BACON MACARONI SALAD



Bacon Macaroni Salad image

This is a really good macaroni salad. Even thought the refrigeration time is a little longer than desired, the preparation is very easy and quick.

Number Of Ingredients 9

2 cups elbow macaroni
5 green onions
1 large tomatoes, diced
1/4 cup celery
1/4 cup mayonnaise
5 teaspoons white vinegar
1/4 teaspoon salt
black pepper, to taste
1 lb bacon, cooked and crumbled

Steps:

  • Cook macaroni according to directions on package. Drain and rinse in cold water. In a large bowl, combine the macaroni, green onions, tomato and celery.
  • In a small bowl combine the mayo, vinegar, salt and pepper. Pour over macaroni mixture and toss to cool.
  • Cover and refrigerate for at least 2 hours. Just before serving, add bacon.

Inspired by another macaroni salad and some nudging from my sister, this is what I came up with. :)* The cook time on this is boiling the macaroni and frying up the bacon, which I did simultaneously ;)

3 cups macaroni, cooked
8 slices bacon, fried and crumbled
1/4 cup onion, finely diced
1/4 cup celery, chopped
1/2 cup cucumber, finely chopped
1/2 cup tomatoes, chopped
1/3 cup mayonnaise
1 tablespoon balsamic vinegar

Steps:

  • Mix cooked macaroni, bacon, onion, celery, cucumber and tomato.
  • Toss with mayonnaise.
  • Add balsamic vinegar. Toss to coat.
  • You could mix the mayo and vinegar first, then put it on , it would ensure even distribution of the vinegar I guess! :).

Cooked cubed ham can be used in place of bacon if desired. Cooking time does not include boiling the pasta. This complete recipe may be doubled.

2 cups elbow macaroni
2 tablespoons oil
2 tablespoons vinegar
1 lb bacon, cooked and crumbled
3/4 lb sharp cheddar cheese, cut in 1 inch cubes
1 celery rib, diced
2 green onions, chopped
1/2 cup sliced black olives
1 cup mayonnaise (Hellman's is good)
1/2 cup half-and-half cream (do not use milk)
2 -3 teaspoons horseradish (can use more)
seasoning salt, black pepper (or use white salt, to taste)

Steps:

  • Cook the macaroni until firm-tender; drain well.
  • In a bowl, combine the oil and vinegar.
  • Add in the bacon, cheese, celery, green onion, olives and the cooked macaroni; toss well to combine.
  • In another bowl, combine mayo, cream, horseradish, salt and pepper.
  • Blend in with the macaroni mixture; toss well to combine thoroughly.
  • Chill in the fridge for 3 hours before using.
  • Note: if desired 1-2 hard-boiled eggs may be chopped and added.
