RICOTTA TOAST WITH BACON AND TOMATO



Ricotta Toast with Bacon and Tomato image

Toast isn't just for breakfast anymore. Eat this creamy and flavorful toast any time of day! Use a thick-cut crusty bread like sourdough so it can stand up to the toppings. If you prefer a smoother consistency, blend the ricotta in a food processor before using.

2 slices bacon
⅔ cup diced cherry tomatoes
1 tablespoon shredded Parmesan cheese
2 leaves fresh basil, minced
salt and ground black pepper to taste
2 thick slices crusty bread
2 tablespoons olive oil
¼ cup ricotta cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. When cool enough to handle, crumble and set aside.
  • Combine cherry tomatoes, Parmesan cheese, basil, salt, and pepper in a small bowl.
  • Heat a cast iron grill pan over medium-high heat. Brush bread slices with olive oil on both sides. Cook in grill pan until grill marks appear and bread is toasted, 2 to 3 minutes per side.
  • Spread toasted bread with ricotta cheese. Top with tomato mixture and sprinkle with bacon. Cut each toast in half and serve.

3/4 cup mayonnaise
1/3 cup crumbled cooked bacon
1 loaf unsliced French bread (1 pound)

Steps:

  • In a large bowl, combine the cheese, mayonnaise and bacon. Cut the bread into 24 slices, about 1/2 in. each. Spread the cheese mixture on 1 side of each slice. , Place on an ungreased baking sheet. Bake at 425° for 8-10 minutes or until golden brown.

1 ½ tablespoons Worcestershire sauce
¼ teaspoon dry mustard

1 (12 ounce) loaf cocktail-size rye bread

Steps:

  • Mix processed cheese food, Cheddar cheese, bacon, Worcestershire sauce, and dry mustard together in a bowl.
  • Heat skillet over medium heat.
  • Butter both sides of each slice of bread and toast in skillet until browned, 1 to 2 minutes per side; arrange onto a baking sheet. Repeat toasting with remaining butter and bread slices.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
