2 cups elbow macaroni
1 ¼ cups mayonnaise
5 teaspoons white vinegar
1 ¼ cups diced celery
1 large tomato, diced
5 green onions, finely chopped
½ cup shredded Cheddar cheese
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) package bacon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and rinse under cold water until chilled. Transfer macaroni to a large salad bowl.
  • Stir mayonnaise, vinegar, celery, tomato, green onions, Cheddar cheese, salt, and black pepper into macaroni until thoroughly combined. Cover and chill salad at least 2 hours.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Let bacon cool; crumble when cooled.
  • Mix bacon into macaroni salad to serve.

2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried orecchiette
2 cups loosely packed arugula
1 cup torn fresh basil leaves
3 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the bacon in a large, cold skillet then cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the arugula, basil and tomatoes to the bowl and toss to combine. Season with salt and pepper and top with the bacon. The pasta salad is best if served right away.

24 strips (cut 1/4 inch thick) bacon, (1 pound)
2 1/2 bunches lettuce, such as romaine, Bibb, or green oakleaf
1 cup Avocado Dressing for BLT Salad
2 pounds tomatoes, preferably red and yellow
1 pint cherry tomatoes
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Arrange bacon strips on a wire rack set over a baking pan. Place pan in oven until bacon is golden brown and crisp, about 40 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.
  • Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.
  • Arrange whole bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately.

Tender pasta, crispy bacon, and fresh tomatoes are tossed in a creamy dressing. This creamy bacon tomato salad recipe has been a favorite in our family for decades and once you taste it you'll see why!

1/2 pound bacon (cooked and crumbled)
8 ounces dry macaroni (boil per directions on package)
2 tomatoes (Can use pint of cherry tomatoes)
1/2 sweet onion (chopped)
1 Tablespoon bacon grease (reserved from cooking the bacon)
1 or 2 Tablespoons green onions (chopped)
1/2-1 teaspoon salt (to taste)

Steps:

  • Cook the bacon. I like to line a pan with foil. Then place a sheet of parchment paper over that. I lay my bacon flat on the pan and put it into a 375 degree oven for 20 minutes. It turns out perfect every time.
  • Cook macaroni according to package directions, but take care not to overboil. Al dente pasta holds up better in this dish. When done cooking, drain macaroni and transfer to a large mixing bowl.
  • While bacon and macaroni are cooking, chop your onions, tomatoes, and green onions.
  • After bacon is cooked, remove it from pan and drain it on a plate covered with a paper towel. Save the bacon grease on the baking pan.
  • Carefully pick up your parchment paper and transfer the bacon grease to a small bowl.
  • Cut up or crumble the bacon when cool.
  • Mix the macaroni, tomato, bacon, onions, and bacon grease together.
  • Start with about ½ cup of mayonnaise and stir gently into the other ingredients. Add salt and pepper to taste, if desired.
  • Transfer to your serving bowl. You can garnish with chopped green onions, a few chopped tomatoes, and crumbled bacon if you want it to look a little fancier.
  • Cover and keep refrigerated until ready to serve.

Steps:

  • Add pasta to boiling water. Cook for about 7 minutes for al dente pasta. Drain in colander and rinse with cool water.

  • Halve grape tomatoes, slice green onions including tops, cut block cheddar into small cubes.
  • Add pasta, bacon, tomatoes, green onions, & cheese to large bowl and toss.
  • Whisk together ingredients for dressing in a small bowl, then pour over salad when well combined. Gently toss salad until all ingredients are coated with dressing. Serve immediately.

Tomato salad is a summertime staple and for good reason - juicy ripe tomatos need little more than a splash of olive oil, salt, and ribbons of fresh basil to shine. If you asked my grandpa, he'd say they need nothing (he ate them like apples!). But when you want your salad to have a little some extra special, dress it up with bacon vinaigrette. Chunks of thick cut bacon and tangy red wine vinegar-based dressing are an incredible flavor and texture companion to ripe tomatoes.

6 strips thick cut bacon (cut into 1" pieces)
2 lb ripe tomatoes (sliced into bite sized pieces)
½ medium red onion (thinly sliced)
1 large handful basil leaves (torn)
3 tbsp red wine vinegar
1 tbsp honey
2 tsp whole grain mustard
kosher salt (to taste)
cracked black pepper (to taste)

Steps:

  • Place the bacon pieces into a cold cast iron skillet. Cook over medium heat, stirring occasionally, until the fat has rendered and the bacon is golden brown and crispy. Remove the bacon from the skillet using a slotted spoon and place onto a paper-towel lined plate to drain. Set aside the remaining bacon fat to cool slightly.
  • Chop the tomatoes, thinly slice the red onion, and coarsely chop or tear the basil. Combine the tomatoes, onions, basil, and cooked bacon in a large bowl.
  • Pour all but 3 tablespoons of bacon fat from the skillet. Add one tablespoon of the vinegar to the pan - be careful, as it may sizzle.   • Cook bacon over moderate heat until crisp. Reserving 3 tablespoon bacon, fat drain bacon on paper towels and crumble. Cut bread into enough 3/4-inch cubes to measure 1 cup. Brush with bacon grease and grill to taste. In a small bowl whisk together garlic, lemon juice, mayonnaise, water, and salt and pepper to taste. Slice (onion) and halve tomatoes. Tear lettuce into bite-size pieces. In a large bowl toss together onion, tomatoes, lettuce, half of bacon and croutons, salt and pepper to taste, and enough dressing to coat. Divide salad between 2 plates and top with remaining croutons and bacon.
