ONION BREAD RECIPE
Homemade bread is simple. This no yeast Onion Bread is perfect for soups and chilis.

Steps:
- Dice onion and set aside.
- Heat bacon flavoured olive oil in a small pan over medium-high heat.
- Cook the onions until nicely browned. Set aside to cool.
- Heat the oven to 375º F.
- Grease a loaf pan or, an 8 inch round or square baking pan and line with parchment. Set aside.
- In a large bowl combine the flour, baking powder and salt.
- Add in the COLD butter. Using a knife, or pastry mixer, cut in the butter until crumbly.
- Place the egg in a small bowl and beat with a fork or whisk.
- Add the milk to the egg and mix.
- Pour the milk and egg mixture into the cooled and cooked onions.
- Make a well in the flour mixture, and pour in the wet ingredients.
- Mix with a spatula to combine.
- Scrape dough into the prepared baking dish.
- Bake in oven until baked. Apaproximately 25 minutes.Bread will be golden. You can use a cake tester to ensure it is baked.
- Remove the bread from the pan. Place on cooling rack.
- Slice and ENJOY!

HOMEMADE NO-KNEAD OLIVE BREAD RECIPE
This Homemade Olive Bread is a rustic and crusty no-knead bread recipe that anyone can make. Packed with Kalamata olives, this olive loaf comes together so easily in a Dutch oven.

Steps:
- Mix the dry ingredients; bread flour, active dry yeast, and kosher salt, in a large mixing bowl.
- Pour in 1 ⅓ cups (316 ml.) lukewarm water.
- Give it a mix using a wooden spoon. At this point, the dough needs to be quite sticky. Stir in the chopped olives and ensure that they are equally distributed throughout the batter. (Alternatively, you can use your clean hands to mix and feel the stickiness.)
- Cover the bowl with a clean kitchen towel and let it sit in a warmer part of your house for 18-24 hours.In my tests, I found that the bread baked after 18 hours of rising time was perfect, but the 24-hour one was also good. One important thing to mention here is that at the end of the rising time you might see a thin (kind of hard - for the lack of a better word) layer at the top of the dough. Don't be alarmed by that. In the next step, we will fold that into the dough and since it is a sticky one, the additional rising time will help soften it.
- Lightly flour a piece of parchment paper, gently remove the dough from the bowl, and place it onto the parchment. While removing, you will realize that it is quite sticky. However, if you take your time and gently pull it by folding it onto itself, you will see that it will come out easily without any dough remaining in the bowl. - Form the dough into a ball tucking the sides of the dough under. Lightly dust it with a little bit of flour, cover it with a clean kitchen towel, and let it rise for 1-2 hours or until it doubles in size. Again, I recommend letting it sit in a warmer part of your house.
- Towards the end of the rising time, place your dutch oven in the oven and pre-heat it to 450 F degrees.
- When ready to bake, carefully take the now-very hot dutch oven out of the oven. Using the edges of the parchment paper place the dough into the dutch oven. Put the lid on and bake for 30 minutes. Then remove the lid and continue to bake another 20-30 minutes or until the top is nicely golden brown as you see in the photos.
- At the end of the baking, remove it from the dutch oven, place it onto a cooling rack and let it cool for 30-45 minutes before slicing.

- Preheat oven to 180C/350F.
- Grease a bread tin (21 x 11 cm / 8" x 4") or small cake tin with butter.
- Mix the herbs and olive oil in a small bowl.
- Sift the Dry Ingredients into a bowl.
- Combine the Wet Ingredients into a bowl and whisk to combine.
- Make a well in the centre of the Dry Ingredients. Pour the Wet Ingredients in and mix until just combined.
- Pour 1/3 of the batter into the bread tin. Dollop half the herbs across the top then use a knife to "swirl" it into the batter up and down, and also turning the batter over (refer photo below).
- Use half the cheese slices and push them randomly into the batter. Push some all the way in and leave some poking out of the batter.
- Pour the remaining batter over the top. Dollop and swirl the remaining herbs, then randomly wedge in the remaining cheese, pushing most of it below the surface of the batter. Even out the surface.
- Bake for 30 minutes, or until the top is golden. Remove from oven and cover with foil, then bake for a further 15 to 20 minutes (total baking time of 45 to 50 minutes). Check to make sure the centre is cooked by inserting a skewer - it should come out clean.
- Turn the bread out onto a cooking rack. Allow to cool for at least 10 minutes before cutting.

- 1. Heat oven to 400^. Spray an 8x5-inch loaf pan. Set aside.
- 2. In a large bowl whisk the first 3 ingredients together and make a well in the center.Set aside. --- In another small bowl lightly beat the eggs, then whisk in the milk,and olive oil . Pour egg mixture into the well of the dry ingredients, and stir gently to blend.
- 3. Fold in the cheese, ham,bacon and olives. Pour into prepared pan and bake in oven for 10 minutes. --- Reduce the oven temperature to 375^ and continue to bake the loaf for 35 minutes, until it's puffed and golden brown, or a toothpick inserted into the center comes out clean.
- 4. Transfer the pan to a wire rack and let it rest for 5 minutes, then remove from pan. Let cool at least 10 minutes, Serve with butter or olive oil and balsamic vinegar.

- Place water, yeast, and molasses in a mixing bowl; stir to mix. Let stand for a few minutes until mixture is creamy and foamy.
- Add olive oil and salt; mix. Add flour, about a cup at a time, until dough is too stiff to stir. Add olives and fresh herbs.
- Turn dough out onto a lightly floured board. Knead, adding flour as needed to keep from being sticky, until smooth and elastic. Place in well oiled bowl, and turn to coat the dough surface with oil. Allow to rise until doubled in bulk, about an hour or so.

- Combine the first six ingredients in the bowl of a stand mixer. Use a spatula to roughly combine the ingredients. Let rest for 15 minutes to activate the yeast.
- Fold in the olives. Attach the dough hook and knead on medium for 5 minutes. Sprinkle in a bit more flour as needed if the dough won't release from the sides of the bowl.
- Transfer the kneaded dough to an oiled bowl, cover, and allow to rise for 60 minutes in a warm place.

- Bread Machine settings - 2 pound loaf, light color and "basic" bread setting.
- Unplug bread machine and remove bread pan.
- Add all ingredients (except the bacon bits) starting with the water into the bread machine "bucket" (loaf pan). Place the bread machine yeast in last and the yeast should not touch the water (until the bread machine is turned on and the ingredients start to be mixed together).
- Place the bread pan back into the bread machine and plug in bread machine.
- Enter the correct settings (2lb, light color and basic) and press "start" button.
- After the bread machine has finished its FIRST kneading cycle, add the bacon bits. You can add them with the other ingredients but the bacon bits will be more broken up and very small if they go through two kneading cycles. Wear oven mitts.
- After the bread machine has finished its FINAL kneading cycle and before the baking cycle starts, gently sprinkle on some bacon bits on top of the dough. Wear oven mitts.
- After the bread machine has finished baking the bread, remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container as it will be very hot!
- In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.

- Transfer cooked flatbread to a plate, cover with a clean dish towel to keep warm, and then continue with the remaining flatbreads. If the skillet looks dry, add a little more oil before continuing.
