BACON WRAPPED BARBEQUE SHRIMP
These are spicy and wonderful! As close as I can get to a restaurant version that I am addicted to. Serves 2 as an entree and 4 as an appetizer.

Steps:
- Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
- Preheat the oven to 450 degrees F (230 degrees C).
- Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
- Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

BACON-WRAPPED SHRIMP WITH CHIPOTLE BARBECUE SAUCE
Steps:
- Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
- Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
- Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.
- Preheat a grill, grill pan or broiler. Grill or broil shrimp (on a foil-lined baking sheet, if broiling) for 5 minutes, basting with the sauce once they begin to turn pink. Flip, baste again and grill or broil until just cooked through, about 4 more minutes. Serve with extra sauce.
BACON-WRAPPED PRAWNS WITH CHIPOTLE BBQ SAUCE
Steps:
- Soak the bamboo skewers in water, to keep from burning during grilling.
- Partially cook the bacon; cut in half, and let cool on paper towels. Wrap the bacon around the shrimp, and skewer with bamboo through the point where the bacon ends meet (to keep from unraveling). Skewer 3 to 5 shrimp per bamboo.
- Combine the BBQ sauce, oil, chipotle, lemon juice, mustard, chile flakes, black pepper and cayenne in a blender and puree. Separate the sauce in half, one for basting and one for dipping.
- Cook the bacon-wrapped shrimp on a grill over medium heat. When the shrimp begin to turn pink, begin basting with the chipotle sauce.
- Serve with the remaining sauce on the side for dipping.
BACON WRAPPED SHRIMP

Steps:
- Add shrimp to a glass container and add maple syrup and soy sauce. Toss together, seal container and put in refrigerator for 1/2 hour.
- Preheat oven to 375 and line jelly roll pan with foil. Place bacon on foil and bake for 8 minutes. Remove bacon from pan and pat with paper towel to remove grease. Cut bacon in half.
- Reline jelly roll pan with clean foil.
- Wrap each shrimp in bacon, secure it with a toothpick, place on jelly roll pan and bake for 5 minutes, flip shrimp and bake for another 5 minutes. Shrimp should be pink and bacon will be slightly crispy.

BORA BORA BACON-WRAPPED SHRIMP WITH PASSION FRUIT MUSTARD
Star chef Jean-Georges Vongerichten follows a morning of Jet-skiing on a turquoise lagoon with an exuberant afternoon of creating recipes for his new Bora Bora restaurant. He planned to punch up his shrimp with a simple mustard sauce, but the spectacular passion fruits on Bora Bora gave his sauce a tangy kick. Store-bought passion fruit juice also works well if you can't make it to the island to pick the fruits.

- In a small saucepan, boil the passion fruit juice with the red chile until reduced to 1/4 cup, about 20 minutes.
- Meanwhile, in another saucepan, toast the cumin seeds over moderate heat until fragrant.
- Add the honey and green chile and bring to a simmer, remove from the heat and let stand for 15 minutes.
- Strain the honey and stir in 1 teaspoon of the water.
- In a bowl, blend the dry mustard with the remaining 2 teaspoons of water; let stand for 5 minutes.
- Stir in the Dijon mustard.
- Strain the reduced passion fruit juice into the mustard and season with salt.
- Fire your grill and wrap each shrimp in a slice of bacon.
- Grill the shrimp over moderately high heat, turning a few times, until the bacon is lightly charred and the shrimp are cooked throughout, about 4 minutes.
- Fan the avocado slices on each plate and top with the shrimp. Spoon the mustard around the shrimp, then spoon the honey around the mustard. Drizzle the shrimp with olive oil, garnish with the passion fruit seeds and cilantro and serve.

- Preheat the oven to 400F
- Taking cleaned and deveined shrimp, wrap with bacon.
- Place bacon-wrapped shrimp on a baking sheet.
- Combine brown sugar, smoked paprika, chili powder with melted butter.
- Brush the shrimp with the sauce and place in the oven to bake for about 15 minutes.
- After 15 minutes, coat the shrimp with more butter sauce.
- Add the shrimp to the broiler for about 1-2 minutes, until the bacon is carmelized and sizzling.

BACON WRAPPED SHRIMP WITH MUSTARD SAUCE
Steps:
- In a small bowl, stir together all the sauce ingredients. Cover and chill at least 1 hour. Before serving, let sauce rest at room temperature 20 minutes so flavors meld. Preheat oven to 375 degrees. Soak cocktail picks in water 30 minutes. Line a baking sheet with foil and coat with nonstick spray. Set aside. Put shrimp, lime zest and juice, chili powder, salt, pepper and oil in a bowl. Toss gently. Cover and refrigerate at least 15 minutes and up to 1 hour. Remove picks from water. Wrap each shrimp with half a slice of bacon and secure with a pick. Put skewers on prepared baking sheet and bake about 15 minutes, turning skewers about halfway through. Turn on the broiler and broil 5 minutes. Remove from the oven. Serve with dipping sauce
BACON WRAPPED SHRIMP WITH CREAMY HORSERADISH
Steps:
- 1. Wrap 1 shrimp around 1 water chestnut.
- 2. Wrap in 1 bacon piece and secure with toothpick.
- 3. Repeat with remaining shrimp, water chestnuts and bacon.
- 4. Melt 3 tablespoons butter in heavy large skillet over high heat.
- 5. Add half of shrimp and cook until bacon browns, about 2-1/2 minutes per side.
- 6. Transfer to large gratin dish.
- 7. Repeat with remaining butter and shrimp.
- 8. Preheat broiler.
- 9. Beat cream cheese in medium bowl until smooth.
- 10. Add remaining ingredients and beat until blended.
- 11. Season with salt.
- 12. Spoon sauce over shrimp.
- 13. Broil until top is golden brown.
- 14. Divide shrimp among plates and serve.
