Steps:
- Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
- Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
- Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
- Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it's laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

Steps:
- 1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. 2. Split the dates in half lengthwise, but don't cut the date all the way through. Remove the pit and discard. Stuff each date with goat cheese, then gently squeeze to seal. Wrap each date with bacon and place seam side down on the prepared baking sheet. Repeat with the remaining dates.3. In a small bowl, combine the honey, rosemary, cayenne, and a pinch each of salt and pepper. Evenly drizzle 1/2 the honey over the dates. The goal is to coat the bacon in honey so that it caramelizes in the oven. 4. Transfer to the oven and bake 20-25 minutes, until the bacon is crisping. Serve warm or room temperature with any remaining honey and walnuts, if desired.

GOAT CHEESE-STUFFED FIGS WRAPPED IN BACON
This is another of the recipes that disappeared so quickly that I didn't get to take a photo of them....they are that good!! They have a little bit of sweet from the fig, some tang from the cheese, and salt from the bacon. A great balance of flavors! The aged goat cheese called for in this recipe is firmer than fresh and has a dry rind. Two of the kinds that work best in this dish are Bucheron and Pouligny-St. Pierre, both have just the right amount of tang.

BACON WRAPPED GOAT CHEESE
Our local supermarket sells this fantastic little appetizer which they make in neighboring France. Seasoned goat cheese is rolled up in bacon and baked until gooey and the bacon browned. Serve with Baguettes, or baked potatoes. Even my wife who won't come near goat cheese likes this recipe. Easy to whip up and makes a great party appetizer.

- Most packages of pitted dates contain dates that are split open on one side. If you find any that are not split open, use kitchen shears to carefully slice dates on one side.
- Take a small amount of goat cheese and stuff into the middle of each date. Use just enough goat cheese to almost fill the gap in each date; do NOT overstuff!
- Wrap each date with a cut strip of bacon, placing the slit opening of the date down against the first edge of the bacon strip before rolling it, so that the opening of the date is wrapped carefully in the middle of the rolled bacon strip. Basically, you want to make sure the goat cheese isn't allowed to ooze out of the date while it's cooking.
