PARMESAN-STUFFED DATES WRAPPED IN BACON
Steps:
- Put oven rack in middle position and preheat oven to 450°F.
- Stuff 1 piece of cheese into each date, then wrap 1 piece of bacon around each date, securing it with a pick. Arrange dates 1 inch apart in a shallow baking pan.
- Bake 5 minutes, then turn dates over with tongs and bake until bacon is crisp, 5 to 6 minutes more. Drain on a paper bag or parchment. Serve immediately.
BACON-WRAPPED DATES
A bacon-wrapped date is sweet, smoky, squidgy and crisp, all in one bite-size package. The trick is getting the bacon to cook before the date burns, and you can do that by starting in a cold oven so that the bacon slowly renders its fat and evenly crisps. While this appetizer was en vogue in the 1970s and 1980s, it has never gone out of style. In fact, it dates back to Victorian England, when bacon-wrapped oysters or prunes (also known as angels or devils on horseback) were eaten before or after a meal. ("Horseback" referred to their being served on toast.) Sometimes the prunes were soaked in tea or liqueur, and stuffed with chutney, cheese, or nuts. You can do the same if you like.

Steps:
- Using scissors, cut each slice of bacon in half crosswise at a diagonal, like cutting ribbon. (This will help secure the bacon to the date.) Starting at the straight end of the bacon, roll the bacon around the dates. Tuck the point under the wrapped bacon to secure. Place seam side down on a baking sheet.
- Place in the oven, and heat the oven to 400 degrees. Cook for 10 minutes, then flip and cook until golden brown all over, another 5 to 15 minutes, depending on the thickness of your bacon.
- Season with black pepper (if desired), then transfer to a paper towel-lined plate to crisp and cool slightly.

- Preheat the oven to 400°F. Using a small paring knife, cut a small slit across the length of each date. Cut the cheese into approximately 1/2-inch-by-1/4-inch rectangles (the cheese will not cut into perfect shapes, but that's OK). Insert a piece of Parmigiano into each date. Lay the strips of bacon out on a work space, next to each other. One by one, place each date at the end of a strip of bacon, and then carefully roll the date along the bacon strip, wrapping it tightly. Place the bacon-wrapped dates on a roasting rack set in a baking sheet, and roast for 10 to 15 minutes, until golden brown and crispy on the outside. Arrange the dates in a bowl with the parsley leaves. Remember to warn your guests that the dates are hot!

- 1. Cook the bacon in a large skillet over medium heat until it has rendered some fat and begins to turn transulcent; don't let it brown at all. Remove from the pan and drain thoroughly on paper towels.
- 2. Make a slit in each date and stuff with a small piece of cheese. Wrap the date in a piece of bacon and secure with a toothpick, if needed. Place the wrapped dates in a baking dish. (At this point you can cover and refrigerate for up to 36 hours or freeze for 1 month, defrost before proceeding)
- 3. Preheat the oven to 375 degrees and bake the dates until the bacon is crisp. (10-12 minutes)
- 4. Remove from oven, drain the dates on paper towels, and set on platter for serving. Thin shreds of any Parmesan would make an awesome garnish!

- Slice the dates along the side so that they open flat for stuffing. Fill the date with about a teaspoon (more or less) of blue cheese, then wrap it with a slice of bacon so that the blue cheese opening is completely sealed and the bacon overlaps underneath. Seal the stuffed date with a toothpick, and place on the baking sheet. Repeat with remaining dates.
- Bake for 15-25 minutes, or until the bacon is cooked and the cheese is lightly browned, turning the dates halfway through so that they crisp up evenly on all sides. Remove and serve warm.
