BACON SHRIMP CREOLE
This dish is a compilation of two Creole recipes that I found in my mother's New Orleans cookbooks. The bacon adds flavor and the cayenne gives it a bit of spice. -Jan Tucker of Virginia Beach, Virginia

Steps:
- In a Dutch oven, saute the onion, celery and green pepper in oil until tender. Add garlic; saute 1 minute longer. Add the tomatoes, tomato sauce, 1/2 cup water, bacon, parsley, sugar, salt, thyme, curry powder, pepper and cayenne. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. , Combine flour and remaining water until smooth; gradually stir into tomato mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; add shrimp. Simmer, uncovered, for 5 minutes or until shrimp turn pink. Serve with rice.

CREOLE RICE
I've found a fast and fantastic way to turn leftover rice into a spectacular side dish. I spice it up with Creole seasoning and pepper to give it a boost of flavor, then sprinkle it with paprika for color. Rest assured that no one will figure out the zippy combination is a "second-day dish".

- In a small saucepan, melt butter; add Creole seasoning and pepper. Cook over medium heat for 3 minutes. Stir in rice. Cover and heat through.

- In a large skillet, over medium heat, cook the bacon until almost golden brown, about 5 minutes. Add the sliced sausage and cook until browned, about 10 minutes. Using a slotted spoon, remove bacon and sausage and reserve.
- Add the onion, celery, bell pepper and garlic to the fat in the skillet and cook, stirring occasionally, until softened, 4-5 minutes.
- Add back the reserved sausage/bacon and fold in the cooked rice. Season with salt and pepper.
- Add the chicken broth and cajun seasoning (if using). Cook until the broth has reduced a little. Taste for seasoning and add some more salt or pepper if necessary.
