Fried Cabbage with Bacon image

My family loves this fried cabbage recipe. I serve it with homemade cornbread. Make a lot, because there will not be any left.

5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
  • Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

Eggs, Bacon (or sausage), Cheese and Homefries...YUMMY! This is a variation on another one of my recipes, but this one uses fresh potatoes instead of frozen hash browns. It's very versatile and adaptable.

3 -4 medium russet potatoes
4 large eggs
1/2 lb bacon (or sausage)
1/2-1 small onion, peeled and sliced thin
1/2 cup sharp cheddar cheese, shredded (or cheese or your choice)
salt and pepper

Steps:

  • Start out by microwaving your potatoes as you would for baked potatoes. If you have leftover baked potatoes, you can just use those.
  • Once potatoes are cool enough to touch, cut into large cubes (if you prefer them without the skin, peel first) and set aside.
  • Fry bacon (or sausage) over medium heat in a 12 inch non-stick pan. Remove and set aside on a paper towel to drain. When cool enough, crumble into pieces.
  • Remove grease from pan and discard, but leave a tbs or so of the bacon grease. (If using sausage, remove all grease and add a bit of butter or spray with butter flavor Pam).
  • Add cubed potatoes and salt/pepper to taste and cook over medium for a few minutes until undersides are brown. Flip over, stir in slices onions and smash mixture down a bit with a potato masher or the back of a spoon, so it fills the bottom of the pan.
  • With a spoon, make 4 "holes" in the potatoes, evenly spaced, about 2.5 inches in diameter. If the potatoes are sticking at all or if the pan looks too dry, add a bit of butter to each hole, or a spray of Pam.
  • Crack and drop an egg into each hole and cover pan. You may need to lower the heat a little depending on your stove. Cook covered until the egg whites are mostly set.
  • Remove lid and sprinkle egg whites with crumbled bacon and then with the cheese.
  • Replace cover and cook on low until cheese is melted and eggs are set. I sometimes throw a splash of water at the side of the pan to created steam right before I recover the pan and turn it to low.
  • If it seems as if the underside of the "casserole" is getting overdone, I remove the pan from the heat and leave the lid on for a few minutes, so the top will continue to cook.

1 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon ground mustard

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Stir-fry cabbage in drippings until tender, 5-7 minutes. Add garlic powder, salt, mustard and bacon; cook and stir until heated through.

4 Russet potatoes (about 2 pounds), peeled and cut into a 3/4-inch dice
Kosher salt
4 tablespoons bacon fat
3 tablespoons vegetable oil, like soy, peanut, or corn
1 medium yellow onion, thinly sliced
Freshly ground black pepper
Pinch cayenne pepper (optional)

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Heat 1 tablespoon of the bacon fat and 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium-high heat. Add the onion and cook, stirring, until golden brown, about 10 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining 3 tablespoons bacon fat and 2 tablespoons vegetable oil. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on one side, about 8 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, until well-browned, about 12 minutes. Stir in the onions, heat through, and sprinkle with the cayenne, if desired. Transfer to warm platter and serve.

1 large onion, diced

1 large head cabbage, cored and sliced

⅛ teaspoon paprika

Steps:

  • Place the bacon in a large stockpot and cook over medium-high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper, onion powder, garlic powder, and paprika. Reduce heat to low, cover, and simmer, stirring occasionally, about 30 minutes more.
