APPLEWOOD BACON WRAPPED CHILEAN SEABASS ON LENTILS DU PUY



Applewood Bacon Wrapped Chilean Seabass on Lentils du Puy image

1/2-ounce onion, finely chopped
1 tablespoon olive oil
1/2-ounce celery, finely chopped
1/2-ounce carrot, finely chopped
5 ounces French lentils (ideally Puy lentils)
Vegetable broth, to cover
1 Bouquet Garni Sachet, recipe follows
One 7-ounce Chilean Sea bass fillet
3 ounces smoked bacon, preferably Applewood
2 sprigs sage, leaves removed
1-ounce butter
4 sprigs parsley, leaves removed, cleaned and chopped
1-ounce tomato concasse
2 ounces stiffly beaten whipped heavy cream
4 to 5 leaves sage, for garnish
1-ounce thyme
1-ounce parsley
1/4-ounce black peppercorns
2 bay leaves

Steps:

  • In a medium saucepan, sweat the onions in the olive oil, and when they are translucent, add the celery and carrots. Add the lentils and toss with the vegetables. Add the vegetable broth to cover and the bouquet garni. Bring to a boil and then lower the heat to simmer the lentils until they are soft.
  • Preheat the oven to 400 degrees F.
  • Preheat an ovenproof saute pan large enough to hold the 7-ounce fillet, comfortably. On a cutting board, shingle 4 to 5 slices of bacon. Take the fillet and place it at the corner of the bacon. Place the sage leaves on top of the fillet. Wrap the fillet in the bacon. When saute pan is hot, place the bacon wrapped fish into the center of the pan, searing the bacon. After 2 minutes, turn the fish over and place the entire pan into the oven to finish cooking, about 10 minutes.
  • When the lentils are soft, drain off extra liquid and remove the bouquet garni. Remove the fish from the oven and plate. Fold the butter, chopped parsley, tomato concasse, and whipped cream into the lentils and spoon on top of the Chilean sea bass. Garnish with the sage leaves. Serve hot.
  • Place the thyme, parsley, black peppercorns, and bay leaves inside the cheesecloth. Secure the herbs and spices within the cheesecloth by tying it into a satchel with the butcher's twine.

Tasty grilled fish recipe. Combines nicley the flavors of bacon and fish. Can be prepared in advance, quick, easy and delicious. Serve with crusty bread and green salad. I made this recipe for me and a friend. We only have grilled fish, bread, salad and some white wine and beer. Each of us had one fish. Who needs more on a warm and sunny summer afternoon? It became one of my favorite grilled fish recipes.

1 lb whole sea bass, gutted and scaled
8 -10 slices bacon
1 garlic clove, peeled
1 sprig fresh rosemary
salt, to taste
2 tablespoons olive oil

Steps:

  • Wash fish inside and outside, pat dry with paper towels.
  • Sprinkle salt into stomach cavity.
  • Cut the garlic into slices.
  • Staff the garlic and rosmarin into stomach cavity.
  • Wrapped the bacon slices around the fish, overlapping slightly. Only head and tailfin should be visible.
  • You can store the prepared fish for several hours in the fridge. Remove at least 30 minutes before grilling.
  • Brush a grill pan with olive oil and put 2 rosemary sprigs into the pan to flavor the oil.
  • Place fish in pan. Put it on medium hot grill.
  • Grill fish on each side for about 6 minutes. Brush fish with oil if it looks dry.
  • Serve immediately.

1 tablespoon olive oil
150 g onions, roughly chopped
2 garlic cloves, coarsely chopped
125 g meaty bacon, diced
500 g tomatoes, cut into quarters (4 tomatoes)
120 g green bell peppers, cut into strips
1/2 teaspoon coarse sea salt
2 sea bass, gutted (1400 g)
1 teaspoon sea salt
1 teaspoon black pepper
3 -4 sprigs fresh rosemary
fresh basil
1/2 lemon, cut into thin slices
1 tablespoon olive oil

Steps:

  • Sauté onions and garlic for 1-2 minutes in hot olive oil. Add bacon, stir, and sauté for 3-4 minutes until the onions soften.
  • Add the tomatoes, peppers and stir to combine. Season with sea salt before transferring the mixture to an ovenproof dish.
  • With a sharp knife, slash skin of the sea bass diagonally along each side. Season the sea bass, outside and inside, with salt and ground black pepper.
  • Fill the cavity of each sea bass with rosemary sprigs, basil and lemon slices. Place on top of the bacon mixture.
  • Drizzle over the olive oil and cook in the oven at 190°C for 20-25 minutes, until the fish is tender and cooked all the way through.

2 pound whole sea bass
Sea salt
Black pepper
Fennel tops
Handful basil
1/2 red onion thinly sliced
Bay leaves
Olive oil
2/3 lemon, juiced
2 ounces butter

Steps:

  • Ask your fishmonger to gut and scale your fish. Lay out a piece of tin foil and fold in half. Place the sea bass on top of the foil and score the flesh about 2 inches apart on both sides. Rub plenty of salt and pepper into the scores. Lay out the fennel on the foil and place fish on top of the fennel and push to one side of the foil. Cover liberally with the basil, red onion and bay leaves, making sure you tuck some into the belly. Drizzle over plenty of olive oil, lemon juice and knobs of butter. Fold over the left hand half of the foil and seal the 3 sides to gently hug the fish. Place on tray and bake in a preheated 375 degree oven for approximately 16 minutes (8 minutes per pound). Remove from the oven and allow to stand for 3 to 4 minutes without opening the bag.;
