Steps:
- 1. Cook the bacon in a large skillet over medium heat until it has rendered some fat and begins to turn transulcent; don't let it brown at all. Remove from the pan and drain thoroughly on paper towels.
- 2. Make a slit in each date and stuff with a small piece of cheese. Wrap the date in a piece of bacon and secure with a toothpick, if needed. Place the wrapped dates in a baking dish. (At this point you can cover and refrigerate for up to 36 hours or freeze for 1 month, defrost before proceeding)
- 3. Preheat the oven to 375 degrees and bake the dates until the bacon is crisp. (10-12 minutes)
- 4. Remove from oven, drain the dates on paper towels, and set on platter for serving. Thin shreds of any Parmesan would make an awesome garnish!

Steps:
- Preheat the oven to 400°F. Using a small paring knife, cut a small slit across the length of each date. Cut the cheese into approximately 1/2-inch-by-1/4-inch rectangles (the cheese will not cut into perfect shapes, but that's OK). Insert a piece of Parmigiano into each date. Lay the strips of bacon out on a work space, next to each other. One by one, place each date at the end of a strip of bacon, and then carefully roll the date along the bacon strip, wrapping it tightly. Place the bacon-wrapped dates on a roasting rack set in a baking sheet, and roast for 10 to 15 minutes, until golden brown and crispy on the outside. Arrange the dates in a bowl with the parsley leaves. Remember to warn your guests that the dates are hot!

- Lay bacon slices on baking sheet in even layer, transfer to oven, and bake until bacon turns a slightly darker color, but is still very flexible, around 5-7 minutes, depending on thickness of bacon (be careful to not overcook, or you won’t be able to wrap the bacon around the asparagus bundles). Remove bacon from oven and set aside to cool. Keep baking sheet out as you’ll use it again.
- To a small pot over medium low heat, add maple-flavored syrup, butter, salt, and pepper and bring to a light boil, whisking occasionally. Remove from heat and set aside.
- Split asparagus stalks into 8 groups. Wrap cooled bacon slices around grouped asparagus stalks, starting about 1/2 inch from the bottom, and secure bacon slice with toothpick. Transfer bacon-wrapped asparagus bundles to casserole dish.

- Using the tip of a paring knife, slit each date along one side and carefully remove and discard the pit. Insert a piece of Parmesan into each slit. (To make small shards of Parmesan cheese, cut them from a wedge of cheese with a sharp knife.) Wrap a piece of bacon around each stuffed date and secure it with a toothpick. Place the dates on a rimmed baking sheet. (You can cover and refrigerate the stuffed, wrapped dates for up to 24 hours. Return to room temperature before baking.)
- Bake for about 5 minutes, or until the bacon on top is crisp. Using tongs, turn the dates and bake for another 5 minutes, or until the bacon is crisp. Transfer the dates to a double layer of paper towels to drain.
- Place the parsley bunch in the center of a round serving platter, if using. Arrange the dates on the platter. Serve the dates hot from the oven, while the cheese is still warm, and watch how fast they disappear.
