12 slices applewood smoked bacon or other thick-cut bacon
12 (U-10 size) sea scallops
2 tablespoons Essence, recipe follows
1/2 teaspoon salt
12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
  • When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

12 pieces bacon
24 scallops, rinsed and patted dry
1 teaspoon Old Bay Seasoning, to taste
1 teaspoon creole seasoning, to taste
1 cup ketchup
1/3 cup packed light brown sugar
1/2 cup white vinegar

Steps:

  • Preheat oven to 425 degrees.
  • If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done.
  • Do not overcook the scallops as they will be rubbery.
  • Cut each piece of bacon in half to make 24 pieces.
  • Roll a piece of bacon around each scallop and secure on wooden skewers.
  • Place scallops on a rimmed baking sheet.
  • Sprinkle with Old Bay and creole seasoning.
  • Both seasonings contain salt, so don't overdo it!
  • Amounts listed are what I used.
  • Bake at 425 degrees for 15-18 minutes, or until the scallops are done.
  • The bacon should be crispy.
  • While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.
  • Mix well and cook until the sugar is dissolved.
  • Serve the scallops with the dipping sauce.

8 slices bacon (halved crosswise (see recipe note))
16 large shrimp (peeled except for the tail and deveined)
1 tablespoon olive oil
1/4 teaspoon fine sea salt (or 1/2 teaspoon kosher salt)
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425˚F.
  • Arrange bacon slices, leaving space around each, on oven safe rack placed inside a baking sheet. Bake 5 to 10 minutes depending on the thickness of your bacon. It should still be pliable when you remove it from the oven.
  • Meanwhile, place shrimp in a medium bowl. Add olive oil, salt and pepper; toss to coat.
  • When partially cooked bacon slices are cool enough to handle (about 5 minutes after you remove from oven), wrap each slice of bacon around one raw shrimp, securing with a toothpick; return to oven safe rack. Repeat with remaining shrimp.
  • Bake 10 minutes more until shrimp are pink and bacon is cooked through. Serve.

24 slices bacon
12 large sea scallops
12 shrimp, peeled and deveined
3 tablespoons chopped scallions or 3 tablespoons chives
24 toothpicks

Steps:

  • Heat a sauté pan over medium-high heat for 5 minutes.
  • Fry bacon strips on each side for 1 minute until almost crisp, but still pliable.
  • Set aside onto a paper towel. Drain grease from pan.
  • In the same sauté pan over medium-high heat, sear scallops on both sides for 2 ½-3 minutes until caramelized on top, or opaque. Set aside.
  • Sauté the shrimp in a sauté pan over medium high heat for 2-3 minutes. Set aside.
  • Spread each bacon strip with 1/2 tablespoons of Alouette.
  • Wrap the Alouette covered bacon around the side of the scallop.
  • Skewer with a toothpick and arrange on a platter. Wrap each shrimp also with the Alouette covered bacon and skewer with a toothpick.
  • Sprinkle with chopped scallions.
  • Serve immediately.

2 tbsp butter
1 lb scallops
1 tsp sea salt
1 tsp pepper, fresh cracked
1 tsp garlic powder
3 tbsp brown sugar
1 tsp ginger

Steps:

  • Pat scallops dry with a paper towel.
  • In a large pan, start to crisp bacon. Cook bacon until golden brown - but still soft and pliable.
  • In a small bowl, mix salt, pepper, and garlic and then sprinkle generously over scallops.
  • Wrap each scallop with 1/2 bacon strip and secure by pushing a toothpick through the bacon and scallop.
  • In another small bowl, mix brown sugar and ginger.
  • Sprinkle brown sugar and ginger mixture all over scallop, but reserve much of the sugar and gigner to sprinkle after the scallops flip once.
  • Heat butter in large pan until foamy and melted.
  • Add scallops to pan and cook on medium high heat. Flip after 5-6 minutes, sprinkle with more sugar and ginger, and continue repeating steps until scallops are cooked.

1/4 cup maple syrup
2 tablespoons soy sauce

  • Preheat the broiler. Coat a sheet pan with cooking spray.
