EASY BACON FRIED RICE
This is a fried rice recipe that I luckily created from practically threadbare cabinets one evening. It's the epitome of comfort food and is a breeze to make. The green beans really complement the flavors but feel free to use any veggie you have on hand. Enjoy!

Steps:
- Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until just beginning to brown, about 7 minutes. Drain all but 1 to 2 teaspoons of bacon grease from the skillet. Add green beans, onion, and garlic; saute until bacon is crisp and green beans and onions are softened, about 3 minutes.
- Push bacon mixture to one side of the skillet; heat sesame oil on the empty side, about 30 seconds. Pour in egg; cook until just set, about 1 minute. Stir into bacon mixture to combine. Mix in rice. Stir in soy sauce, a tablespoon at a time, until rice is evenly coated. Cook until rice is heated through, 3 to 5 minutes.

CHINESE FRIED RICE WITH BACON AND MUSHROOMS
I doubt this really qualifies as authentic Chinese cuisine, but it's delicious nonetheless and very simple. Use pre-cooked rice that's been sitting in the fridge for at least a day or two (or in the freezer) for the best results.

Steps:
- Fry bacon until crisp. Remove and drain on paper towels, but reserve 3 tablespoons drippings.
- Add onions and celery to drippings and cook until tender.
- Add mushrooms, rice, and soy sauce. Cook 10 minutes on low heat, stirring occasionally.
- Stir in beaten egg and cook only until egg is done.
- Crumble bacon and add to rice mixture. Mix well and serve.

BACON MUSHROOM AND RICE BAKE
This casserole may be made with regular white rice, but it is much better using converted rice, as regular rice tends to get too soft when baking, when boiling the rice try not to over cook it (see note on bottom of page). Prep time includes boiling the rice and fying veggies. This is a very tasty rice dish!

- Set oven to 325 degrees.
- Butter a casserole dish.
- Cook the rice, and set aside.
- In a frypan cook bacon until crisp; drain the bacon fat if desired, or just leave in frypan to fry the veggies (you might still have to add in some butter for frying) remove and chop bacon into large pieces and set aside.
- Add in 1/4 cup butter, and saute onion, garlic, celery and green pepper for about 4-5 minutes or until soft.
- Transfer the cooked bacon and sauteed veggies to a large bowl; add in the cooked rice and all remaining ingredients; mix well to combine, adjusting salt and pepper to taste.
- Transfer to a greased casserole dish.
- Bake (covered or uncovered) for about 30-40 minutes.
- **NOTE** if desired sprinkle grated cheddar cheese over the casserole the last 20 minutes of baking.
- Also, for perfrect converted rice, boil 1-3/4 cups water with 1 cup rice and 2 tablespoons butter (double the water, rice and butter if desired) this will give you a not too soft rice, perfect for this or any recipe.
BACON, EGG AND MUSHROOM FRIED RICE
This tasty recipe is made in a flash and makes a great speedy lunch or quick meal especially good if you have leftover rice from the night before!

Steps:
- Heat a wok over a high heat and add the vegetable oil.
- Tip the beaten eggs into the wok, stir to scramble, then remove and set aside.
- Put the bacon into the same wok and stir fry until browned and slightly crisp.
- Throw in the frozen peas and mushrooms and stir fry for less than a minute. Add the rice and mix well until the rice has broken down.
- Return the eggs to the wok. Season with light soy sauce, sesame oil and a pinch of white pepper. Serve immediately.
