BACON-WRAPPED DATES WITH PARMESAN

Bacon-Wrapped Dates with Parmesan image

This is a simply great appetizer. You can plan on an empty dish wherever you take it!

Provided by Judy Sprague

Categories     Fruit Appetizers

Number Of Ingredients 3

12 strips of bacon, cut in half crosswise
24 pitted dates
1/4 lb Pannigiano-Reggiano cheese, cut into small chunks

Steps:

  • 1. Cook the bacon in a large skillet over medium heat until it has rendered some fat and begins to turn transulcent; don't let it brown at all. Remove from the pan and drain thoroughly on paper towels.
  • 2. Make a slit in each date and stuff with a small piece of cheese. Wrap the date in a piece of bacon and secure with a toothpick, if needed. Place the wrapped dates in a baking dish. (At this point you can cover and refrigerate for up to 36 hours or freeze for 1 month, defrost before proceeding)
  • 3. Preheat the oven to 375 degrees and bake the dates until the bacon is crisp. (10-12 minutes)
  • 4. Remove from oven, drain the dates on paper towels, and set on platter for serving. Thin shreds of any Parmesan would make an awesome garnish!

Bacon-Wrapped Dates with Parmesan Recipe - (4.5/5) image

Provided by ngaldi

Number Of Ingredients 4

24 deglet noor dates, pitted
1/4 pound Parmigiano-Reggiano
Twenty-four 3-inch strips of very thinly sliced bacon
5 leaves flat-leaf parsley

Steps:

  • Preheat the oven to 400°F. Using a small paring knife, cut a small slit across the length of each date. Cut the cheese into approximately 1/2-inch-by-1/4-inch rectangles (the cheese will not cut into perfect shapes, but that's OK). Insert a piece of Parmigiano into each date. Lay the strips of bacon out on a work space, next to each other. One by one, place each date at the end of a strip of bacon, and then carefully roll the date along the bacon strip, wrapping it tightly. Place the bacon-wrapped dates on a roasting rack set in a baking sheet, and roast for 10 to 15 minutes, until golden brown and crispy on the outside. Arrange the dates in a bowl with the parsley leaves. Remember to warn your guests that the dates are hot!

Provided by BHG Test Kitchen

Time 1h10m

Number Of Ingredients 16

6 cup ciabatta bread torn into bite-size pieces
12 ounce bulk mild Italian sausage
1 cup chopped onion
0.5 cup chopped celery
2 teaspoon snipped fresh thyme
1 teaspoon snipped fresh sage
0.5 teaspoon snipped fresh rosemary
2 tablespoon olive oil
1 egg, lightly beaten
0.5 cup shredded Parmigiano-Reggiano cheese (2 ounces)
0.25 cup dried currants
2 tablespoon snipped fresh Italian ( flat-leaf) parsley
0.25 teaspoon salt
0.25 teaspoon ground black pepper
0.5 - 0.75 cup chicken broth
Grated Parmigiano-Reggiano cheese (optional)

Steps:

  • Preheat oven to 350 degrees F. Generously grease a 2-quart shallow baking dish; set aside. Spread bread pieces evenly in an ungreased 15x10x1-inch baking pan. Bake for 10 to 15 minutes or until bread is dry, stirring once. Transfer to a very large bowl; set aside.

Stir in egg, the 1/2 cup cheese, the currants, parsley, salt, and pepper. Drizzle with enough of the broth to moisten, tossing gently to combine.
  • Transfer bread mixture to the prepared baking dish.* Cover and bake for 40 to 45 minutes or until heated through. If desired, sprinkle with additional cheese. Makes 8 servings.

  • Lay bacon slices on baking sheet in even layer, transfer to oven, and bake until bacon turns a slightly darker color, but is still very flexible, around 5-7 minutes, depending on thickness of bacon (be careful to not overcook, or you won’t be able to wrap the bacon around the asparagus bundles). Remove bacon from oven and set aside to cool. Keep baking sheet out as you’ll use it again.
