- Spray pam on small baking sheet. Place zucchini face down and bake for approximately 15-20 minutes @ 400 degrees. Meanwhile saute onion and mushrooms with olive oil. Add the parsley, spinach, bread crumbs, bacon bits, tomato and seasonings. Saute, when cooked add a little grated cheese. Cut or scrape out seeded area of zucchini, fill with filling. Bake approximately 15 minutes.
ZUCCHINI, BACON AND MUSHROOM SAUTE
This easy zucchini side dish is delicious. Bacon adds a great smoky flavor. Worcestershire sauce gives a nice tanginess. It will be fantastic alongside grilled steaks, chicken or burgers.

Steps:
- 1. Heat 1 tablespoon olive oil in heavy skillet. Add the bacon and cook until semi-crispy.
- 2. Add onion and garlic to skillet. Cook until onion is translucent in color.
- 3. Add salt, pepper, and zucchini. Cook until zucchini is fork-tender.
- 4. Add the Worcestershire and mushrooms stirring frequently for 2-3 minutes. Serve immediately.

My Dad (who's Italian) used to rustle this anytime dish up for himself. When I was in my 20s in 1996, I flipped when I saw it being served in a trendy Greek restaurant as an appetizer. It's a perfect, tasty meal.

- Stir the eggs and Parmesan cheese together in a bowl; set aside.
- Heat the olive oil in a large skillet over medium-high heat; cook the zucchini in the hot oil until softened and lightly browned, about 7 minutes. Season the zucchini with garlic powder, salt, and pepper. Reduce heat to medium; pour the egg mixture into the skillet. Cook, stirring gently, for about 3 minutes. Remove the skillet from the heat and cover. Keep covered off the heat until the eggs set, about 2 minutes more.

This recipe came about by throwing together tid bits of ingredients left in the fridge, but it has now become a breakfast favourite in our house. The amounts listed are just approximate. Other vegetables can be added/substituted - left-over boiled potatoes, shredded carrots - anything you have on hand, really.

Steps:
- Place bacon slices on frying pan over low heat. You can bunch them up into little rosettes, that way the bacon will stay a bit juicy.
- When bacon has just begun to brown, add the onions, mushrooms and zucchini to the pan. Increase heat to medium and fry, stirring occaisonally, till veggies have browned.
- Meanwhile, beat the eggs with the sour cream. Add salt and pepper.
- Pour egg mixture over the veggies in the pan. Let the mixture set a little, then scramble.
- Sprinkle cheese on top of the scrambled eggs and let it melt, then stir everything around once more to combine.
- Serve with toast.

- Heat a frying pan over medium heat. Spray with cooking spray or rub a little bit of butter over the bottom of the pan, then, when the pan is hot, add the eggs. Scramble the eggs very briefly until they are mostly done, but still very very wet. Immediately remove the eggs from the pan and from heat.
- Now, in a saute pan or wok, add the oil and heat over medium heat until hot. Put the garlic and onion in the pan and saute until the onion is soft, then add the mushrooms, zucchini and carrots and cook until they are tender. Stir in the rice and cook and stir for a few minutes to “fry” the rice, adding a splash of soy sauce after a couple minutes and cooking a bit longer.
- Remove from heat and stir in the scrambled eggs and bacon, chopping and stirring to mix them in well, and adding soy sauce as you like, to taste. Serve hot, with snipped green onions for garnish.
