1 cup sour cream
1 (4 ounce) can diced jalapeno peppers with juice
1 (4 ounce) can chopped green chiles
1 jalapeno pepper, diced
¼ cup chopped fresh cilantro
1 (1 ounce) package ranch dressing mix
1 (8 ounce) package shredded Cheddar cheese, divided
½ cup freshly grated Parmesan cheese, divided
1 jalapeno pepper, sliced into rings

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cream cheese, sour cream, canned jalapeno peppers with juice, green chiles, diced jalapeno pepper, cilantro, and ranch dressing mix together in a bowl until smooth. Add about half the Cheddar cheese and half the Parmesan cheese; stir. Spread the cheese mixture into a baking dish. Arrange jalapeno slices atop the cheese mixture; top with remaining Cheddar and Parmesan cheeses. Cover baking dish with aluminum foil.
  • Bake in preheated oven until top is warm and bubbling, about 25 minutes.

6 slices OSCAR MAYER Bacon, chopped
1-1/4 lb. Yukon gold potatoes (about 5), peeled, cubed and cooked (about 2 cups)
1 cup frozen corn
1 cup sliced onions
2 jalapeño peppers, seeded, sliced
1 clove garlic, minced
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
8 cups tortilla chips (8 oz.)

Steps:

  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 tsp. drippings from skillet. Add potatoes, corn, onions, peppers and garlic to reserved drippings; cook 8 to 10 min. or until heated through, stirring occasionally.
  • Reserve 2 Tbsp. bacon for later use. Stir remaining bacon into potato mixture; spoon into 9-inch pie plate. Top with cheese.
  • Bake 12 to 15 min. or until heated through. Top with reserved bacon. Serve with chips.

This warm, spicy, cheesy jalapeno popper dip is loaded with all the familiar flavors from your favorite appetizer, in an easy to make dip form!

16 oz cream cheese (softened)
1 cup mayo
4 oz can diced jalapenos (drained)
4 oz can diced green chiles (drained)
1/2 cup shredded Mexican cheese
1 cup shredded Mozzarella cheese
1/2 tsp cumin
6 slices cooked and crumbled bacon (divided)
1/3 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
2 Tbsp unsalted butter (melted)

Steps:

  • Preheat oven to 350 degrees F. Spray baking dish with non-stick spray and set aside. I use my quiche pan, but any shallow baking dish will work.
  • Add softened cream cheese and mayo to a mixing bowl and beat with a hand mixer until smooth and combined. Add 1/2 the bacon, jalapenos, green chiles, cumin, and mexican and mozzarella cheeses.
  • Transfer to prepared dish, smooth out with a rubber spatula.
  • Combine melted butter, panko, and Parmesan cheese. Sprinkle over the top of the dip. Sprinkle remaining bacon pieces over the top.
  • Bake for 25 minutes, until panko is lightly golden brown and dip is bubbling.
  • If desired, top cooked dip with slices of fresh jalapeno. Serve hot.

16 ounces cream cheese (softened)
1/2 cup sour cream
1/2 cup mayonnaise
4-6 large jalapenos (cut, with seeds and stems removed, and finely chopped (about 1 cup))
1 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon pepper
1/4 teaspoon salt
1 1/2 cups mozzarella cheese (shredded)
3/4 cup sharp cheddar cheese (shredded)
3/4 cup monterey jack cheese (shredded)
1/4 cup grated parmesan cheese
3/4 cup plain panko breadcrumbs

Steps:

  • Cook the bacon, then chop or crumble. Set aside 2-3 tablespoons for topping. Preheat oven to 350 degrees F.
  • In a large bowl, blend the cream cheese with the sour cream and mayonnaise until smooth using a hand mixer. Stir in the chopped jalapeno, crumbled bacon, garlic powder, smoked paprika, pepper, and salt. Add the cheese and stir to combine, then pour into a 10-inch skillet or square baking dish, spreading into an even layer.
  • In a small bowl, combine the panko breadcrumbs with the melted butter and Parmesan cheese, tossing with a fork to coat the breadcrumbs. Sprinkle over the top of the dip.

My friend Cheryl brought this easy, fun dip to a party with slices of baguette bread. It was so delicious and smelled wonderful; everyone was asking for the recipe. There are other recipes similar to this, sometimes called "Jalapeno Popper Dip", but I've never found one that turns out quite as well as this. Most don't include the garlic, which really makes the dish. Enjoy!

16 ounces cream cheese, softened (two boxes, Light works great but don't use Fat Free)
1 cup mayonnaise (Light also works here, but DO NOT use Miracle Whip!)
1 cup parmesan cheese, shredded
2 garlic cloves, finely minced
4 ounces fire-roasted green chilies (1 can)
2 -4 ounces pickled jalapeno peppers, drained (2oz is mild, 4oz is very spicy. Canned is best, but you can use fresh jalapenos, seeded and finely d)
8 ounces bacon, cooked and crumbled, reserve 3 Tablespoons for topping (don't use fake bacon bits, but real bacon pieces are okay)
3 green onions, finely sliced (optional)
2 sourdough baguettes, sliced (also great with crackers or veggies)

Steps:

  • Preheat oven to 350.
  • Reserve 3 Tbs of bacon and sprinkle on top of dip before baking.
  • Combine cream cheese, mayo, parmesan, and garlic and stir until smooth.
  • Stir in jalapenos, green chilies and bacon.
  • Spread dip into a 9″ pie plate or a small baking dish.
  • Sprinkle with remaining bacon and sliced green onions (optional).
  • Bake for 20-25 minutes or until dip is bubbly and golden brown at the edges.

  • Preheat oven to 350 degrees and grease a 9-inch pie plate or baking dish.

  • Pour all but 1 tablespoon of grease out of the skillet. Add onion and jalapeno and cook over medium-high heat for 3 minutes.
  • Add garlic and cook 1 more minute. Let cool.
  • In a large bowl, stir together cream cheese, mayonnaise, and sour cream until mixed well.
  • Stir in the spinach, green chilies, Parmesan cheese, mozzarella cheese, and pepper.

Drain off all but 1 teaspoon of the grease remaining in the pan. We want to use the bacon grease to grease the pan and add more bacon flavor to the dip. Crumble the bacon.
  • Combine the corn, jalapeno, cream cheese, mozzarella, salt, cayenne, half of the bacon, and half of the basil. Scoop into the skillet and bake for 20 minutes.
  • Sprinkle with the remaining bacon and basil, and parmesan cheese to taste. Serve immediately.
