1 ½ pounds ground beef
2 eggs
½ cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ cup grated Parmesan cheese
½ cup Italian salad dressing
1 ½ cups Italian seasoned bread crumbs
1 cup chopped fresh spinach

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
  • Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

This was given to my mom by her best friend who is a southern girl at heart. It is a sweet and savory flavor that you never forget. Try it with a grilled cheese or on scrambled eggs...you can put it on anything!

½ pound smoked bacon
2 pounds ripe tomatoes, chopped
1 yellow sweet onion, finely diced
1 cup white sugar
2 ½ tablespoons apple cider vinegar
1 ½ teaspoons salt
¼ teaspoon black pepper
1 dash hot pepper sauce (such as Tabasco®)

Steps:

  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
  • Stir tomatoes, sweet onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce together in a saucepan and bring to a boil, stirring constantly to dissolve sugar. Stir in crumbled bacon and cook over medium heat, stirring often, until the spread is very thick, about 1 hour. Adjust salt and black pepper.
  • Cool and spoon into a 1-pint glass jar with a lid; keeps refrigerated for 1 week or frozen for 2 months. If freezing, put spread into small jars and let jars thaw in refrigerator overnight before using.

1 large onion, chopped (1 cup)
4 cloves garlic, finely chopped
1 tablespoon Muir Glen™ organic tomato paste
1 lb lean ground turkey
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 slice uncooked bacon, chopped
1/4 cup fat-free (skim) milk
1/2 cup Progresso™ panko crispy bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 egg
1 egg white
2 tablespoons packed brown sugar
1 tablespoon lemon juice
1 can (28 oz) Muir Glen™ organic whole peeled tomatoes
2 teaspoons grated lemon peel
1/4 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 350° F. In small bowl, place 1/2 cup of the onion and half of the garlic; reserve for jam. Spray 8-inch skillet with cooking spray; heat over medium-high heat. Add remaining onion to skillet; cook 3 minutes, stirring frequently, until tender. Reduce heat to low; add tomato paste. Cook 2 minutes, stirring occasionally. Remove from heat; stir in remaining garlic.
  • Spray broiler pan with rack with cooking spray. In large bowl, mix onion mixture and all remaining meatloaf ingredients. Shape into 8 x 5-inch loaf on rack in broiler pan. Bake 1 hour or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes.
  • Meanwhile, make jam. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Add reserved onion and garlic to skillet; cook 3 minutes, stirring frequently, until golden. Add brown sugar and lemon juice, stirring to loosen browned particles from bottom of skillet. Stir in remaining jam ingredients; break up tomatoes with spoon. Heat to boiling; reduce heat. Simmer uncovered 20 minutes, stirring occasionally, until mixture begins to thicken. Strain jam though fine strainer; discard liquid.
  • To serve, cut loaf into 8 slices; top each slice with about 3 tablespoons warm jam.

My mom made several variations of this meatloaf recipe while we were growing up to make sure we got our veggies in for the day. Now we make it with ground turkey for a lighter meal.

2 lb ground chuck (for healthier dish use ground chicken or turkey)
1 can(s) fire roasted tomatoes, diced
8 oz canned tomato sauce
2 large eggs
3/4 c italian bread crumbs
3/4 pkg frozen spinach (using frozen spinach will add moisture to the dish)
1/2 c barbecue sauce
1/2 c parmesan cheese

Steps:

  • 1. In a large mixing bowl add ground beef and eggs. Stir until eggs are beaten.
  • 2. Add remaining ingredients and mix well. Salt and pepper to taste.
  • 3. Place mixture in a greased meatloaf pan and bake for 1 hour at 375 degrees.
  • 4. Drain excess grease before serving. Ready to serve!

10 ounces frozen chopped spinach
1/3 cup chili sauce
1/4 cup parmesan cheese
1 egg
1 garlic clove

Steps:

  • Preheat oven to 350.
  • Squeeze out excess water out of spinach.
  • Use a large egg.
  • Mince Garlic.
  • In a large bowl, combine all ingredients except bacon. Shape into a loaf and place in a shallow baking dish.
  • Arrange bacon across top.
  • Bake 1 1/4 hours or until a meat thermometer registers 160.

Turkey Meatloaf is a healthier version of a dinner classic. You'll love all the delicious flavors of this easy weeknight favorite!

10 ounces frozen spinach
1 pound ground turkey
1/2 cup milk
1/2 cup Italian bread crumbs
1 packet dry onion soup mix
2 cups Colby jack cheese (shredded, divided)
1 egg
1/2 teaspoon Worcestershire sauce
1/4 cup red bell pepper (seeded and diced)
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces tomato sauce
1/2 cup yellow onion (diced)

Steps:

  • Preheat oven to 375 degrees F.
  • Place spinach in a microwave-safe bowl. Defrost in the microwave for about 5 minutes. Let rest. Once cooled place spinach in a double layer of paper towels and squeeze out all of the excess liquid possible.
  • To a large mixing bowl, add the ground turkey, spinach, milk, bread crumbs, onion soup mix, 1 1/2 cups cheese, egg, Worcestershire sauce, bell pepper, garlic powder, salt, and pepper. Mix everything together until well combined.
  • Spray an 8-inch x 8-inch glass baking dish with non-stick cooking spray.
  • Put the turkey mixture in the pan and spread it into an even layer.
  • Sprinkle the remaining 1/2 cup of cheese on top of the meatloaf. Pour the tomato sauce on top of the cheese, and sprinkle the diced onion on top of the tomato sauce.
  • Bake for 1 hour. If the top of your meatloaf begins to brown too quickly, carefully place a piece of foil over the top and secure loosely.
  • Remove meatloaf from the oven and let cool for 10 minutes before cutting into 6 slices.

This decadent Tasty AF Turkey Meatloaf recipe is going to have them running to the dinner table! A mouth-watering turkey meatloaf with bacon and cheese and the most amazing glaze!

3 lbs. ground turkey, not extra lean
1 pound bacon cooked and crumbled, reserving 2 tablespoons of bacon grease
1 1/2 cup diced onions
1/4 cup chicken broth
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1/4 cup tomato paste
2 cups shredded cheddar cheese
3/4 cups bread crumbs
1 egg, beaten
1/2 cup mayonnaise
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1/2 cup ketchup
1/2 cup barbecue sauce (your favorite kind)
3 tablespoons brown sugar
1/4 teaspoon dry mustard

Steps:

  • Preheat the oven to 375 degrees.
  • Cook the bacon in a large skillet until crisp, reserving 2 tablespoons of the bacon grease.
  • Add the onions to the same skillet with the bacon grease and cook over medium heat until the onions are soft, about 5-7 minutes.
  • Add the chicken broth, soy sauce and Worcestershire sauce and cook for 5 minutes until the liquid has reduced. Stir in the tomato paste then turn the pan off to cool.
  • In a large bowl add the turkey, 3/4 of the crumbled bacon (you'll need 1/4 of the bacon to top the meatloaf after cooking), bread crumbs, cheese, egg, mayonnaise, salt and pepper. Add the cooled onions and sauce from the skillet and mix well to combine.
  • Line a baking sheet with aluminum foil or parchment paper (if using foil you'll need to spray with cooking spray) then form the meatloaf in the center of the sheet. I made my meatloaf about 12 inches long, 5 inches cross and 3 inches high. Bake for 45-50 minutes, uncovered.
  • While the meatloaf is cooking, whisk together the sauce ingredients in a small bowl.
  • Remove the meatloaf from the oven and baste heavily with the sauce, then return to the oven and cook another 15 minutes.
  • You can baste the meatloaf once more with the sauce after it comes out of the oven, or serve any extra sauce on the side.
  • Top with the remaining crumbled bacon and serve.

  • Preheat oven to 350° F (177 °C), and grease or oil a 9x4 standard size loaf pan. In a medium size skillet over medium high heat melt the 2 tbsp butter. Add onions, garlic and mushrooms.
