4 bacon strips, diced
2 cups honey-Dijon mustard
1/2 cup sugar
1/3 cup orange juice
1 tablespoon cider or red wine vinegar
1/4 teaspoon ground mustard
1/4 cup honey
Torn salad greens or fresh spinach

Steps:

  • In a skillet, cook bacon until crisp. Drain, reserving 3 tablespoons drippings; set bacon aside. To the drippings, add Dijon mustard, sugar, orange juice, vinegar and ground mustard; bring to a boil. Stir in honey and bacon. Serve warm over salad greens or spinach. Refrigerate leftovers; reheat before serving.

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.

4 slices of thick bacon (diced)
3 tbsp bacon grease reserved from cooking
2-3 small cloves of garlic (to taste, minced)
1/4 cup apple cider vinegar
2 ½ tbsp stone-ground mustard
1 tbsp honey (to taste (more if desired))
Sea salt and freshly cracked pepper (to taste)

Steps:

  • Cook the diced bacon in a skillet over medium heat until cooked through and crisp; remove from the pan with a slotted spoon and place on a paper towel to drain the grease.
  • Set aside and use for a salad topping, if desired.
  • Add the garlic to three tablespoons of reserved warm bacon grease and cook, stirring constantly, for 30 seconds.
  • Remove from the heat. Add the apple cider vinegar, stone ground mustard, honey then season with sea salt and freshly cracked pepper, to taste.
  • Whisk until well combined. Set aside to allow flavors to mingle.
  • Best when served warm or at room temperature.
  • Drizzle to taste over your salad; toss to coat evenly.
  • Store in an airtight container in the refrigerator.

2 pounds small red potatoes, unpeeled
8 slices uncooked bacon, chopped
1 1/2 cups diced yellow onions
1/2 cup apple cider vinegar
1 1/2 Tablespoons whole grain mustard
1/4 cup sugar
2 Tablespoons chopped fresh chives

Steps:

  • Boil the potatoes in a large pot of water until they are fork-tender, about 15 minutes. Drain the potatoes then allow them to cool completely. Cut the potatoes into quarters then add them to a large bowl.
  • Add the bacon to a large sauté pan set over medium heat. Cook the bacon until it is crispy and all of the fat has rendered off. Using a slotted spoon, transfer the bacon to a plate, leaving 3 tablespoons of the drippings in the pan.
  • Add the diced onions to the pan and cook, stirring, until the onions are translucent. Stir in the apple cider vinegar, whole grain mustard, sugar, 1 teaspoon salt, 1/2 teaspoon pepper and 1/2 cup water. Simmer the mixture for 3 minutes until it has reduced to 1 cup.
  • Pour the dressing over the potatoes, add the cooked bacon and toss to combine. Stir in the chives and serve warm.

This is not your typical potato salad. This makes a lot, but it can be easily reduced. It is also just as good, if not better the next day. This will make a wet salad. If you prefer a drier potato salad increase the amount of potatoes.

1 1/2 cups mayonnaise
1/2 cup coarse grain mustard or 1/2 cup mustard, your favorite
1/4 cup cider vinegar
3 garlic cloves, minced
salt and pepper, to taste
1 lb bacon
5 lbs white potatoes, peeled if desired, cut into 3/4 inch pieces
4 stalks celery, sliced thin
6 green onions, sliced thin
1 1/2 cups red onions, chopped
9 hard-boiled eggs, peeled and chopped

Steps:

  • Whisk mayonnaise, mustard, vinegar and garlic in medium bowl to blend.
  • Season to taste with salt and pepper.
  • Cover, chill.
  • Cook bacon in large skillet until crisp.
  • Drain on paper towels.
  • Crumble.
  • Boil potatoes in large pot until just tender.
  • Drain and transfer to a large bowl.
  • Cool for 15 minutes or so.
  • Mix bacon, celery, green and red onions, eggs and dressing into potatoes.
  • Season with additional salt and pepper if needed.
  • Chill.
  • Note: I usually hold back about ¾ cup of the dressing to toss with salad just before serving.
  • While chilling the potatoes soak up a good bit of the dressing and if not careful it can become dry. If this happens just moisten with a small amount of milk and stir to encorporate.

  • First, prepare your bacon. I usually bake it in a single layer on a rimmed baking sheet at 350 degrees for about 15-20 minutes, or until crispy and the fat is rendered. You can also sprinkle a bit of brown sugar over it to caramelize it.
  • While it’s baking, caramelize your onions. There are plenty of tutorials on how to do this properly, but more or less, simply spread onions in a single layer in a large saucepan and leave to panfry gently at medium-low to low heat, stirring very infrequently, for at least 20-30 minutes (and up to 40-50 for the best flavor), or until very soft and almost jam-like, and onions have darkened to a rich brown. You can add a bit of vinegar and sugar at the end if you like, but it’s entirely optional.
  • Drain the bacon, reserving three tablespoons of the bacon fat. Add the bacon fat to a small saucepan or pot while still warm. Do not turn on the heat yet. Add in the vinegar (careful, it may spatter depending on how hot the bacon fat still is), sugar, and honey mustard. Turn the heat to low and stir until all ingredients have dissolved, then remove and add salt and pepper to taste.
  • Place the spinach in a large bowl. Crumble the bacon, then add to the salad, along with goat cheese crumbles, almonds, caramelized onions, and anything else you might like — I added some diced hard-boiled eggs and tomatoes. Toss lightly with the dressing and serve.
