PINEAPPLE BACON BURGERS

Pineapple Bacon Burgers image

Seasoned hamburger and a slice of pineapple are slapped together, and wrapped in bacon. It's that easy, and adds a wonderful flavor to a regular burger! This recipe was one of my grandmother's favorites. We would make these special for her when she would come up to see us.

HAWAIIAN BURGER

Hawaiian Burger image

Every bite of these burgers is an explosion of sweet and savory, thanks to the juicy pineapple topping and umami-packed mayo spread (plus bacon!).

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 8

1/2 cup mayonnaise
1/2 cup teriyaki cooking sauce or marinade
1 small pineapple, peeled and cored
24 ounces lean ground beef
Kosher salt and freshly ground black pepper
8 slices bacon
4 onion rolls, split
4 slices mozzarella

Steps:

  • Preheat the oven to 200 degrees F.
  • Mix the mayonnaise and 1/4 cup of the teriyaki cooking sauce in a small bowl until combined. Slice four 1/4-inch-thick rounds from the pineapple (reserve the remaining pineapple for another use). Form the beef into 4 patties and sprinkle with salt and pepper.
  • Heat a grill pan over medium-high heat, alternatively prepare an outdoor grill for medium-high direct and indirect heat. Add the bacon and pineapple in a single layer in a grill pan; if using an outdoor grill place the pineapple over direct heat and the bacon over indirect heat and cover. Cook until golden on one side, about 5 minutes for the pineapple and 7 minutes for the bacon. Flip both with tongs and continue cooking until the bacon is crisp and the pineapple is golden and soft, about 6 minutes more for each. Transfer to a baking sheet along with the rolls and keep warm in the oven.
  • Add the burgers to the grill pan or outdoor grill over direct heat and cook until well browned on one side, about 4 minutes. Flip the burgers and cook for 2 minutes. Brush the burgers with half the remaining teriyaki cooking sauce, top with the mozzarella and brush with more sauce. Cover the burgers with a heatproof metal bowl or grill lid and cook until the cheese is melted and the burger is cooked to desired doneness, 1 to 2 minutes for medium.
  • Put a burger on the bottom half of each roll and top with 2 slices bacon and 1 pineapple round. Divide the teriyaki mayonnaise among the burgers, spooning it into the hole of each pineapple round. Top with the roll tops.

PINEAPPLE BBQ BACON BURGERS RECIPE BY TASTY

Pineapple BBQ Bacon Burgers Recipe by Tasty image

Next time you want to impress your friends, try making these outrageous burgers. They're stuffed mounds of cheddar cheese, wrapped in bacon, and brushed with tangy BBQ sauce. To top it all off, they're served with grilled pineapple for an extra layer of sweetness. Yum!

Categories     Dinner

Time 50m

Yield 4 servings

Number Of Ingredients 10

2 lb ground beef, 85/15
kosher salt, to taste
freshly ground black pepper, to taste
1 cup barbecue sauce, plus more for basting
8 slices bacon
4 oz cheddar cheese, diced
4 pineapple rounds, cored
nonstick cooking spray, for greasing
4 hamburger rolls
4 pieces lettuce

Steps:

  • Preheat the grill to 375°F (190°C).
  • In a large bowl, season the ground beef with salt and pepper. Add the barbecue sauce and mix with your hands until well incorporated.
  • Divide the meat into 4 baseball-sized portions. Roll into balls and place on a baking sheet.
  • Using a clean, empty soda or beer can, press into the center of a beef ball to form a crater, shaping the beef up around the sides of the can. Smooth out any cracks in the meat. Wrap 2 strips of bacon around the outside, using toothpicks to secure. Remove the can and fill the crater with 1 ounce of diced cheddar. 5. Repeat with the remaining burgers.
  • Transfer the burger bowls to the grill over indirect heat and cook for 25-30 minutes for medium doneness, basting with more barbecue sauce every 10-15 minutes.
  • While the burgers are cooking, pat the pineapple rounds dry with a paper towel. Spray lightly with nonstick spray. Add to the grill over direct heat and cook for 1-2 minutes per side, until grill marks appear.
  • Toast the buns on the grill for 1-2 minutes, until golden brown.
  • To assemble, place a piece of lettuce on a bottom bun and top with a burger and a grilled pineapple round. Finish with the top bun.
  • Enjoy!

  • Combine ground beef and about 2-3 Tbsp. of barbecue sauce. If it gets a little hard to handle, toss in some bread crumbs until it sticks together better, but that can be avoided by adding the barbecue sauce a tablespoon at a time and then evaluating whether or not it really needs any more.
  • In the meantime, fry the bacon. When you flip the burgers, add the pineapple slices to the grill, making sure you get a chance to flip them once as well.

  • To make the candied jalapeños, Add the vinegar, sugar and garlic powder to a small saucepan over medium heat and whisk until the sugar dissolves. Allow the mixture to boil for 2 to 3 minutes, then add in the peppers and stir with a wooden spoon, making sure all of the slices are submerged. Cook for 3 to 4 minutes. Remove the peppers with a slotted spoon and place them in a jar or a bowl. Continue to cook the liquid for another 5 minutes until it has reduced by half, then pour it over the jalapeños. Allow the peppers to cool completely – you can do this a day ahead of time too.
  • To make the caramelized pineapple, heat a large skillet over medium heat and add butter. Add the pineapple rings and cook until they are golden and caramelized, about 5 minutes per side.
  • To make the burgers, mix the ground beef with the salt, pepper and minced garlic until combined. Form the burgers into 4 equal patties. You can grill the burgers but if I’m photographing, it’s easier for me to cook them in a skillet. I usually add a tablespoon of butter and cook on medium high heat until the burgers reach medium-well doneness. In the last minute, I add the cheese on top and cover the burgers, allowing it to melt.
  • To make the sweet chili mayo, whisk together the mayo and chili sauce in a bowl until combined.
