SPICY GRILLED CHICKEN WITH BAJA BLACK BEANS AND RICE



Spicy Grilled Chicken with Baja Black Beans and Rice image

Step up your typical grilled chicken breast recipe. Our Spicy Grilled Chicken with Baja Black Beans and Rice recipe is a quick and easy grilled chicken recipe that incorporates uniquely blended flavors for your marinade and is complimented by our special baja black beans and rice recipe.

1 teaspoon chili powder
0.5 teaspoon ground cumin
0.5 teaspoon garlic powder
0.25 teaspoon onion powder
0.25 teaspoon smoked paprika or regular paprika
4 skinless, boneless chicken breast halves (1-1/4 to 1-1/2 pounds total)
2.5 cup chicken broth
2 cup frozen whole kernel corn
1 14.5 ounce can fire-roasted diced tomatoes, undrained
1.25 cup long grain rice
1 cup canned black beans, rinsed and drained
1 4 ounce can diced green chile peppers
1 cup chopped zucchini (1 small)
1 tablespoon snipped fresh cilantro
Crumbled Cotija cheese (optional)
Avocado slices (optional)

Steps:

  • In a small bowl combine chili powder, cumin, garlic powder, onion powder, and paprika. Sprinkle evenly over all sides of the chicken breast halves; rub in with your fingers. Set aside.
  • In a 4-quart Dutch oven combine broth, corn, tomatoes, uncooked rice, beans, and chile peppers. Bring to boiling; reduce heat. Simmer, covered, for 12 minutes. Stir in zucchini. Cook, covered, for 3 to 5 minutes more or until zucchini is crisp-tender. Stir in cilantro.
  • Meanwhile, for a charcoal grill, grill chicken breasts on the lightly greased rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until tender and no longer pink (170°F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place chicken on the lightly greased grill rack over heat. Cover and grill as above.)
  • Transfer chicken to a cutting board. Let stand for 5 minutes; slice each breast half. Serve chicken with rice mixture. If desired, serve with cheese and avocado.

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
4 fresh tomatoes, diced
1/2 cup red onion, chopped
1/2 cup cilantro, chopped
1 jalapeno pepper, seeded and diced
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 dashes hot sauce

Steps:

  • Cook brown rice.
  • In a medium bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, oil, salt, pepper and hot sauce.
  • To serve, Place a scoop of hot rice in a bowl or on a plate, top with a generous scoop of the black bean mixture.
  • Stir together before eating.

1 (8 ounce) package yellow rice mix
1 ¼ cups water
2 tablespoons olive oil
1 (15 ounce) can black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn, drained
2 teaspoons lime juice
1 teaspoon ground cumin

Steps:

  • Bring the rice, water, and olive oil to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Mix together the beans, corn, lime juice, and cumin in a large bowl. Stir in the cooked rice and serve.

Steps:

  • In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
  • Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

1 medium onion, chopped
2 sweet green peppers or 2 sweet red peppers, seeded & diced
2 garlic cloves, minced
3 cups cooked black beans, drained
1 tablespoon lemon juice
1 tablespoon frozen orange juice concentrate
2 medium tomatoes, chopped
salt and pepper, to taste
2 teaspoons ground cumin
1 teaspoon dried oregano
2 tablespoons dark rum or 2 tablespoons dry sherry
3 cups cooked rice
chopped onion
chopped celery
chopped tomato
chopped hot green chili peppers or chopped jalapeno pepper
lemon wedge
orange wedge
banana, sliced
chopped fresh cilantro
sour cream or yogurt

Steps:

  • Spray and heat large heavy saucepan over medium low heat.
  • Add onion and sauté, stirring occasionally, about 3 minutes.
  • Add pepper and garlic and sauté 3 more minutes.
  • Add beans through oregano and simmer 8 minutes, adding water if it gets too dry and starts to stick.
  • Mix 1 cup of bean mixture with rum and mash to a paste with a fork or in the blender or food processor.
  • Add paste back into the pot, cover and simmer over low heat 20 minutes.
  • Serve over rice.
  • Offer onion through sour cream, each served in its own small dish, as condiments.
