BACON BBQ NACHOS

One 12-ounce package smoked bacon (12 strips)
One 14-ounce bag white corn tortilla chips
3 tablespoons barbeque seasoning
2 tablespoons sour cream
2 tablespoons barbeque sauce
1 teaspoon hot sauce
2 tablespoons all-purpose flour
One 12-ounce can evaporated milk (1 1/2 cups)
1/2 cup low-sodium chicken stock
1/2 teaspoon kosher salt
1 cup shredded mild Cheddar
One 15-ounce can baked beans, warmed
1/4 cup pickled jalapenos
2 tablespoons pimientos
2 scallions, chopped

Steps:

  • Place the bacon in a large nonstick skillet over medium-high heat until crispy and cooked through on both sides, about 16 minutes. Remove the bacon to a paper-towel lined plate, reserving the fat in the skillet. Once the bacon has cooled slightly, chop into bite-sized pieces. Set aside.
  • Place the chips on a large serving platter and sprinkle the barbeque seasoning over the top.
  • Combine the sour cream, barbeque sauce and hot sauce in a small bowl to make a barbeque crema. Set aside.
  • Place the skillet with the reserved bacon fat over medium-low heat. Add the flour and whisk until a smooth paste forms. Cook this mixture until thin and slightly tan, 2 to 3 minutes. While continuously whisking, pour the evaporated milk and stock into the flour mixture. Reduce the heat to low and cook, whisking occasionally, until the sauce slightly thickens and lightly coats the back of a spoon, about 8 minutes. Whisk in the salt and cheese until melted. Remove from heat, as the sauce will continue to thicken.
  • Spoon the warm beans over the chips. Sprinkle half of the chopped bacon over the beans. Pour the warm cheese sauce generously over the platter. Sprinkle the jalapenos, pimientos, remaining bacon and scallions on top. Drizzle with the barbeque crema and serve immediately.

100g mature cheddar , grated
50g red leicester , grated
1 tbsp cornflour
300ml whipping cream
1-2 tbsp maple syrup
a few drops smoky Tabasco sauce
6rashers smoked streaky bacon
200g plain tortilla chips
3 spring onions , finely sliced
1 jalapeno chilli , sliced (optional)
handful coriander leaves
soured cream , to serve

Steps:

  • Stir the cheeses, cornflour, cream and 1 tbsp maple syrup in a saucepan over a low heat. Continue stirring - it may split or look lumpy but will eventually come together. Season with the Tabasco and a little more maple syrup to taste. Keep warm to prevent it setting quickly.
  • Grill the bacon until very crisp, and warm the tortilla chips on the shelf below in the oven. Heap the chips onto a platter and pour over the cheese sauce. Break the bacon into small pieces and sprinkle over, followed by the spring onions, jalapeño (if using) and coriander.

1 lb Russet potatoes
1-2 Tablespoon olive oil
1/4 teaspoons salt
1/8 teaspoons garlic powder
1/8 teaspoons pepper
1 lb ground beef
1/2 teaspoons garlic powder
1/2 teaspoons onion powder
1/2 lb sugar free bacon
2 cups romaine lettuce (chopped)
1/4 red onion
1 cup cherry tomatoes
1 cup dill pickles
1 Tablespoon sesame seeds
1/2 red bell pepper
1/4 cup nutritional yeast
3 Tablespoon olive oil
1/4 - 1/2 teaspoons salt
1/4 teaspoons onion powder
1/4 teaspoons garlic powder
1.5 teaspoons lemon juice

Steps:

  • Meanwhile, add all the ingredients to a blender or food processor. Pulse to break up the bell peppers, and then blend on high until smooth. If needed, thin with a teaspoon of oil to get the desired consistency. Season to taste.
  • Cook the Beef: In a large skillet, cook the ground beef over medium heat, breaking apart as it cooks. Season with the garlic powder and onion powder. Optionally, you can drain the excess grease. Once cooked through, set the beef aside until you're ready to assemble the nachos.
  • Cook the Bacon: Cook the bacon in a large skillet over medium heat until crispy. Set the bacon on a paper towel lined plate. Once cool, cut the bacon into bite-sized pieces.
  • Chop the lettuce and slice the tomatoes and onions.
  • Preheat your oven to 375. Slice your potatoes thinly into rounds with a sharp knife or mandolin. Pat the slices with a paper towel to dry them, then toss with the olive oil and seasonings to coat.
  • Lay the potatoes in a single layer on a parchment lined baking sheet. Bake for about 15-17 minutes, turning over halfway through. Watch closely near the end of cook time and remove any that are getting too dark in color before they burn.
  • Lay the crispy potatoes on a plate or platter. Top with ground beef, lettuce, onions, tomatoes, pickles, bacon, a big drizzle of the "cheese" sauce, and a sprinkle of sesame seeds. Serve immediately.

1 1/2 cups chopped tomatoes
1/2 cup fresh cilantro ((chopped - optional))

Steps:

  • Sauté the peppers, onions and garlic in oil.
  • Cook the bacon separately and chop
  • Preheat oven to 350 F.
  • Layer the chips on a baking pan with half of the cheese mixed into the chips.
  • Over the top, distribute the sautéd veggies.

It's hot and spicy but you can decrease the amount of jalapeno peppers. If you do not like crisp vegetables, microwave them to the desired consistency you like. We like crisp.

1/2-3/4 cup red onion, chopped (divided)
1 medium tomatoes, seeded and chopped
1 (2 1/4 ounce) can sliced black olives
6 -7 jalapeno peppers, seeded and chopped (divided)
2 1/2 cups Mexican blend cheese (Shredded cheddar and Monterey Jack Cheese, divided)
9 ounces tortilla chips (I used the multigrain tostitos, divided)

Steps:

  • Preheat oven to 425 degrees.
  • Line a baking sheet with aluminimum foil.
  • Spread 1/2 bag of Tostitos over the foil.
  • Sprinkle with half the bacon, onion, peppers and 1 cup of cheese.

2 cup corn meal flour
1/2 cup whole wheat flour
Oil to deep fry
For Cheese Sauce:
2 tbsp butter
2 tbsp flour
1 cup whole milk
1/4 tsp salt
Pepper to taste (optional)
1/8 tsp cayenne pepper (red chili pepper)
8oz block (1 cup) sharp cheddar cheese grated
Additional Toppings:
Green bell pepper thinly sliced
Tomatoes finely chopped

Steps:

  • For Nachos:
  • Mix the two flours and knead to a dough like for rotis.
  • Roll out rotis and cook on both sides over high heat over a griddle pan and keep aside.
  • Cut into desired sized pieces and deep fry till crisp and brown. Pop onto a kitchen paper towel. Keep aside.
  • For Cheese Sauce:
  • Melt the butter in a pan over medium flame. Once the butter is melted add the flour. Whisk until it combines into a smooth blond paste and starts to bubble around the edges.
  • Add the milk to the pan and continue whisking. Once the milk is incorporated, raise the heat to high and bring to a boil. Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.
  • Add the cayenne pepper, salt and pepper. Whisk to combine.
  • Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture smooth in consistency, the nacho cheese sauce is ready to serve. Top the sauce with capsicum and tomatoes.
  • Enjoy immediately, as the sauce will get firm as it sits.

1 small diced white onion
1 bunch chopped green onion

Steps:

  • 1. Melt butter in a Dutch oven over medium heat. Evenly sprinkle 3 tablespoons of flour over the melted butter. Whisk constantly until the mixture is thick and all the flour is incorporated, 3-4 minutes.
  • 2. You will want to do these next steps very, very gradually, or your sauce will be grainy. Slowly pour cold milk into the butter mixture, whisking constantly until combined. Simmer on medium, stirring/whisking constantly, until slightly thickened, about 5-7 minutes. Add in smoked paprika, ground chipotle, ancho chile powder, cayenne pepper, and a pinch of salt, stirring well.
  • 3. Reduce heat to low and add cheddar cheese, Monterey pepper jack cheese, and Muenster cheese, adding a handful at a time as you whisk; stir until thoroughly melted. Add in diced green chiles. Season with more salt to taste as needed. Serve immediately, or keep on a slow cooker set on low.
