AMBER'S FRENCH BAGELS (FRENCH TOAST)
Recipe from a blog: "When life hands you bagels....Make french bagels. I am not quite sure how I came up with the idea to make french toast out of bagels but I am glad I did. I do not know why but french toast just tastes better when it is made out of a bagel."

Steps:
- Beat the eggs, milk, vanilla, cinnamon and salt together.
- Coat the bagels in the egg mixture and place in preheated buttered pan. Cook for 2-3 minutes per side.
- (I like to smash the bagels down with a spatula as they are cooking so they get a little bit crispy on both sides).
BAGEL FRENCH TOAST CASSEROLE
This is an easy breakfast treat. Use raisin cinnamon or blueberry bagels. This casserole has more texture than the typical french toast casserole due to the bagels.

Steps:
- Lightly coat a 9x13-inch or similarly sized casserole dish with baking spray. Scatter the bagel pieces into the bottom of the dish. Scatter the ham (or bacon or sausage) over the top of the bagels. Sprinkle with 1/2 cup cheese.
- In a large bowl, combine the eggs, milk, mustard, salt, and pepper until smooth. Pour the egg mixture over the bagels, then lightly press down on the bagels so that they absorb some of the egg. Cut the cream cheese into small pieces, then dot the pieces on top. Sprinkle on the 2 tablespoons fresh chives and remaining 1/4 cup cheese. Cover the casserole tightly with plastic or foil and refrigerate for 2 hours or overnight.
- When ready to bake, remove the casserole from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 350 degrees F. Tent the casserole with foil and bake, covered, for 40 minutes. Remove from the oven, uncover, then return to the oven and continue baking until golden at the edges and set in the center, about 15-20 additional minutes. Let stand at room temperature for 10 minutes. Serve warm.

- In a medium mixing bowl, whisk together the eggs, milk, cream and sugar until completely combined. Stir in the vanilla and cinnamon. Pour over the bagel pieces, cover, and refrigerate for at least two hours or up to overnight. The longer it soaks, the more of the custard will be absorbed.
- Make the streusel topping: Whisk together the flour, brown sugar, cinnamon and salt. Using a pastry blender or two forks, blend in the cubed butter until evenly distributed and the butter pieces are the size of small peas.

- Preheat oven to 350F. Spray a medium-large oval baker with cooking spray or grease and flour the baking dish. My baking dish measures about 11-inches by 7-inches. Alternatively, use a 9-inch square pan or a 9×13-inch pan noting that baking time will be reduced; set aside.
- To a large microwave-safe bowl, add the butter and heat on high power to melt, about 1 minute. Wait momentarily so you don’t scramble the eggs.
- Add the bagels and toss lightly to coat. Allow mixture to stand for about 5 to 10 minutes, stirring once or twice, giving bagels time to soak up the coating.

- Lightly spray a 9x13-inch baking dish with a little cooking spray. Cut the bagels into small, 1-inch chunks, then toss them into the baking dish.
- In a large bowl, combine the eggs, milk, cream, syrup, brown sugar, vanilla, cinnamon and salt. Whisk it up really well with a fork, then pour the egg custard mixture over the bagels and press them down into the custard so everything gets a good soaking. Sprinkle chopped pecans over the top, if using. Cover and refrigerate at least 2 hours or overnight.
- Preheat your oven to 350 degrees when ready to bake the casserole. Prepare the crumble topping by combining the flour, brown sugar, cinnamon and salt in a bowl, then pouring the melted butter of the top and stirring everything with a fork to combine. Sprinkle in small clumps over the top of the casserole before sliding it into the oven.
- Bake for 50-60 minutes, until golden brown on top. You might want to cover the casserole with foil during the last 20 minutes if it is getting too brown. It is done when the egg mixture that has soaked into the bagels is set without being soggy and everything is cooked through, but be careful not to overbake and dry it out.
