GOLDEN PURSES THAI APPETIZER

- Gather the ingredients.
- Place cooked shrimp in a food processor or chopper. Add all the spice paste ingredients, then process well.
- Taste-test this mixture, adding 1/2 tablespoon more fish sauce if not salty enough.
- To create the purses, you will need a brush (like a pastry brush) and a small bowl of water. Place 4 to 6 wonton wrappers out over a clean surface (a countertop or chopping board work well). Dip the brush in water and wet 1 inch around the periphery of each wrapper.
- Place a small amount (1/2 teaspoon to 1 teaspoon) of filling in the middle of each wrapper. Now lift up the sides of the wrappers and pinch them together over the filling. Tip : It helps if you wet your fingers as you pinch in order to secure the purse.
- Place the finished purses on a clean plate. Continue making the purses in this way until all the filling has been used up.
- Pour oil into a wok or small frying pan, so that oil is at least 1-inch deep. Heat over medium-high heat. When oil forms moving lines across the bottom of the pan, try dipping in the corner of a wonton wrapper. If the oil starts to sizzle around the wrapper, it's ready for frying. If nothing happens, wait another minute and try again.
- When the oil is hot enough, use tongs to lay 4 or 5 purses on their sides in the pan. Allow to fry 30 seconds, or until they turn golden-brown, then turn over. Fry until the purses are uniformly golden-brown, then drain on a clean tea towel or paper towel. Keep purses warm in the oven until ready to serve.
- Before serving, tie each purse with a chive. You have to do this carefully, or the chive with snap. We find it helps to tie the chive first, then slip it over the top of the purse.
- Serve the purses with Thai sweet chili sauce for dipping.

- 1. Combine pork, prawn. water chestnut, mushroom, spring onion, garlic, coriander roots and corn starch in a mixing bowl. Season with oyster sauce, soya sauce, sugar, white pepper and sesame oil. Mix well. 2. Wash and soak remaining three bunches of spring onions in a bowl of boiling water until soft. Takes only about one to two minutes. Dry thoroughly on paper towels and trim off the roots and tips, reserving the greenest part for ties. Make a small cut at one end of the spring onion and tear it apart. Repeat for the rest of the spring onion. You will need 50 pieces. 3. To make golden bags, take a piece of popiah wrapper and place a generous tablespoon of filling in the middle. Gently pull together into a bag and seal the opening by tying a piece of spring onion twice around. Finish with a knot. 4. In a deep-walled saucepan, heat two inches of oil to 80C. You can also test the oil with a wooden chopstick. If it sizzles, the oil is ready. Lower a few bags into the oil, flipping gently with your tongs to form a better shape. Fry for two to three minutes until crispy and golden brown. Transfer to a cooling rack to drain off excess oil. Serve hot with Thai sweet chili.
GYOZA
I learned this recipe for pot stickers while living in Japan. They're great hot or cold, and may be eaten plain or with the dipping sauce. Any ground meat can be substituted for pork.

- Heat sesame oil in a large skillet over medium high heat. Mix in cabbage, onion, garlic and carrot. Cook and stir until cabbage is limp. Mix in ground pork and egg. Cook until pork is evenly brown and egg is no longer runny.
- Preheat vegetable oil in a large skillet over medium high heat.
- Place approximately 1 tablespoon of the cabbage and pork mixture in the center of each wrapper. Fold wrappers in half over filling, and seal edges with moistened fingers.
- In the preheated vegetable oil, cook gyoza approximately 1 minute per side, until lightly browned. Place water into skillet and reduce heat. Cover and allow gyoza to steam until the water is gone.
- In a small bowl, mix soy sauce and rice vinegar. Use the mixture as a dipping sauce for the finished wrappers.

- Heat the juice or soup in a large pot.
- Cut the cubes of cheese.
- Combine the baking mix and milk.
- Divide dough into 4 dumplings and wrap around the cheese cubes.
- Carefully drop dumplings into the soup and cook for 10 minutes, covered, then 10 minutes uncovered.
- Put a dumpling in each bowl and cover with soup.
- For Vegetarians check the baking mix to be sure it contains no animal fat.

HOMEMADE BAGELS

- Combine the water, yeast, and 3 tablespoons of the sugar in the bowl of an upright mixer fitted with a dough hook. Stir and let stand until foamy, about 5 minutes. Gradually add 4 cups of the flour and the salt, and mix until the mixture comes together.
- Add 1 to 1 1/2 cups additional flour 1/2 cup at a time to make a stiff dough, either stirring with the wooden spoon or working with your hands. Turn out onto a lightly floured surface and knead until smooth and no longer sticky, about 5 minutes, adding just as much flour as needed. (Dough should be heavier and stiffer than regular yeast bread dough.)
- Grease a large bowl with 1 teaspoon of the oil. Place the dough in the bowl, turning to coat. Cover and let rise in a warm, draft-free spot until almost doubled, about 1 hour.
- Grease a baking sheet with the remaining teaspoon of oil.
- Remove the dough from the bowl and punch it down. Divide into 12 equal pieces, about 2 to 3 ounces each, measuring about 4 inches across. Form each piece of dough into a ball. Roll each ball into a 4 to 6-inch log. Join the ends and place fingers through the hole and roll the ends together. Repeat with the remaining dough. Place on the prepared baking sheet, cover with a clean cloth, and let rest until risen but not doubled in a draft-free spot, 20 to 30 minutes.
- Preheat the oven to 400 degrees F.
- Sprinkle the cornmeal on another baking sheet.
- In a large, heavy pot, bring 12 cups of water and the remaining tablespoon of sugar to a boil. In batches, add the bagels to the water and boil, turning, for 30 seconds to 1 minute. Dip the bagel tops in desired toppings. Flip bagels onto the prepared sheet pan. Bake for 5 minutes, turn over and cook for another 30 to 35 minutes.
- Remove from the oven and let cool on a wire rack.
