CREAMED CORN WITH PEPPERS AND BACON

Steps:
- Cook the bacon over medium high heat, stirring frequently to separate, about 4-5 minutes. Remove to a paper towel lined dish. Drain off most of the grease, leaving a light coating on the pan. Add the bell peppers to the hot skillet and saute over medium high heat for about a minute. Add the corn and cook for an additional 5 minutes or so, until the corn is hot.
- Push the vegetables to the sides of the pan and add the cream cheese to the bottom of the skillet. Allow it to warm and begin to melt for a minute or two and then break it up with a spatula. Continue stirring until the cream cheese has completely melted and coats the vegetables.
- Add the lime, hot sauce, salt, and pepper. Stir well and taste. Adjust seasonings as desired. Enjoy!

- In a large bowl, combine the corn, salsa and onions. Spoon into pepper halves. Place each stuffed pepper half on a piece of heavy-duty foil (about 18x12 in.). Fold foil around peppers and seal tightly., Grill, covered, over medium heat until peppers are crisp-tender, 25-30 minutes. Carefully open packets to allow steam to escape. Sprinkle with cheese and bacon. Return to the grill until cheese is melted, 3-5 minutes. Serve with additional salsa if desired.

- Preheat an outdoor grill for high heat.
- Sprinkle each ear of corn with Cajun seasoning, salt, and pepper, and wrap each ear with 2 slices of bacon, covering the ear as completely as possible. (A big ear might need 3 pieces of bacon.) Wrap the ears in aluminum foil, twisting the ends tightly to seal.
- Place the wrapped corn on the preheated grill, and grill on high heat until the corn is hot, about 10 minutes per side. Turn the heat to Low, and grill the corn until the bacon is cooked and the corn is tender, about 45 minutes.

- Fry bacon in a heavy skillet until crisp.
- Remove bacon and set aside, retaining 2 tablespoons bacon drippings in skillet.
- Cook onions in drippings for about 5 minutes.
- Add corn and bell peppers to onion.
- Cook for 3 to 4 minutes or until just soft.
- Add parsley, milk, salt and pepper to veggies, mix well.
- Sprinkle bacon pieces on top of vegetables.

- Core and vein the peppers. Cut the flesh into very thin strips about 1 1/2 inches in length. There should be about 2 cups.
- Set aside. Scrape the kernels from the corn. There should be about one cup.
- Set aside.
- Heat the oil and butter in a skillet and add the scallions, peppers and corn. Sprinkle with cumin, salt, pepper and garlic. Cook, shaking the skillet and stirring, about 1 1/2 minutes.
- Spoon the mixture into a warm serving dish.
