Steps:
- Preheat grill
- Cut pork tenderloin in half but not all the the way through length wise and fillet open.
- Pound pork tenderloin until flat.
- In a medium frying pan place a little olive oil, onion, garlic and ground caraway and fry until aromatic. Add Italian sausage removed from casing and cook until browned. Add the panko breadcrumbs (or crushed pork rinds for low carb) to the Italian sausage mixture and cook until slightly toasted. Add thyme. Remove from heat and allow to cool. (If you like spicy add a 1/2 teaspoon of crushed red peppers or use spicy Italian sausage)
- Place the sausage mixture on top of the fillet of pork tenderloin and leave about 1 inch around all sides.
- Tightly wrap the pork tenderloin into a roll.
- Start at one side and wrap bacon around the pork tenderloin that is stuffed with sausage. Overlap and use the bacon to secure the pork tenderloin from coming apart. Use about 6- 8 pieces of bacon to cover. It depends on the size of your pork tenderloin. Add lots of fresh cracked pepper to top of bacon.
- On low medium grill cook Bacon wrapped sausage stuffed pork tenderloin for about 20-30 minutes or until internal thermometer reads 145-150 and then let the meat rest under foil for about 10 minutes before carving.
- Serve Bacon wrapped Sausage Stuffed pork tenderloin with vegetables, salad or cooked apples. If you have loads of meat and potatoes lovers in your home then a nice side of baked rosemary potatoes would be welcomed. Enjoy!

Steps:
- Preheat oven to 400°F.
- Create a glaze: Combine peach preserves with 1 or more finely diced chipotles and 1 large crushed clove of garlic. Set aside.
- On cutting board, butterfly pork tenderloin, and pound with meat tenderizer to even thickness.
- Spread chorizo over tenderloin. Spread PHILADELPHIA Cream Cheese Spread down center and sprinkle shredded cheese on top.
- Roll-up tenderloin. Using slices of bacon, wrap tenderloin until covered. Secure with toothpicks, if needed.
- Place bacon-wrapped loin in cast iron, or heavy bottom fry pan. Cook until bacon is browned on all sides. Remove from fry pan and place in foil-lined baking dish.
- Bake for 25 minutes or until tenderloin reaches 160-165ºF, coating with glaze during the last 5-10 minutes of baking. Remove from oven and let rest for 5-10 minutes before slicing.
- Create caramelized bacon (yum!): Dice remainder of bacon into small to medium pieces. Using the same fry pan, brown until crispy. Drain off excess bacon drippings, leaving behind 1 to 2 tablespoons. In pan, add a few grinds of fresh pepper and 1/3 or more cups of brown sugar. Stir bacon to coat with sugar mixture. Cook over low heat until bubbly, be careful not to burn! Remove from pan.
- Now that your tenderloin is glazed, cooked and cooled, and your caramelized bacon is complete, it is time to serve. Slice tenderloin, and place on a beautiful serving platter. This dish can be easily doubled or tripled making it a great dish to serve buffet style at your next party!

BACON WRAPPED STUFFED PORK LOIN
All I have to say about this is Yum-O! I usually used my grandmothers stuffing which consists of bread cubes, onions, butter and summer savory, but Stove top works just as well. I also use dried herbs, they work just as well as fresh. So easy to make people will think you slaved for hours ;)

- Start with a pork loin that is in the 5-pound range, which is just the right size to fit on any smoker or grill.Rinse the meat under cold running water, blot dry with paper towels. Using a clean, sharp knife, trim the fat cap so as to leave at least a ¼-inch of fat. Any less and the pork will be drier and anymore, the fat will prevent the brine solution and rub from seasoning the meat.Next, using a sharp knife, score the fat cap and set aside.
- Scoring meat is a culinary term that means cutting slits on the surface of the food. Add a crosshatch pattern, starting with diagonal cuts approximately 1 inch apart across the surface of the fat cap, only allowing the knife to penetrate about ⅛ to ¼ inch deep. Turn the meat 90 degrees to add a crosshatch. Scoring across in the opposite direction. Scoring makes little pockets that allow the bacon fat, rub and sauce to penetrate into the meat below the fat cap, making the meat flavorful and juicy.Combine all the brine solution ingredients together in a large bowl. Whisk well until the salt has dissolved completely. Allow the brine solution to sit for 2 to 3 minutes to settle. This will allow the red crushed pepper to float to the top, which will keep the meat injector from clogging up.Next, submerge the meat injector into the bowl and fill with the brine solution. If the meat injector clogs, simply push the plunger to release some brine solution and then start pulling it again to fill wi
- After applying the rub, you can easily wrap the pork loin in bacon strips by wrapping individual strips around the pork loin using butcher's twine to secure it to the meat.ORMake a Bacon Weave (SEE VIDEO BELOW): Start by laying 7 or 8 slices of bacon tight against each other, horizontally in rows on a sheet of parchment paper or butcher’s paper. If the bacon is larger at one end than the other, alternate the direction the bacon slices end to end can compensate for any curve so that the weave will be more square. The width of the bacon slices should match the length of the strips.Begin to build the weave by folding back every other strip half onto itself. Lay one strip of bacon perpendicular to those folded strips, flush up against the back of the folds. Unfold the folded row of strips back over the perpendicular slice of bacon.Next, fold back every other strip that wasn’t folded back before. Lay one strip of bacon perpendicular to those strips, tightly up against the back of the folds.
- Using tongs, lift the pork loin out of the brine solution inside the zip-lock bag. Blot dry with paper towels. If not already, lay the bacon weave out on a piece of parchment paper or butcher paper. The lay the pork loin fat cap side up in the center of the bacon weave. Rub the pork rub mixture onto the meat, making sure to cover each end. Flip the pork loin over so that the fat cap is down and rub the “bottom” of the pork loin. The pork loin should be completely covered in rub with the fat cap side down in the center of the bacon weave.Wrap the bacon weave around the pork loin as if it were a bacon blanket, using the parchment paper to help roll the bacon weave around the meat. If your weave doesn’t completely cover the pork loin, finish covering it with extra strips laying across the gap horizontally. Use butcher’s twine to help hold the bacon weave securely in place around the meat. Tie the twine around the meat is 2 to 3-inch sections. Then tuck any loose edges of the bacon weave in

- Melt the butter over medium heat in a large saute pan. Add the spinach and onion and cook until the spinach is wilted down and the onion is soft, about 4 minutes. Add the garlic and breadcrumbs and cook for 30 seconds, until fragrant. Remove to a bowl and set aside.
- Season the butterflied and flattened pork tenderloin with salt and pepper, and then thinly and evenly spread the cheese on top . Top with the spinach mixture. Make sure the spinach is roughly ¼" thick and no more, or it will be difficult to roll.
- Tightly roll up the pork tenderloin, letting it sit on the seam. Lay out your bacon slices, slightly overlapping the edges, until it's the same width as the length of the pork tenderloin. Place the tenderloin on the center of the bacon mat, seam side down. Wrap the bacon around the tenderloin, then secure with kitchen twine every 1½". Add one final piece of twine from end to end.
- Place onto rotisserie spit and cook for about 45 minutes. Take the pork off the grill at 145ºF (pork tenderloin is cooked between 145ºF to 160ºF). Let it rest for 10 minutes before carving into it.

- Place the pork loin on a cutting board so the longer sides are on your left and right. Using a large, sharp knife, measure about 1/3 of the thickness of the loin and slice from right to left, cutting almost all of the way through the meat - leaving only a hinge so that the meat will stay together, you should be able to open it like a book.
- Pull open the pork loin, now the 1/3 thick part is on your left, and the right side is thicker. Starting from the center slice down the length, 1/3 thick from left to right, so you can flip open the other side.
