look for aluminum-free)
1/2 teaspoon salt
2/3 cup (160 ml) nondairy milk (soy, rice, almond, hazelnut, hemp, or oat)
1/3 cup (80 ml) canola oil or nondairy, nonhydrogenated butter (such as Earth Balance), melted

Steps:

  • Preheat oven to 425°F (220°C, or gas mark 7). Coat 4 or 6 individual ramekins with oil, and set aside. You also can use a 9-inch (23 cm) square pan or a rectangular pan.
  • To make filling, steam eggplant and tempeh for 10 to 15 minutes, until eggplant is soft and translucent. At the same time, add water or oil to a large-size sauté pan and cook onion and celery until soft. Add fennel seeds, capers, and vinegar, and sauté for 1 minute. Add tomato sauce, red pepper flakes, and cooked tempeh and eggplant. Simmer for 10 minutes, stirring occasionally.
  • Meanwhile, prepare biscuit dough. Place flour, baking powder, and salt in a mixing bowl, and stir together. Pour in nondairy milk and butter or oil, and mix just until dry ingredients are evenly moistened. The dough should be lumpy and sticky, not smooth like cake batter.
  • Remove sauté pan from heat, and season filling with salt and pepper, to taste.
  • Divide filling evenly among prepared ramekins. Drop dough by small spoonfuls on top of each ramekin. Carefully spread dough with back of spoon so it evenly covers filling. Bake pot pies until crust is golden, about 15 minutes. Serve hot.
