CRESCENT BACON-CHEESE TARTLETS

- Heat oven to 375°F.
- If using crescent rolls: Unroll dough into 1 large rectangle on work surface. Press into 12x9-inch rectangle, firmly pressing perforations to seal. If using dough sheet: Unroll dough on work surface. Press into 12x9-inch rectangle.
- Cut dough into 12 squares. Gently press squares into 12 ungreased mini muffin cups, shaping edges to form rims 1/4 inch high. Spoon cheese evenly into dough-lined cups. Top each with bacon and onion. In small bowl, beat egg and whipping cream with wire whisk or fork until blended. Spoon slightly less than 1 tablespoon mixture into each cup.
- Bake 15 to 20 minutes or until edges are golden brown and filling is set. Cool 5 minutes. Remove from muffin cups.

BACON AND ONION TARTS
These are crunchy little tarts with the ever-satisfying flavors of bacon and onion. They are a hit at parties and potlucks!

- Cook and stir bacon, onion, dry mustard, and nutmeg in a large skillet over medium-low heat until caramelized, 20 to 30 minutes. Squish the bacon mixture to one side in the pan and set the pan at an angle so the grease drains to the bottom. Discard grease and let bacon mixture cool for 5 to 10 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cooled bacon mixture, mozzarella, sour cream, and mayonnaise in a large bowl. Mix together until the consistency is thick like a paste.
- Open 1 can of crescent rolls (keep the others in the fridge until you are ready to open them) and separate each triangle. Use a pizza cutter to cut each triangle into 5 strips by cutting it 3 times across diagonally, and then cutting the 2 longer strips in half.
- Take about 1 teaspoon of the filling and wrap a crescent dough strip around it, stretching it if needed. It doesn't matter if the filling is poking out of the bottom. Line them up on a baking tray and squish the tops flat so they stay upright. Repeat with remaining cans of dough and filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.

CRESCENT BACON CHEESE TARTLETS
For my little sister's Sweet 16 birthday party, we decided to do a bunch of appetizer type foods. I found the recipe for these. They are wonderful!!! I've made them several times since then. Always a big hit. Never any left over. :o) The recipe can be doubled, or even tripled, easily.

BACON TARTLETS
Easy snacks with a simple filling: look very pretty if made in small fluted loose-bottomed tins! For the pastry, use recipe #231688, which you can use raw (no blind baking). It's easy to work with and the results are fantastic. These tartlets freeze well, and the leftover pastry dough can be frozen too. Prep time does not include making the pastry (which can be done way ahead of time).

Steps:
- Prepare the pastry according to the recipe, roll out, and cut rounds about 1 inch larger than the upper diameter of your tartlet tins.
- Drape the pastry carefully into the tins, using a knuckle to press it lightly round the bottom edges. Press into sides, then cut off excess with a knife.
- Heat oven to 350 deg F/180 deg Celsius.
- Fry the bacon pieces and onion in a skillet or pot over high heat, stirring frequently. Don't use a lot of oil: about 2 Tblsps.
- The bacon and onion do not have to be crisp: just stir well so they don't burn, and cook until soft.
- Add the tablespoon balsamic vinegar, and stir round and round until the vinegar evaporates over the high heat. Take pot off heat.
- In a bowl mix the milk and cream, and whisk to mix well.
- Beat the eggs until they start to froth, and add to milk mixture.
- Add seasoning salt and nutmeg. Use your own discretion: the mixture needs something with just a little oomph. I used a salt which contains hot pepper, crushed coriander seeds and dried lime rind. You could also add a splash of hot pepper sauce if you do not have a spicy barbecue sauce.
- Put about 2 teaspoons of the bacon-onion mixture in the bottom of each tartlet -- just cover the bottom.
- Add 2 tablespoons of the milk-egg mixture to your lined tartlets if your tartlet pans are about 4" in diameter: the tartlets should be about 7/8 full.
- Put tartlets on an oven tin, preferably with a dark finish, because that helps the bottom crust to bake well.
- Bake in the preheated oven for 25 - 30 minutes -- it will depend on tin size and your oven. Do keep a watch so the custard does not burn on top.

BACON, ONION AND CHEESE TART
This is my take on a traditional French tarte flambee, made on a crispy crust and topped with fromage blanc, bacon and onions.

- Preheat the oven to 425 degrees F. Line 2 sheet pans with parchment paper.
- In a medium saute pan, cook the bacon over a medium-low heat until it begins to render, 3 to 5 minutes. Add the onions and cook until they begin to soften, about 3 minutes. Season with pepper. Set aside to let cool. Add the thyme to the cooled bacon-onion mixture.
- In a bowl, combine the farmer's cheese, creme fraiche, egg yolk and salt and pepper to taste. Set aside.
- Flour a flat surface and place the puff pastry on top. Flour the top and gently roll into a 13-by-18-inch rectangle. Cut the pastry in half and transfer each to a lined sheet pan. Using a fork, dock the puff pastry (pierce it slightly with the tines), leaving a 1-inch border untouched.
- Divide the cheese mixture between the two sheets of pastry and spread evenly on the docked area. Top each tart with half of the bacon-onion mixture.
- Place the tarts in the oven on the lower racks and bake, rotating halfway through, until the crusts are dark golden, about 25 minutes. Garnish with the pecorino and chives.
BACON QUICHE TARTS

- Preheat oven to 375°. In a small bowl, beat cream cheese and milk until smooth. Add the eggs, cheese, green pepper and onion. , Separate crescent dough into 8 triangles; press onto the bottom and up the sides of greased muffin cups. Sprinkle half of the bacon into cups. - Preheat oven to 325 degrees F (165 degrees C).
- Heat olive oil in a large skillet over medium heat. Saute shallots until they begin to brown. Add garlic and mushrooms, and cook until tender. Deglaze pan with brandy, and season with thyme, parsley, salt, and pepper. Remove from heat, and allow to cool.
- In a large bowl, combine egg, milk, Swiss cheese, cream cheese, and bacon. Fold in mushroom mixture. Spoon evenly into phyllo cups, and place cups on baking sheet.
- Bake in preheated oven for 15 to 20 minutes, or until filling is set.

- For the pastry, put the flour, salt, mustard powder, butter and lard in a food processor, then pulse to a breadcrumb consistency. Add enough cold water, pulsing, to bring the pastry together. (Alternatively, put the flour/salt/mustard in a bowl, rub in the fats with your fingertips, then add the cold water and mix with a dinner knife.) Turn out onto a work surface, then bring together in a ball. Wrap in cling film, flatten to a disc, then chill for 30 minutes.
- Heat the oven to 200°C/180°C fan/gas 6. Divide the chilled pastry into 6 equal pieces, then roll out each piece on a lightly floured work surface to the thickness of a pound coin. Use to line the tart tins, pressing to the edges and flutes of the tins and re-rolling any offcuts, if necessary, to patch up the pastry. Prick all over with a fork, then chill for 30 minutes.
- Line the cases with with previously scrunched up pieces of baking paper/foil. Fill with ceramic baking beans or uncooked rice, then bake for 15 minutes. Remove the paper/foil and baking beans/rice and bake for another 5 minutes until golden and sandy to the touch. Turn down the oven to 170°C/150°C fan/gas 3½.
- Fry the bacon in a non-stick frying pan over a low heat until it starts to release its oil, then increase the heat and fry until crisp. Transfer to a bowl, leaving most of the fat in the frying pan. Add the onion and shallots to the pan and fry over a medium heat for 12-15 minutes until softened and lightly caramelised. Set aside.
