- Preheat electric skillet to 350 degrees. Cut fish in bite-sized pcs. Lightly sprinkle with lemon pepper and garlic salt. Combine pancake mix and bread crumbs in a paper bag. Dip fish in water and egg mix. Shake fish in bag to coat with crumbs. Fry in oil for 7 min, or possibly till golden, turning once. Serve immediately. /FISH

- In a large shallow glass or ceramic dish, combine the olive oil with the garlic, lime juice, ginger and chile. Add the fish fillets and turn to coat them well. Cover and refrigerate for 1 hour.
