I created this chicken sandwich recipe based on a meal my daughter ordered at a restaurant. She likes to dip her sandwich in the extra honey-mustard sauce. -Marilyn Moberg, Papillion, Nebraska

1/4 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon Montreal steak seasoning
4 slices Swiss cheese
4 whole wheat hamburger buns, split
2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve chicken on buns with bacon, mayonnaise mixture and, if desired, lettuce and tomato.

Number Of Ingredients 18

2 boneless skinless chicken breasts
1 cup flour
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
2 eggs
Oil (for frying)
Honey Mustard Sauce-
5 tablespoons honey
3 tablespoons Dijon mustard
2 tablespoons of rice wine vinegar
Additional Ingredients-
2 sesame seed hamburger buns
butter (for spreading)
2 slices Swiss cheese
4 slices peppered bacon

Steps:

  • In a bowl combine honey, Dijon mustard and rice wine vinegar. Set aside.
  • Heat a large skillet to medium heat. Add the bacon and cook until browned and crispy, turning at least once. Drain on a plate lined with paper towels. If you want to know how to cook bacon in the microwave or oven, see my tutorial on how to cook crispy bacon.
  • Beat the eggs in a bowl. In a shallow plate or pie dish combine flour, salt, pepper, garlic powder, onion powder, and paprika. Roll the chicken first in the flour, then dip in the egg and then roll in the flour again. Repeat with the remaining chicken breast.
  • Heat oil in a deep-fryer to 375 degrees F. Cook the chicken breasts one at a time in the hot oil for about 10 minutes or until fully cooked (the internal temperature has reached 165 degrees F.). Drain on a plate lined with paper towels. Top each chicken breast with a slice of Swiss cheese.
  • Heat a large skillet to medium heat. Split the buns in half. Spread a thin layer of butter onto the cut side of each bun. Place into the skillet butter-side-down and cook until browned on the bottom. Remove from the skillet.
  • To make the sandwiches. Spread a thin layer of honey mustard onto the top of the bottom half of each bun. Top with a cooked chicken breast. Add 2 slices of the bacon onto the chicken. Spread an additional layer of honey mustard onto the bottom of the top half of the bun. Place onto the sandwich, honey mustard side down.

Grilled Swiss Cheese and Chicken Sandwiches image

These are great for a quick lunch or a soup and sandwich night. Kids love these as well as the grown ups. Sourdough is another fantastic choice of bread to grill these on. You can interchange any type of cheese. Please use the best ketchup you can find, I use Heinz, as it will make all of the difference.

1 1/2 tablespoons unsalted butter
1 whole boneless skinless chicken breast (about 3/4 pound)
3 tablespoons mayonnaise
1 tablespoon good quality ketchup
4 slices rye bread (thick slices)
4 slices swiss cheese, cut to fit the bread
2 small whole sweet pickles, sliced thin, plus
2 whole pickles (to garnish)
2 slices red onions (thin slices)
1 large egg
2 tablespoons milk

Steps:

  • In a small, heavy skillet heat 1/2 tablespoons of the butteer over moderately high heat until the foam subsides, in it saute' the chicken, turning it once, for 12 to 15 minutes, or it is springy to the touch and just cooked through, and on a work surface shred the chicken.
  • In a small bowl combine well the mayonnaise, the ketchup, and salt and pepper to taste, divide the mixture among the bread slices, spreading it, and top it with the Swiss cheese. Divide the pickle and onion slices between 2 of the half-sandwiches, top them with the chicken, and cover the chicken, with the remaining half-sandwiches.
  • In a small shallow disk whisk together the egg, milk, and salt and pepper to taste, press each sandwich together firmly, and dip the sandwiches, one at a time, in the egg mixture, turning them to coat them thoroughly. In a heavy skillet heat 1/2 tablespoons of the remaining butter over moderate heat until the foam subsides and in it cook the sandwiches, covered, for 4 minutes or until the undersides are a golden brown. Transfer the sandwiches to plates, halve them with a serrated knife, and garnish them with the whole picklesd, cut lengthwise into fan shapes.

4 chicken breast fillets
4 hamburger buns with sesame seeds
4 leaves lettuce
4 slices tomatoes
4 slices kraft swiss cheese
8 slices bacon, cooked
6 -8 cups vegetable shortening
1 egg
1 cup water
1 cup all-purpose flour
2 1/2 teaspoons salt
1 teaspoon paprika
1 teaspoon onion powder
1/8 teaspoon garlic powder
2 tablespoons sour cream
1 tablespoon buttermilk
1/3 cup mayonnaise
1 teaspoon sugar
1/4 teaspoon lemon juice
1 1/2 teaspoons white vinegar
1/8 teaspoon parsley
1/8 teaspoon onion powder
1/8 teaspoon salt
1 dash garlic
1 dash ground black pepper
1 dash dill weed
1/2 teaspoon unflavored gelatin
2 teaspoons hot water

Steps:

  • Preheat 6-8 cups of shortening in a deep fryer to 350 degrees or use a deep chicken fryer skillet adding 2" of shortening.
  • To prepare the ranch dressing, combine all of the ingredients except the water and gelatin in small bowl.
  • Mix the water with the gelatin in a small cup until all of the gelatin is dissolved.
  • Add this gelatin solution to the other ingredients and stir.
  • Cover and chill the dressing until it's needed (I like to prepare the day before so flavors blend).
  • Beat the egg and then combine with 1 cup water in a small, shallow bowl.
  • Stir.
  • Combine the flour, salt, onion powder and garlic powder in another shallow bowl.
  • Pound each of the breast fillets with a mallet until about 1/4-inch thick.
  • Working with one fillet at a time, first coat each fillet with the flour, then dredge it in the egg and water mixture.
  • Coat the chicken once again in the flour and set it aside until all of the fillets have been breaded.
  • Fry the chicken fillets until light brown and crispy.
  • As chicken is frying, prepare each sandwich by grilling the face of the hamburger buns on a hot skillet over medium heat.
  • Spread about 1 1/2 teaspoons of the ranch dressing on the face of the top and bottom buns.
  • On the bottom bun, stack a leaf of lettuce and a tomato slice.
  • When the chicken is done frying, remove the fillets from the fryer and drain them on paper towels or a rack for a couple of minutes.
  • Stack one fillet onto the bottom of the sandwich (onto the tomato), then stack a slice of the Swiss cheese onto the chicken.
  • Arrange the bacon, crosswise, on top of the Swiss cheese, then top off the sandwich with the top bun.
  • Repeat the stacking process for each of the remaining sandwiches.
