- Place a parchment paper-lined baking sheet in the oven.
- To make four personal-sized pizzas, divide pizza dough into fourths.
- Roll out each piece of dough to desired thickness.

Steps:
- Make your dough, or thaw your store bough dough. Spray pans with non-stick spray. Then preheat the oven to 425 degrees F and roll it out to fit your pizza pans. Brush with about 1 teaspoon oil and bake for 10-12 minutes. You want it baked about half way through. It will look dry on top but won't be browned.
- Set aside and let cool to room temperature (15-30 minutes).
- Spread your sauce on, top with your meat and cheese.
- Wrap it in plastic wrap and then tin foil to protect from freezer burn.
- Label it with the name and when it was made! Include the baking instructions: "Bake at 425 degrees F for 15-20 minutes or until golden brown."
- Freeze it up to 3 months.
- When ready to serve, heat oven to 425 degrees F and bake for 15-20 minutes or until golden brown and cheese is melted.

Steps:
- Divide and spread the pizza sauce among the English muffin halves. Sprinkle the mozzarella in an even layer over the top of the sauce on each.
- Line a baking sheet with parchment paper and place the muffin halves next to each other in a row on one end. Spread out the pepperoni, peppers and onions, bacon, ham and pineapple in separate rows in a single layer next to the muffins. Sprinkle the oregano over everything. Freeze, uncovered, until the muffins are hard, 1 to 2 hours.
- Tightly wrap each English muffin half with plastic wrap and place in freezer-safe bags. Remove the toppings to separate freezer-safe bags. Freeze the muffins and toppings until ready to use.
- When ready to cook, preheat the oven or toaster oven to 400 degrees F. Remove as many English muffin halves as you like from the freezer. Top each base with the toppings of your choice. Bake until the cheese is melted and the muffins are cooked through, 15 to 18 minutes. Remove and rest 2 minutes before eating.
HOMEMADE FREEZER PIZZA
Instead of buying one of those freezer pizza's that you can't really choose the toppings on why not make a few yourself and have ready in the freezer! This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!

Steps:
- Place the warm water in a large mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
- Add the oil, flour, salt, and herbs. Stir with a wooden spoon until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for about five minutes until a smooth dough ball is formed.
- Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
- Combine the dough ingredients in the bread machine pan, according to the order recommended by the manufacturer.
- Set on dough and start the machine, checking after ten minutes to make sure all the ingredients have been incorporated and not stuck to the side of the pan. Scrape down any stray ingredients to insure they are mixed in.
- Place the warm water in the mixing bowl. Stir in the sugar and sprinkle the yeast over the top. Allow this to set for five minutes. The mixture will start to foam and bubble.
- Add the oil, flour, salt, and herbs. Attach the dough hook and run the machine until all the ingredients are incorporated, stopping the machine to scrape the sides as necessary. Knead with the dough hook until a smooth dough ball is formed.
- Transfer the dough ball to a greased bowl, cover, and allow to rise until doubled in bulk, about an hour.
- Preheat the oven to 500 °. Spray baking sheets with nonstick cooking spray and sprinkle with corn meal to prevent sticking or line the pans with parchment paper for easier cleanup.
- Divide the dough into 16 portions. Flatten each portion into a thin round and place on the cooking sheet.
- Spread sauce and sprinkle toppings as desired.
- Bake for 8 to 10 minutes or until the crust is crisp and the cheese melted and lightly browned.
- Wrap cooled pizzas in foil or plastic wrap and stash in a larger ziptop freezer bag. Thaw and reheat in a 350 oven for about 5 minutes.
- Assemble the pizzas as directed, but instead of baking, place the trays in the freezer. Once the pizzas are frozen solid (this will take several hours), stack them between layers of patty papers or waxed paper and store in a freezer bag or box in the freezer. To serve: bake from frozen at 450 degrees, for 10 to 12 minutes.

Steps:
- Make up the bread dough following pack instructions, and transfer to an oiled bowl to rise for about 1 hr.
- Knock back in the bowl by squashing all the air out of the dough with your fist. Divide the dough into 6 and roll each one on a lightly floured surface to a circle about 18cm in diameter. Put dough you're not using under a damp tea towel or oiled cling film to stop it drying out.
- Put the pizza bases on large oiled baking sheets - you may need 2 or 3. Spread 1 tbsp sauce or passata on each base, then scatter on the basil, tomatoes, mozzarella and Parmesan (or whatever you fancy). You can freeze the pizzas now, if you like, on the baking sheet, wrapped in cling film. Or if eating straight away, heat oven to 240C/220C fan/gas 9. Cook for 8-12 mins, until crisp and golden. To cook from frozen, remove the cling film and heat oven to 220C/200C fan/gas 7. Bake for 10-14 mins until crisp and golden.

FOCACCIA PIZZA RECIPE
Steps:
- Gather the focaccia dough ingredients.
- In a stand mixer fitted with the paddle attachment, mix together the warm water, honey, and yeast until combined; let stand for 5 minutes. Alternatively, use a large bowl and mix by hand.
- Add 2 1/4 cups of the flour, salt and 2 tablespoons of olive oil-mix to create a shaggy dough, scraping down the bowl occasionally.
- Switch to the dough hook; add enough of the remaining 1/2 cup flour to make a sticky dough, mixing on medium speed for 3 to 4 minutes, or knead with hands on a lightly floured surface. The dough should be sticky, so try to avoid adding too much flour.
- Grease a large bowl with 1 tablespoon of olive oil. Place the dough in the bowl, covered, and let it rise until doubled in size, about 1 hour.
- Add the remaining 3 tablespoons of olive oil to a rimmed 10 x 15-inch, or 9 x 13-inch sheet pan.
- Place the dough in the pan and let it rest for 15 minutes-this will relax the dough, making it easier to stretch and form to the pan.
- Gently stretch the dough to fit in the pan. Cover it loosely and let it rise for 20 minutes longer. Meanwhile, position a rack in the center of the oven and heat to 450 F. Bake the Pizza
- Gather the toppings and the risen dough.
- Dimple the dough all over with fingertips, transfer to the oven and bake for 10 minutes.
- Remove the par-baked focaccia from the oven. Evenly spread the focaccia with pizza sauce to taste. Top evenly with sliced mozzarella cheese, freshly ground black pepper, and crushed red pepper flakes, if using.
- Return the focaccia to the oven and bake until the cheese melts and the crust is golden brown, 10 to 15 minutes longer.
- Remove the pizza to a rack. Drizzle with 2 teaspoons of olive oil.
- Sprinkle with the Parmesan cheese and scatter the fresh basil evenly over the pizza. Slice and serve immediately.

- Add the flour and Pizza Dough Flavor, starting with 5 1/2 cups (660g) flour and adding more as necessary to make a soft, smooth dough.
- Knead the dough (with your hands, a mixer, or your bread machine set on the dough cycle) until it's smooth and elastic, about 7 to 10 minutes.
- Place the dough in a lightly greased bowl or other container, cover it, and let it rise for 1 to 2 hours, whatever fits your schedule.
- Gently deflate the dough, and divide it into four pieces, for medium-crust pizza; or three pieces, for thicker crusts. Use a rolling pin to roll each piece, on a lightly greased surface, into a circle to fit a 12" pizza pan.
- Place the rounds on pizza pans; on baking sheets; or, if you have a pizza stone in your oven, on parchment.
- Preheat your oven to 450°F. While it's heating, get out your toppings, which you've prepared ahead. Some possibilities include sliced pepperoni; sautéed mushrooms, onions, or peppers; cooked meats; olives; anchovies; and grated or shredded cheese.
- Brush each crust with a bit of olive oil; spread pizza or spaghetti sauce lightly over the surface, and let your guests add their favorite toppings. Sprinkle the top with grated cheese.
- Bake the pizzas for 15 to 20 minutes, until they're golden brown, the toppings are hot and bubbly, and the cheese is melted. Remove the pizzas from the oven.
- Immediately transfer pizzas to a cooling rack, so their bottoms don't get soggy. After about 10 minutes (to allow the toppings to set), slice and serve; a pair of scissors is a great cutting tool.
