- To make this Cheesy Bacon Jalapeno Dip, preheat your oven to 350 degrees and spray a baking pan with non-stick spray.
- Reserve 3/4 cup of shredded cheese and a small bit of bacon and diced jalapeno and set aside. Add all of your remaining ingredients to a large bowl and using a hand mixer, mix to combine. Spoon your dip into your baking pan, sprinkle with the reserved shredded cheese and toppings and cook for 25 minutes.
- Remove from oven and serve hot with corn chips, tortilla chips or pita chips.

- Preheat the oven to 400 degrees F.
- Place the cream cheese and mayonnaise or sour cream in a large bowl.
- Beat with a mixer until smooth.
- Add in the cheddar cheese, bacon and jalapenos.
- Beat with a mixer until thoroughly combined, about 1 minute.
- Coat a small baking dish with cooking spray. The baking dish should have a capacity of at least 3 cups.
- Spoon the cream cheese mixture into the baking dish, smooth the top with a spoon.
- In a small bowl mix together the panko breadcrumbs, parmesan cheese and butter until thoroughly combined.
- Sprinkle the panko mixture on top of the dip.
- Bake for 10-15 minutes or until top is golden brown.

- Cook the bacon, then chop or crumble. Set aside 2-3 tablespoons for topping. Preheat oven to 350 degrees F.
- In a large bowl, blend the cream cheese with the sour cream and mayonnaise until smooth using a hand mixer. Stir in the chopped jalapeno, crumbled bacon, garlic powder, smoked paprika, pepper, and salt. Add the cheese and stir to combine, then pour into a 10-inch skillet or square baking dish, spreading into an even layer.
- In a small bowl, combine the panko breadcrumbs with the melted butter and Parmesan cheese, tossing with a fork to coat the breadcrumbs. Sprinkle over the top of the dip.

- Preheat oven to 350 degrees F. Spray baking dish with non-stick spray and set aside. I use my quiche pan, but any shallow baking dish will work.
- Add softened cream cheese and mayo to a mixing bowl and beat with a hand mixer until smooth and combined. Add 1/2 the bacon, jalapenos, green chiles, cumin, and mexican and mozzarella cheeses.
- Transfer to prepared dish, smooth out with a rubber spatula.
- Combine melted butter, panko, and Parmesan cheese. Sprinkle over the top of the dip. Sprinkle remaining bacon pieces over the top.
- Bake for 25 minutes, until panko is lightly golden brown and dip is bubbling.
- If desired, top cooked dip with slices of fresh jalapeno. Serve hot.

BACON JALAPENO DIP
My friend Cheryl brought this easy, fun dip to a party with slices of baguette bread. It was so delicious and smelled wonderful; everyone was asking for the recipe. There are other recipes similar to this, sometimes called "Jalapeno Popper Dip", but I've never found one that turns out quite as well as this. Most don't include the garlic, which really makes the dish. Enjoy!

- Reserve 3 Tbs of bacon and sprinkle on top of dip before baking.
- Combine cream cheese, mayo, parmesan, and garlic and stir until smooth.
