Bacon & Cheese Egg Bites image

These Bacon & Cheese Egg Bites are quick, easy and oh so tasty! They can be made ahead for on-the-go breakfasts or to feed a hungry crowd.

7 large eggs
1/2 teaspoon kosher salt
1/4 cup milk
1-1/2 cups shredded monterey jack & cheddar cheese, divided
3/4 cup real cooked bacon bits

Steps:

  • Preheat oven to 350°F. Spray a 24-cup mini muffin pan with non-stick cooking spray and set aside.
  • In a large bowl, whisk together the eggs until smooth. Add the salt, milk, 1 cup cheese and bacon bits and mix until well combined.
  • Spoon the mixture into the mini muffin cups, filling each one 2/3 full. Sprinkle remaining 1/2 cup cheese evenly over filled muffin cups.
  • Bake for 23-25 minutes or until the tops and edges start to turn golden. Let set in pan 5 minutes before gently lifting each one out with a table knife.

Fresh is just so much nicer then the pre-packaged kind that uses picnic bacon and tastes like cardboard. These fry quickly and you don't have to crumble the slices after frying them. There is no need to separate the pieces. They will separate during cooking. Use these in any recipe calling for crumbled bacon or bacon bits. Perfect for salads and baked potato toppings or twice baked potatoes.

1 lb bacon
1/8 teaspoon black pepper (optional)

Steps:

  • Partially freeze your package of bacon so that it holds together easier while slicing.
  • Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide.
  • Turn the bacon and cut the strips into pieces also about 1/4 in wide.
  • Sprinkle with pepper.
  • Fry over a medium high heat until crisp.
  • Remove with a slotted spoon and drain on paper towels.
  • You can freeze this for later use by placing the bacon bits in a single layer on a cooking sheet. Once they are frozen, place them in a zip lock bag for use in recipes, salads or baked potatoes. Freezing this way allows you to be able to take out just what you need without thawing the entire bag of frozen solid bacon bits.

Steps:

  • Cut bacon into small pieces.
  • Fry in a cast iron enameled skillet/ braiser till crispy.
  • Transfer to a paper towel lined plate absorb the oil. Use immediately or store for later.
  • Arrange bacon on cooling rack placed on a baking sheet.
  • Bake at 400 F for 15-20 mins or to desired crispiness.
  • Let it cool then pulse a few times in a food processor.
  • Place bacon in the air fryer basket. You need to work in batches.
  • Air fryer bacon for 7-8 mins at 400 F flipping half way through.
  • Let it cool then pulse a few times in the food processor.
