BACON RANCH CHICKEN MEATLOAF

Change up boring ground beef meatloaf with healthier chicken meatloaf flavored with real bacon and ranch dressing. This is a go to weekday dinner for the entire family.

4 slices bacon (chopped small...[$1.50])
½ large onion (chopped small...[$0.50])
1 lb ground chicken (...[$4.00])
2 tsp. garlic powder (...[$0.08])
1 large egg (...[$0.23])
¾ cup breadcrumbs (...[$0.18])
6 tbsp. ranch dressing (divided...[$0.51])

Steps:

  • In a small skillet, cook chopped onions and bacon together over medium heat. Cook until bacon is done, drain and set aside.
  • Preheat oven to 375 °F and grease a small casserole dish.
  • In a large bowl, mix together cooked bacon and onion mixture, ground chicken, garlic, egg, breadcrumbs, and 3 tbsp. ranch dressing. Mix until everything is even.
  • Press ground meat mixture into a loaf form and put into a greased casserole dish. Bake for 45 minutes or until meatloaf is golden brown on top.
  • Spread the remaining ranch dressing on top and serve hot.

3 chicken breasts
salt, to taste
pepper, to taste
6 tablespoons ranch dressing
6 slices bacon
4 oz cheddar cheese

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Place chicken breast in a baking dish. Season chicken with salt and pepper, to taste.
  • Spread 1-2 Tbsp. ranch on each chicken breast.
  • Layer two slices of bacon on top of each chicken breast.
  • Top with cheese.
  • Bake for 40 minutes.
  • Enjoy!

This bacon wrapped meatloaf is made with a blend of pork and beef and cooked in the classic loaf fashion. It's very meaty and a great family dinner.

1 pound ground beef
½ pound ground pork sausage
1 sleeve crushed buttery round crackers (such as Ritz®)
⅔ cup ketchup
½ cup chopped onion
2 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
12 slices thick-cut bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
  • Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

  • Add the bacon to a large cast iron skillet over medium heat. Saute for 10-12 minutes until bacon starts to color and release some fat. You do not want to cook it until crisp! Remove half of the bacon and place it in a large bowl. Continue cooking the other half of the bacon until crispy and cooked through to your liking. Remove and set aside on a paper towel lined plate.
  • Add all of the remaining ingredients to the bowl (less the Ranch Dressing) and use your hands to mix to combine. Add the mixture to a large loaf pan (I used a 1.5 quart glass loaf pan 5" x 9"). Place the loaf pan on a baking sheet (in case it bubbles over; mine did not, but better safe than sorry) and bake at 375° F for 55-60 minutes until juices run clear and meatloaf is cooked through. Let rest 10 minutes before slicing.
