GREEN BEANS WITH CRANBERRIES, BACON AND GOAT CHEESE



Green Beans with Cranberries, Bacon and Goat Cheese image

These green beans with cranberries, bacon and goat cheese are a healthy addition to your Thanksgiving table that doesn't skimp on flavor.

2 pounds green beans, washed and trimmed
6 slices bacon
1 cup fresh cranberries
4 ounces goat cheese, crumbled
salt & pepper to taste

Steps:

  • In a large skillet over medium-high heat, cook the bacon until crispy. Remove the bacon from the pan and set aside but leave the grease in the pan.
  • Add the green beans to the pan with the bacon grease. (*see note) Sauté for 3-5 minutes, tossing occasionally until the green beans start to "char". At this point, cover the skillet with a lid and let steam for another 5-7 minutes.
  • Remove the lid, add the cranberries and sauté for another 2 minutes until the cranberries are warmed through and starting to burst. Season with salt and pepper to taste.
  • Plate the green beans with the cranberries, crumble the goat cheese and bacon on top and serve warm.

This is a nice green bean dish for company that's low carb, too. Reheats nicely for leftovers.

8 slices bacon - cooked, crumbled and divided
1 (16 ounce) package frozen cut green beans
1 teaspoon minced garlic
4 ounces crumbled feta cheese, divided
½ teaspoon onion powder
⅛ teaspoon ground black pepper
2 tablespoons water

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly browned but only slightly crisp. Drain grease, leaving a small amount in the skillet for later use. Crumble bacon, reserving 2 tablespoons for garnish, and set aside.
  • Cook frozen beans in a covered, microwavable dish for about 3 minutes until thawed, but not fully cooked. Drain liquid, pat dry, and set aside.
  • Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic until garlic is lightly golden. Add green beans and feta cheese, and season with onion powder and black pepper. Cook and stir until most of the feta cheese has melted, about 2 minutes. Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon. Serve hot.

8 slices bacon, cooked, crumbled, and divided
1 lb fresh green beans, cooked al dente with still some crunch to them
1 teaspoon minced garlic
4 ounces feta cheese, crumbled and divided
1/2 teaspoon onion powder
1/8 teaspoon ground black pepper
2 tablespoons water

Steps:

  • Place the bacon in a large, deep skillet.
  • Cook over medium-high heat until evenly browned but only slightly crisp.
  • Drain grease, leaving a small amount in the skillet for later use.
  • Crumble bacon, reserving 2 tablespoons for garnish, then set aside.
  • Cook green beans in a large saucepan of salted water 5-6 minutes, or until they are just crisp, about 5-6 minutes. Don't over-cook. Drain and set aside.
  • Reheat skillet with residual bacon grease over medium-high heat. Stir in bacon and garlic, until garlic is lightly golden.
  • Add green beans and Feta cheese and season with onion powder and freshly ground black pepper.
  • Cook and stir until most of the Feta cheese has melted, about 2 minutes.

150g green beans
2 peaches
2 nectarines
10 cherries
1tbsp olive oil, in a small bowl
1 little gem or romaine lettuce
½ cucumber, cut into rounds
1 large tomato
150g feta
for the vinaigrette:
juice of 1 lemon
6tbsp extra-virgin olive oil
½tsp yellow mustard

Steps:

  • Bring a pan of water to the boil and blanch the beans for around 6 mins, until al dente. Drain and plunge into iced water. When cool, drain.
  • For the vinaigrette, mix the lemon, oil and mustard with a pinch of salt and pepper in a lidded jar. Shake well and set aside.
  • Halve and stone the fruits, then pat or brush all over with the oil. Grill or griddle on medium-high for 4 mins on each side, then set aside to cool in the fridge.
  • Rinse and dry the lettuce leaves, then mix them in a large bowl with the cucumber and tomato. Add the chargrilled fruits, give the vinaigrette another shake and add this too, until everything is well coated. Serve on a large summer platter with the feta crumbled on top.
