½ cup shredded Cheddar cheese
½ cup bacon bits
2 tablespoons prepared horseradish
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
4 hamburger buns

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground beef, Cheddar cheese, bacon bits, horseradish, garlic powder, salt, and pepper in a large bowl. Divide beef mixture into 4 equal parts and shape into patties.
  • Grill on the preheated grill until patties are no longer pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C) for well-done.
  • Serve patties with hamburger buns.

4 slices center-cut bacon
1½ pounds Brussels sprouts, trimmed and halved
2 tablespoons unsalted butter
1 tablespoon apple cider vinegar
1 tablespoon stone-ground mustard
2 teaspoons kosher salt, divided
½ teaspoon ground black pepper, divided
¾ cup sour cream
4 teaspoons prepared horseradish
1 small clove garlic, grated
Garnish: ground black pepper

Steps:

  • In a 12-inch cast-iron skillet, cook bacon over medium heat until crisp, 10 to 12 minutes. Remove bacon, and let drain on paper towels, reserving drippings in skillet. Roughly chop bacon.
  • Add Brussels sprouts to skillet; cook over medium-high heat, stirring frequently, until browned and tender, 12 to 14 minutes. (Reduce heat as necessary to prevent overbrowning.) Stir in butter, vinegar, mustard, 1 teaspoon salt, and ¼ teaspoon pepper.
  • In a small bowl, stir together sour cream, horseradish, garlic, remaining 1 teaspoon salt, and remaining ¼ teaspoon pepper. Top sprouts with bacon, and drizzle with sour cream sauce. Garnish with pepper, if desired.

2 (8 ounce) center-cut filet mignon, 1 1/2 inches thick, 7 to 8 ounces each, dried thoroughly with paper towels
2 slices bacon
2 teaspoons olive oil
salt and pepper
1/4 cup mayonnaise
1/4 cup sour cream
3 teaspoons horseradish (to taste)
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce

Steps:

  • Sauce:.
  • At least two hours prior, mix together the mayonnaise, sour cream, horseradish, mustard and lemon juice; cover and place in refrigerator.
  • Steak:.
  • Adjust oven rack to lower-middle position, place rimmed baking sheet or cast iron griddle on oven rack, and heat oven to 450 degrees.
  • When oven reaches 450 degrees, heat 10-inch heavy-bottomed skillet (not nonstick) over high heat on stovetop until very hot, about 3 minutes.
  • Meanwhile, rub each side of steaks with 1/2 teaspoon oil and sprinkle generously with salt and pepper.
  • Wrap 1 slice bacon around circumfrence of each filet, overlapping ends and securing to meat with toothpick.
  • Place steaks in skillet and cook, without moving steaks, until well-browned and a nice crust has formed, about 3 minutes.
  • Turn steaks with tongs and cook until well-browned and a nice crust has formed on second side, about 3 minutes longer. (watch carefully).
  • Hold filets on their sides briefly with tongs in skillet to crisp bacon slightly.
  • Remove pan from heat, and use tongs to transfer steaks to hot baking sheet in oven (which has been lightly sprayed with non-stick cooking oil).
  • Roasting times:.
  • Very Rare: 2 to 4 minutes (center of steaks will appear cherry red and feel very soft and loose when cut with tip of paring knife),.
  • Rare: 4 to 6 minutes (centers will appear red and soft),.
  • Medium Rare: 6 to 8 minutes (centers will appear pink and feel firm but juicy).
  • Medium: 8 to 10 minutes (centers will appear light pink and feel firm and compact).
  • Transfer steaks to large plate; loosely tent with foil, and let rest about 5 minutes before serving.
  • Serve with horseradish sauce.

24 medium shrimp (24-31 per pound)
2 ounces apricot preserves
1/2 teaspoon grated horseradish
2 teaspoons juice from 1 lime

  • Place bacon on paper towel and microwave until fat begins to render but bacon is still soft, about 40 seconds, then allow to cool completely. Wrap a halved piece of bacon around each shrimp and secure with a toothpick, reserve.
  • Combine apricot preserve, horseradish, and lime juice, then taste for seasoning adding additional lime juice, horseradish, or salt if necessary. Set aside until ready to serve.

24 water chestnuts, drained
12 slice bacon, cut in half
6 Tbsp unsalted butter
8 oz cream cheese, softened
1/2 c mayonnaise
1/2 c sour cream
3 Tbsp horseradish
splash of hot pepper sauce
1 Tbsp lemon juice

Steps:

  • 1. Wrap 1 shrimp around 1 water chestnut.
  • 2. Wrap in 1 bacon piece and secure with toothpick.
  • 3. Repeat with remaining shrimp, water chestnuts and bacon.
  • 4. Melt 3 tablespoons butter in heavy large skillet over high heat.
  • 5. Add half of shrimp and cook until bacon browns, about 2-1/2 minutes per side.
  • 6. Transfer to large gratin dish.
  • 7. Repeat with remaining butter and shrimp.
  • 8. Preheat broiler.
  • 9. Beat cream cheese in medium bowl until smooth.
  • 10. Add remaining ingredients and beat until blended.
  • 11. Season with salt.
  • 12. Spoon sauce over shrimp.
  • 13. Broil until top is golden brown.
  • 14. Divide shrimp among plates and serve.
