BAHAMIAN JOHNNY BREAD
This recipe is a cultural staple in the Bahamas and throughout the Caribbean and is a family favorite(one which I have tweaked a bit over the years to suit various tastebuds) but its a wonderful bread/cake-like dish thats commonly served with soups and souses of all kinds (for breakfast, lunch or dinner)and can also be wonderful after dinner supper topped with jam and served with tea or cocoa. My family especially loves to eat it like a sandwich with cheese or peanut butter in the middle.Yum...the choices are endless. Hope you enjoy!!!!

Steps:
- Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
- In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. Add in the eggs, vegetable oil, milk and water and mix well with a spoon until the texture of your mixture is between that of a bread dough and the batter of a cake mix, adding more water if necessary.
- Pour mixture into greased pan and bake for 30mins. Brush the melted butter over the top and continue to bake for another 15 mins or until golden brown and butter knife comes out clean from the middle.
- Cut in squares and serve warm with butter or jam.
GRANDMA'S PERFECT HOMEMADE BREAD
Steps:
- In a stand mixer add the warm water, sugar, salt and yeast. Let the yeast proof until it bubbles for about 5 minutes. Using the dough hook start adding the flour one cup at a time until the dough combines and forms a soft dough.
- On a floured surface knead the dough until smooth and elastic and form a ball. Add the oil to the large bowl and add the dough to the bowl and cover. Let rise until it has doubled 1- 1 1/2 hours.
- Grease and flour 2 9x5 inch pans. Punch the dough to release the air. Lay the dough onto a flat surface and cut into two loaves. Roll each loaf up and place into the loaf pans. Let rise until it doubles another 1-1 1/2 hours.
- Bake in a preheated 350 degree oven for 30-35 minutes or until golden brown on the tops. Remove from the oven and let cool for 10 minutes before slicing.

Steps:
- 1. In the mixing bowl of bread machine add all ingredients in order given. Set on dough cycle (just mixing and rising). The dough cycle usually lasts about 1 1/2 hours.
- 2. Or... alternatively, add all ingredients to a large bowl and knead together until a smooth dough forms. Add extra flour if necessary. Cover and let rise in a warm place for about 1 1/2 hours.
- 3. When dough cycle is complete, or dough is approximately doubled in size, remove dough and place in oiled baking pans. You can use a Pullman pan or two bread pans.
- 4. Let dough rise in baking pans for 30 minutes.
- 5. Preheat oven to 350F.
- 6. Slash the top with a sharp knife and then bake for 35 minutes or until browned on top and cooked through.
BAHAMA BREEZE

- In a blender, combine dark rum, banana liqueur, apricot liqueur, coconut rum, grenadine, honey, lemon juice, orange juice, pineapple juice and 3 or 4 ice cubes. Blend until smooth. Pour into glasses with ice and serve.

- 1. Combine flour and next 5 ingredients in a large bowl.
- 2. In a separate bowl, beat together eggs and remaining 3 ingredients.
- 3. Stir egg mixture into dry ingredients.
- 4. Pour batter into a greased and floured 1-inch cast-iron skillet.
- 5. Bake at 350F for 45-60 minutes or until a toothpick inserted in the center comes out clean.
- 6. Cool in skillet.

- Mix all the ingredients together and knead for thirty to forty seconds.
- Let rise (about forty minutes) and knock down and knead for thirty seconds.
- Repeat.
- (Or let the bread machine do all the kneading and timing for you and go beach combing until it's time to cook the dough!) Allow final rise in a bread pan, about forty minutes, and preheat oven to 425 f.
- Place in oven and decrease temperature to 350 f.
- Bake for thirty minutes.
