1 (16 ounce) package rotini pasta
1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
2 cups tomato juice
¼ cup butter
1 pound bacon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of water to a boil over high heat. Stir in the rotini, and return to a boil. Cook until the pasta is slightly under-cooked, about 8 minutes. Drain well.
  • Combine the processed cheese, tomato juice, and butter in a large saucepan over medium-high heat. Stir until melted and smooth. Mix the pasta into the cheese sauce; stir well. Transfer macaroni and cheese to the prepared baking dish. Top with the raw bacon slices.
  • Bake in preheated oven until the bacon is cooked and crisped, about 30 minutes.

Out of all the baked pasta dishes I make my family likes this one the best. It's also very filling, and fairly inexpensive to make.

16 ounces one box elbow macaroni
1/2 cup butter
1/2 cup sifted flour
4 cups milk
2 -3 teaspoons hot sauce
16 ounces shredded sharp cheddar cheese
16 ounces crumbled bacon
top with shredded parmesan cheese and breadcrumbs
top evenly with shredded sharp cheddar cheese (My personal favourite)

Steps:

  • Cook macaroni according to box directions and set aside.
  • In a medium saucepan melt butter over low heat. Add flour and stir constantly until smooth.
  • Turn heat to medium and add milk stirring constantly until thick. (About 10 minutes).
  • Add hot sauce. Stir until mixed in evenly.
  • Add pasta, bacon and cheese. Mix until cheese melts, bacon is mixed in, and pasta is evenly coated.
  • Pour macaroni and cheese into a 9x13 baking dish and top according to taste.
  • Bake in preheated oven at 350 degrees for about 25-30 minutes. (If using parmesan cheese and breadcrumbs take it out when the top looks lightly browned. If using cheddar cheese topping take out when top becomes darkened, but not burnt.).

1 pound bacon strips, chopped
1 jalapeno pepper, seeded and minced

1 cup fresh breadcrumbs
1/4 cup grated Parmesan

1 teaspoon Dijon mustard

Steps:

  • Cook bacon until crisp. Remove from skillet and crumble (discard bacon fat).
  • Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

8 oz elbow macaroni
4 slices thick cut bacon
6 tbsp butter (separated)
4 tbsp all purpose flour
2 cups milk
1 tbsp hot sauce
1 tbsp dijon mustard
1/2 tsp salt
1/2 tsp black pepper
8 oz cream cheese
2 cups mozzarella cheese ((or Monterey Jack))
2 cups cheddar cheese
1 cup Panko bread crumbs
1/4 cup parsley (chopped (loosely packed))

Steps:

  • Preheat oven to 400°F. In a small bowl mix together 2 tablespoons of melted butter, Panko breadcrumbs and chopped parsley. Set aside.
  • In a large stock pot boil pasta in heavily salted water per package directions. Drain and toss with 1 tablespoon of olive oil to prevent sticking in a 9x9" square or a 13x9" pan coated with cooking spray. Set aside.
  • In a large skillet, render bacon until crispy and browned. Remove bacon and set aside to crumble. Keep bacon fat in pan. Add crumbled bacon to pasta, reserving some to top pasta at serving.
  • In same skillet with bacon fat add 4 tablespoons of butter and melt over medium heat. Whisk in the flour and cook for a minute. Add the milk and whisk to mix thoroughly. Whisk in the mustard, hot sauce, salt and pepper. Lower the heat to simmer and cook for 4 minutes, the sauce will thicken.
  • Add the cream cheese and stir to melt in the sauce. Add the mozzarella and cheddar cheeses and stir to melt and incorporate. Sauce should be smooth.
  • Pour cheese sauce over pasta and bacon and stir to mix in completely. Top with breadcrumb mixture and bake uncovered for 20 minutes until top is golden brown and crunchy. This should be enough for 4 large servings or 6 as a side.

4 cups milk
16 ounces uncooked short pasta (such as cavatappi or elbow macaroni)

1/2 teaspoon smoked paprika
1/4 teaspoon pepper
4 cups shredded cheddar cheese
1 tablespoon chopped parsley

Steps:

  • Place the bacon in a large pan over medium high heat. Cook until crispy, about 4-5 minutes. Remove the bacon from the pan and drain on paper towels.
  • Leave 2 tablespoons of bacon fat in the pan; discard the rest of the fat.
  • Add the flour, then whisk until combined, about 30 seconds.
  • Pour in the water and whisk until smooth and just thickened.
  • Add the milk and whisk until combined.

1/3 cup unsalted butter, plus more for greasing dish
12 ounces extra-sharp Cheddar cheese, shredded (about 3 cups)
4 ounces Monterey Jack, provolone, or mozzarella cheese, shredded (about 1 cup)
2 large eggs, well beaten

Steps:

  • Preheat oven to 350°F. Bring 3 quarts water to a boil over high in a large stock-pot. Stir in pasta and 1 tablespoon of the salt, and return to a boil.   • Pour 1 cup broth from the liquid measure into a large pot. Scoop roasted butternut squash flesh into the pot and blend with an immersion blender, adding more broth as needed to achieve a light creamy texture.
  • Place the pot over medium heat and mix in Cheddar cheese. Cook until cheese is melted and sauce is thick. Add drained pasta and mix to combine. Adjust seasoning to your liking.
  • Serve topped with crumbled bacon.
