3 eggs
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
½ cup dry bread crumbs
1 tablespoon minced garlic
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound sliced bacon, cut in half crosswise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Mix ground beef, eggs, Parmesan cheese, parsley, bread crumbs, garlic, onion powder, salt, black pepper, oregano, and basil in a large bowl until thoroughly combined. Form meat mix into 2-inch meatballs.
  • Wrap half a bacon slice around a meatball; turn the meatball around 45 degrees and wrap a second half-slice of bacon around the meatball so the meat is enclosed by bacon. Repeat, forming 12 meatballs and wrapping each one in 2 half-slices of bacon. Place wrapped meatballs onto the prepared baking sheet with seam sides down.
  • Bake in the preheated oven until meatballs are no longer pink inside and bacon is crisp, about 45 minutes. An instant-read meat thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C). Pour off excess grease.

1 lb ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon pepper
2 teaspoons salt
¼ cup bread crumbs
3 cloves garlic, minced
½ onion, diced
⅓ cup fresh parsley, loosely packed
1 egg
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon worcestershire sauce
1 tablespoon honey
4 medium onions
8 oz cheddar cheese, cubed
16 strips bacon
1 bottle barbecue sauce

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
  • Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
  • Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
  • Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
  • Brush the meatballs with barbecue sauce, covering them completely.
  • Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.

1 lb. ground beef 1 packet bacon (lower sodium works best the strips don't shrink as much) 4-5 yellow or white onions (medium or smaller in size) 3 cups breadcrumbs 1 large egg 3 minced garlic cloves OR 4 tbsp garlic powder/garlic salt 1 cup BBQ sauce 1/4 cup OO or EVOO

Steps:

  • Instructions First start out by cutting 4-5 onions in half (top to bottom). Depending on the number of balls you want, you can use the smaller layers, but the larger layers you will be packing more meat with. But I used a variety of the small, medium and large layers of the onions. (Refer to image below) Once you have the layers of onions ready, begin by prepping your ground beef mixture in a large bowl. Add in 3 cups of bread crumbs, 1/4 cup of OO or EVOO (doesn't matter which), your minced garlic or garlic powder/salt, 1 large egg, and the BBQ sauce. Mix very well with your hands or mixer. (Refer to image below) Take your onion layer and stuff it with a palm amount of meat into a ball, then using another onion layer the same size to cover the meat. (Refer to image below) Wrap each onion ball with a strip of bacon. Be sure you get bacon with less sodium, because the salt is actually what makes the bacon shrink, and I have the best luck doing these with less sodium bacon. Take a strip of bacon and start by wrapping the onion (you can use more than one strip if needed), but as long as you end with the onion able to sit on the end then that is better luck for the bacon to stick together. (Refer to image below) Baste your bacon onion balls with more BBQ sauce. Preheat the oven to 375F and begin by baking the balls for 35 minutes. Baste more BBQ sauce when needed in between. Turn up the heat to 400F for roughly 10-15 more minutes to caramelize the bacon. Allow to cool for about 10 minutes before serving. Serve with pasta or alone for a great meal!

Steps:

  • In a large bowl, combine the ground beef, crumbs, egg, milk, ½ cup BBQ, onion, salt, pepper, and garlic powder. Mix together with your hands until thoroughly combined. Cut top and bottom off onion, cut in half, and peel off skin. Then separate the onion into "layers". Use the larger outside layers. Stuff your meatball mix between two onion Layers (essentially making an onion seal around a large meatball). Wrap each "bomb" with 3 slices bacon and secure with toothpicks. Yummy meatballs from Foodnetwork's "Big Daddy's House" - These are really really yummy. The recipe calls for applewood smoked bacon but my grocery store didn't have that so I substituted with regular bacon.

8 -10 slices apple-smoked bacon
1 lb ground chuck
1 tablespoon Worcestershire sauce
1 (1 1/4 ounce) package onion soup mix
1/2 cup panko breadcrumbs
1 tablespoon coarse black pepper
1 tablespoon beef stock
8 -10 bite-size fresh mozzarella cheese balls

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the bacon slices on a sheet pan. Put in the oven and bake until crisp, about 8 to 10 minutes. Remove the bacon from the pan to a cutting board and chop. Set aside.
  • In a large bowl, mix together the beef, Worcestershire, onion soup mix, bread crumbs, black pepper, stock and the chopped bacon.
  • Form portions of the meat around the mozzarella to make smooth balls. Arrange the meatballs on a sheet pan with a rack and bake until thoroughly browned, about 10 to 15 minutes.

2 tbs water
2 tbs finely chopped onion
1 tsp garlic powder
1/2 tsp salt

16 slices bacon (in UK it's streaky bacon--don't use thick cut)
8 - 1/2-inch cubes sharp cheddar cheese -OR- mozzarella

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil (for easy clean up) and place a rack in the pan (I use a rack like you use to cool cookies) In a large bowl, mix the ground beef, torn bread, water, onion, garlic powder, salt, pepper and egg. Blend well. Divide meat into 8 equal portions. Form meatball around a cube of cheese. Wrap with one slice of bacon, then turn the meatball 90 degrees and wrap in another slice of bacon. Place meatballs, bacon seam-side down on the rack in the prepared pan. Bake for 30-40 minutes or until bacon is nicely browned and beginning to look crisp (the bacon won't crisp on the bottom, FYI).
