Number Of Ingredients 9

250 g (1/2 pack) long macaroni, broken in half
8 oz grated mild cheddar cheese
1 can (370 ml) evaporated milk
1 medium onion, sliced thin
2 cloves garlic, minced
2 to 4 tablespoon mayo
several squirts (1/4 to 1/2 cup) tomato ketchup
several squirts (1/4 to 1/2 cup) ballpark mustard
salt and pepper to taste

Steps:

  • Preheat oven to 350F Bring large pot of salted water to boil; add macaroni and cook approximately 10 minutes, until al dente. Drain macaroni, put in large bowl. Mix in all other ingredients, reserving 1/3 of the cheese, using enough mustard and ketchup to get a medium orange colour. Pour into greased 9X9 baking dish; sprinkle reserved cheese on top. Bake until top cheese is golden brown, about 1 hour. Allow pie to rest 15 minutes; cut into squares and serve

Pie:
1 lb. rice penne or fusilli noodles
1 green pepper, chopped
1 Tbsp. paprika
1 tsp. white pepper
2 Tbsp. mayonnaise
2 Tbsp. ketchup
1 onion, chopped
1 Tbsp. mustard
fresh parsley, chopped
3 Tbsp. Bajan seasoning (see below)
2 pkgs. shredded cheese, TexMex/Southwestern and 3 Cheese
Caribbean hot sauce, to taste
Topping:
grated old white cheddar
bread crumbs
Parmesan cheese
Bajan Seasoning (Green Sauce):
white pepper
garlic
onion
clove
thyme
green onions
parsley
hot pepper
paprika
Process and let sit. Can be purchased at Mugena - 911A Richmond Road as "green sauce".

Steps:

  • Preheat oven to 350* Cook and drain noodles. Transfer to a large bowl and add all ingredients. Mix well and place in large Pyrex dish. Add old cheese, bread crumbs and Parmesan. Cook in 350* oven for 30 to 45 minutes or until top looks slightly brown.

32 ounces elbow macaroni
3 eggs
3 cups milk
4 cups shredded Cheddar cheese
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
  • Bake in a preheated over for an hour or until a knife inserted comes out clean.

Steps:

  • Make up the pasta, according to the pack instructions - drain well and divide between 2 medium dishes or 1 large one
  • Make a roux - melt the butter, add the green seasoning and hot pepper sauce, to taste. Add the flour and stir well. Gradually add the milk, stirring well between additions. When it has the consistency of really thick cream, stir in half of the cheese. Add enough milk to a double cream consistency. Check for seasoning and add salt and pepper to taste.
  • Mix the sauce with the pasta, don't make it too wet. It should come to the top of the pasta, that should be enough. Cover the surface with the rest of the cheese and put in a pre-heated oven 180c for approx 45 minutes
