NEW YORK BREAKFAST CASSEROLE

New York Breakfast Casserole image

Adapted from Deb Perelman's wonderful 'The Smitten Kitchen Cookbook'. Bagels and cream cheese make me reminisce about Collegetown Bagels in Ithaca, New York; I rarely enjoy them now because of the carbs/calories, but found this casserole to be worth it. Gooey on the bottom, crusty on top - yum. The prep and cook times do not include overnight chilling,

Categories     Breakfast

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 11

6 everything bagels, cut into 1-inch cubes
8 ounces neufchatel cheese, cut into irregular small bits
1/4 medium red onion, thinly sliced
1 pint grape tomatoes, cut in half
8 large eggs
2 1/3 cups milk
1 teaspoon salt
fresh ground black pepper
capers, for serving (optional)
lox, for serving (optional)
crisply cooked bacon, for serving (optional)

Steps:

  • The night before serving the casserole, spread one half of the bagel cubes in the bottom of a greased 9-by-13-inch pan.
  • Dot with half of the Neufchatel cheese, and mix in the red onion and tomatoes.
  • Make one more layer with the bagel cubes and Neufchatel cheese.
  • Whisk eggs with milk, salt and pepper. Pour mixture over the bagels. Cover pan tightly with plastic wrap and refrigerate overnight.
  • The next morning, preheat oven to 350 degrees. Remove casserole from the fridge, uncover and bake until casserole has puffed, turned golden brown and cooked through. (A knife inserted into the center of the casserole and rotated slightly should not release any liquid.) This will take about an hour. You may cover the pan with foil for the last 15-20 minutes if the top bagels are getting too brown for your liking.
  • Let cool a few minutes, and serve in big scoops with a sprinkle of capers and a side of lox or bacon.

Everything Bagel and Cream Cheese Breakfast Casserole. Easy make-ahead breakfast recipe that's perfect for a crowd!

Provided by Erin Clarke / Well Plated

Categories     Breakfast

Number Of Ingredients 10

6 leftover everything bagels
6 ounces cooked ham (bacon, or sausage, cut or crumbled into small pieces)
3/4 cup freshly grated sharp cheddar cheese (divided)
8 large eggs
2 1/2 cups milk
1 teaspoon ground mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh chives (plus additional for sprinkling on top)
8 ounces reduced-fat cream cheese (or regular cream cheese; do not use fat free)

Steps:

  • Lightly coat a 9x13-inch or similarly sized casserole dish with baking spray. Scatter the bagel pieces into the bottom of the dish. Scatter the ham (or bacon or sausage) over the top of the bagels. Sprinkle with 1/2 cup cheese.
  • In a large bowl, combine the eggs, milk, mustard, salt, and pepper until smooth. Pour the egg mixture over the bagels, then lightly press down on the bagels so that they absorb some of the egg. Cut the cream cheese into small pieces, then dot the pieces on top. Sprinkle on the 2 tablespoons fresh chives and remaining 1/4 cup cheese. Cover the casserole tightly with plastic or foil and refrigerate for 2 hours or overnight.
  • When ready to bake, remove the casserole from the refrigerator and let stand at room temperature while the oven preheats. Preheat the oven to 350 degrees F. Tent the casserole with foil and bake, covered, for 40 minutes. Remove from the oven, uncover, then return to the oven and continue baking until golden at the edges and set in the center, about 15-20 additional minutes. Let stand at room temperature for 10 minutes. Serve warm.

  • Prep the bagels: Using a serrated bread knife, cut each bagel into bite-size pieces. I like to cut the bagel in half (from top to bottom) and then cut each half into fourths. Try to cut the bagel into pieces that are no larger than an inch.
  • Make the egg mix and combine with the bagels: In a large mixing bowl, whisk together the eggs, half-and-half, salt, and pepper until no yolk is visible and the mixture is smooth. Add the cut bagels to the egg mixture and, using a large spoon or spatula, toss to coat the bread in the liquid. Set this to the side to allow the bread to soak while you brown the sausage.
  • Cook the sausage, onion, and pepper: Heat the oil in a large skillet over medium-high heat until it begins to shimmer (this should take about a minute). Add the breakfast sausage to the pan and begin to brown it. Break up the sausage into small chunks with a wooden spoon until the sausage is about the size of pistachios. It should not look minced. Once the sausage has cooked through and browned (about 5 minutes), create a well in the center of the pan using your spoon. Add the diced peppers and the onions. Stir them with the sausage and cook the mixture for an additional 3 to 4 minutes, or until the veggies are glossy and soft. Drain any excess fat by straining the mixture in a colander, then allow the mixture to cool for 5 minutes. This is a great time to shred your cheese if you haven’t already.
