This is a very flavorful pasta salad. The crisp cooked bacon really adds a nice flavor. I get requests for this pasta salad for every get together and cook out.

1 (12 ounce) package uncooked tri-color rotini pasta
10 slices bacon
1 cup mayonnaise
3 tablespoons dry ranch salad dressing mix
¼ teaspoon garlic powder
½ teaspoon garlic pepper
½ cup milk, or as needed
1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix, garlic powder, and garlic pepper. Stir in milk until smooth. Place rotini, bacon, tomato, black olives and cheese in bowl and toss to coat with dressing. Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

6 ounces sharp cheddar, cut into small cubes
¼ cup diced red onion
¼ cup thinly sliced almonds
8 slices bacon, fried and crumbled
½ cup mayo
¼ cup sour cream
2 tablespoons ranch seasoning mix
1 teaspoon white distilled vinegar

Steps:

  • Add the broccoli, cheddar, onion, almonds, and bacon to a large mixing bowl and stir to combine.
  • Add the mayo, sour cream, ranch seasoning, and vinegar to a small mixing bowl and stir well.
  • Pour the dressing over the broccoli salad and stir well to coat.
  • Serve immediately.

A flavorful low carb chicken salad made with bacon, broccoli, ranch and shallots.

2 boneless skinless chicken breasts
1 cup chopped broccoli
5 strips cooked bacon
1/2 cup ranch dressing - thicker dressings work best
1/2 a large shallot or one small shallot

Steps:

  • Bake bacon until crispy
  • Fill a pot with cold water and place 2 chicken breasts in the pot
  • Place the pot on the stove and bring to a boil
  • Once boiling cover the pot and simmer for 14 minutes
  • While the chicken and bacon cook, dice the shallot and chop the broccoli into smaller pieces
  • Remove the chicken breasts from the water and allow to cool slightly
  • Shred the chicken with two forks and add to a large mixing bowl
  • Add chopped bacon, broccoli, shallots and ranch dressing to the bowl with the chicken
  • Mix it all together so that the ranch dressing coats all of the other ingredients
  • Serve immediately or store in the refrigerator for up to 5 days

1 lb broccoli, florets only
2 (15 ounce) cans dark red kidney beans
1 red onion, sliced
1/2 lb bacon, thick sliced
6 ounces ranch dressing (your favorite brand)
salt
pepper

Steps:

  • Steam the broccoli until just tender, then rinse until cold water to stop cooking. It should be bright green, not cooked grey! Drain well on paper towels.
  • Rinse the kidney beans under cold running water, drain well and add to the broccoli in a large mixing bowl.
  • Slice the onion about 1/8" thick then cut the rings into segments 1/2" to 1" or so.
  • Cook the bacon until crisp then drain well and coarsely chop.
  • Add the bacon and onion to the broccoli and kidney beans, mixing well while moistening with the ranch dressing. Don't add so much ranch dressing that it becomes soupy.
  • Salt and pepper to taste.

1/2 cup dried cranberries
1/2 cup chopped apples
1/4 cup shredded carrots
3 slices turkey bacon
2 tablespoons sunflower seeds
2 tablespoons vegan feta cheese, crumbled, remove for Whole30 and SCD
1 tablespoon hemp seeds
Homemade ranch dressing, to taste, remove for Whole30 and SCD

Steps:

  • Begin by frying up turkey bacon in a skillet until thoroughly cooked. Set aside.
  • While turkey bacon is frying, wash and dry all fruit and veggies. Set to the side as well.
  • Chop raw broccoli and apple into small pieces, and place in a large salad bowl.
  • Add remaining ingredients (except for the dressing), and toss to combine.
  • Add in the Homemade Ranch Dressing, and toss one more time.
  • Serve, and enjoy!
