These potatoes are easy to prepare and are a great crowd pleaser. The herbs and cheese really bump up the flavor. You can prep them ahead then finish them on the grill or oven. The name of the dish makes people laugh--until they taste them. Then all you'll here is ooo's and aaah's.

5 pounds small new potatoes
¾ cup olive oil
¼ cup melted butter
1 cup grated Parmesan cheese
1 tablespoon dried basil
1 tablespoon dried oregano
½ teaspoon dried thyme leaves
½ teaspoon dried rosemary, crumbled
½ teaspoon garlic powder
1 teaspoon crushed red pepper flakes
1 teaspoon salt
½ teaspoon black pepper
3 tablespoons minced fresh parsley
½ cup grated Parmesan cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the potatoes in a large saucepan of water. Cover; bring to a boil over high heat. Reduce heat; gently cook potatoes until tender but still firm, about 20 minutes. Drain.
  • Place potatoes on a greased, rimmed baking sheet. Smash the warm potatoes with the heel of your hand or a small pan to flatten slightly and break the skin.
  • Mix together the olive oil, butter, 1 cup Parmesan cheese, basil, oregano, thyme, rosemary, garlic powder, red pepper flakes, salt, and pepper in a large bowl; add the potatoes and toss well. Return coated potatoes to baking sheet, leaving 1/2 inch space between each potato.
  • Roast potatoes in the preheated oven until lightly browned and slightly crispy; about 30 minutes. Place hot potatoes on a large platter; sprinkle with parsley and the remaining 1/2 cup Parmesan cheese.

I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

1 baguette, cut in half length-wise and toasted
2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes (cut so fine its almost a paste)
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
  • Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  • Slice the bread into individual pieces and spoon the mixture on top.

½ cup mayonnaise
¼ cup Thai-style sweet chili sauce
3 dashes Sriracha hot chile sauce, or to taste
½ cup cornstarch, or as needed
1 pound medium shrimp, peeled and deveined
oil for frying
8 lettuce leaves
1 bunch green onion, chopped, or to taste

Steps:

  • Whisk mayonnaise, sweet chile sauce, and Sriracha hot sauce together in a bowl.
  • Place cornstarch in a shallow bowl. Gently press shrimps into cornstarch to coat; shake off any excess.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Working in batches, cook the shrimp until they are lightly browned on the outside and the meat is no longer transparent in the center, about 3 to 5 minutes. Transfer to paper towels to drain. Put cooked shrimp in a bowl and pour chile sauce mixture over the shrimp. Toss gently to coat.
  • Line a serving bowl with lettuce leaves. Pour shrimp into bowl and top with green onion.

Made using store bought bruschetta and canned beans, this 4 Ingredient White Bean Pasta Salad is the easiest summer hosting dish!

8 oz. of your favorite pasta (1/2 of a 16 oz. box)*
12 oz. jar of bruschetta
1 15 oz. can white beans, drained and rinsed
Handful of fresh basil, chopped
Optional: salt and pepper to taste

Steps:

  • Bring a large pot of water to a boil and cook the pasta according the the package directions.
  • Once cooked, drain and rinse the pasta and place it in a large mixing bowl to cool for a few minutes. I stirred in a little bit of olive oil to my pasta to keep the noodles from sticking together and then allowed them to cool after that.
  • Once the pasta has cooled a little, add in the remaining ingredients and stir everything to combine.
  • Serve immediately or store in an airtight container in the fridge for a few days.

1 loaf french bread
6 oz fresh mushrooms
2 green onions
4 tblsp butter
salt, pepper, garlic powder to taste
4 oz package proscuitto
14.5 oz canned, diced tomatoes
4 oz shredded Asiago cheese

Steps:

  • Slice bread and bake per instructions until toasted. Dice mushrooms and green onions. Saute mushrooms and onions in butter until mushrooms are dark and onions are translucent/tender. Season with salt, pepper, garlic powder while sauteeing. Tear or dice prosciutto into small pieces and put into mushroom/onion mixture, sauteeing until prosciutto turns gray and appears cooked. Drain canned tomatoes, and stir into sautee mixture above. Return to heat and sautee for a few minutes until tomatoes are heated thru. Spread mixture over each piece of bread above. Top with shredded Asiago cheese. Return to 350 degree oven until cheese is lightly melted. Serve warm.

  • Preheat the oven to 375°F. Slice the baguette into 1/4 to 1/2 inch slices, either on the bias (diagonal for more surface area) or perpendicular to the loaf of bread (straight across). Spread baguette slices on a baking sheet. Drizzle with olive oil (don’t drench them, dry areas are ok) and sprinkle with salt and pepper. Flip slices over and repeat.
  • Bake the slices for 5-7 minutes on each side until golden brown and crispy. Keep an eye on them so they don't burn, the thinner they are, the less time they will need.
  • If needed, place the diced tomatoes in a strainer and toss with a pinch of salt to allow the excess water to release. See notes above.
  • In a bowl, add the tomatoes, basil, garlic, shallot, and olive oil. Add salt and pepper to taste. You can also mix the balsamic vinegar in now, or drizzle it on each piece of bruschetta when serving.
