SUN DRIED TOMATO SPREAD
An easy sun-dried tomato spread that comes together quickly in a food processor, featuring sun-dried tomatoes, bacon, and fresh thyme.

Steps:
- Allow a large skillet to come to temperature over medium-high heat. Add the bacon and cook for about 8 minutes (or until crispy), stirring often. Transfer to a plate lined with paper towels and set aside to cool.
- Add the cream cheese, mayonnaise, butter, pepper, and salt to the bowl of a food processor fitted with a blade attachment. Process until smooth. Add the sun-dried tomatoes, garlic, thyme, and half of the cooked bacon and process once more.
- Transfer the spread to a bowl, and stir in the remaining bacon. Serve and enjoy.

- In a bowl, beat cream cheese, mustard and celery seed until blended. Stir in tomato and green pepper. Cover and refrigerate for at least 1 hour. In a skillet, cook bacon until crisp; remove to paper towels to drain. Discard drippings. Stir bacon into spread just before serving. Serve with crackers.

AWESOME BACON-TOMATO DIP
Oh, you HAVE to try this one!! My family LOVES dips and spreads, and even the guys got really into this one. I even caught my uncle (who thinks guys are too "macho" for dips), eating it straight from the bowl with a spoon!! Best when made day of, and lettuce added just before serving. It gets soggy:(

SMOKEY TOMATO AND BACON SPREAD
I have made many variations of this over the years, only not with pasta sauce before. This recipe has evolved from a recipe I found on AR for tomato gravy. I have discovered that using the pasta sauce as the base instead of using tomato sauce and canned tomatoes makes this much less time consuming too.

- 1. fry bacon until crisp drain on paper towel and crumble.
- 2. Pit your avocados remove from skin, chop and/or mash in a bowl.
- 3. season with salt and pepper.
- 4. Optional: add chopped tomatoes if desired.
- 5. Serve on a nice whole grain bread, or slices of french bread you toasted in the oven with a bit of olive oil and rubbed with just a bit of garlic, or serve as a dip, or on a salad. I make no knead bread in my dutch oven, slice it and toast. Wraps are good also.
- 6. Sprinkle with some chopped cilantro if desired... and enjoy!!!!
- 7. Optional: sliced chicken is good on this also

- If you start with a 12 ounce package of bacon, cut it in half crosswise so you have 6 ounces of bacon or just remove 6 slices of bacon. Keep the bacon stacked together and slice the bacon crosswise into 1/2-inch thick pieces. No need to separate the pieces yet.
- Place the bacon in a cold skillet and turn the heat to medium. Cook the bacon, stirring occasionally to break up the bacon about 6 minutes or until the bacon is browned and crisp. The bacon separates easily as it warms up in the skillet.
- While bacon cooks (don't forget to stir occasionally), slice the tomatoes in half crosswise/horizontally. Gently squeeze the tomato pulp and seeds into a small bowl. (Save this to make a fresh tomato vinaigrette-see my tip on the post). Chop the tomatoes and place in a medium size bowl.
