BACON BBQ NACHOS

Steps:
- Place the bacon in a large nonstick skillet over medium-high heat until crispy and cooked through on both sides, about 16 minutes. Remove the bacon to a paper-towel lined plate, reserving the fat in the skillet. Once the bacon has cooled slightly, chop into bite-sized pieces. Set aside.
- Place the chips on a large serving platter and sprinkle the barbeque seasoning over the top.
- Combine the sour cream, barbeque sauce and hot sauce in a small bowl to make a barbeque crema. Set aside.
- Place the skillet with the reserved bacon fat over medium-low heat. Add the flour and whisk until a smooth paste forms. Cook this mixture until thin and slightly tan, 2 to 3 minutes. While continuously whisking, pour the evaporated milk and stock into the flour mixture. Reduce the heat to low and cook, whisking occasionally, until the sauce slightly thickens and lightly coats the back of a spoon, about 8 minutes. Whisk in the salt and cheese until melted. Remove from heat, as the sauce will continue to thicken.
- Spoon the warm beans over the chips. Sprinkle half of the chopped bacon over the beans. Pour the warm cheese sauce generously over the platter. Sprinkle the jalapenos, pimientos, remaining bacon and scallions on top. Drizzle with the barbeque crema and serve immediately.

- Stir the cheeses, cornflour, cream and 1 tbsp maple syrup in a saucepan over a low heat. Continue stirring - it may split or look lumpy but will eventually come together. Season with the Tabasco and a little more maple syrup to taste. Keep warm to prevent it setting quickly.
- Grill the bacon until very crisp, and warm the tortilla chips on the shelf below in the oven. Heap the chips onto a platter and pour over the cheese sauce. Break the bacon into small pieces and sprinkle over, followed by the spring onions, jalapeño (if using) and coriander.

BACON "CHEESE" BURGER NACHOS (PALEO, WHOLE30)

- Meanwhile, add all the ingredients to a blender or food processor. Pulse to break up the bell peppers, and then blend on high until smooth. If needed, thin with a teaspoon of oil to get the desired consistency. Season to taste.
- Cook the Beef: In a large skillet, cook the ground beef over medium heat, breaking apart as it cooks. Season with the garlic powder and onion powder. Optionally, you can drain the excess grease. Once cooked through, set the beef aside until you're ready to assemble the nachos.

It's hot and spicy but you can decrease the amount of jalapeno peppers. If you do not like crisp vegetables, microwave them to the desired consistency you like. We like crisp.

- Line a baking sheet with aluminimum foil.

- For Nachos:
- Mix the two flours and knead to a dough like for rotis.
- Roll out rotis and cook on both sides over high heat over a griddle pan and keep aside.
- Cut into desired sized pieces and deep fry till crisp and brown. Pop onto a kitchen paper towel. Keep aside.
- For Cheese Sauce:
- Melt the butter in a pan over medium flame. Once the butter is melted add the flour. Whisk until it combines into a smooth blond paste and starts to bubble around the edges.
- Add the milk to the pan and continue whisking. Once the milk is incorporated, raise the heat to high and bring to a boil. Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.
- Add the cayenne pepper, salt and pepper. Whisk to combine.
- Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture smooth in consistency, the nacho cheese sauce is ready to serve. Top the sauce with capsicum and tomatoes.
- Enjoy immediately, as the sauce will get firm as it sits.

- 1. Melt butter in a Dutch oven over medium heat. Evenly sprinkle 3 tablespoons of flour over the melted butter. Whisk constantly until the mixture is thick and all the flour is incorporated, 3-4 minutes.

- Make pork or carne asada recipe as directed. Shred or dice and set aside.
- Make cheese sauce and set aside.
- For pico de gallo: place all ingredients into a large mixing bowl and toss together. Season with salt and pepper and set aside.
- To assemble: Place all the sauces and topping in individual dishes/bowls, creating a buffet-style set up. Have a stack of small plates, next to the big bowl of tortilla chips and cheese sauce followed by the remaining topping ingredients. Serve (for people to build their own nacho creation!).
