This is very similar to a famous Missouri bakery's recipe for spinach bacon egg souffle. This method is faster and easier, so it works better for families!

8 eggs
¾ cup whole milk
1 teaspoon garlic salt
¼ teaspoon ground black pepper
½ pound bacon
1 red bell pepper, chopped
¼ cup minced onion
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup shredded Monterey Jack cheese
¼ cup finely shredded Asiago cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Beat eggs in a bowl using a fork. Add milk, garlic salt, and black pepper to eggs and beat until fully integrated.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate and drain grease from skillet. Chop bacon.
  • Saute red bell pepper and onion in the same skillet over medium-high heat until tender, 5 to 10 minutes.
  • Spread spinach into the bottom of the prepared baking pan; top with bacon and red bell pepper mixture. Pour egg mixture over bacon mixture and sprinkle Monterey Jack cheese and Asiago cheese over egg mixture.
  • Bake in the preheated oven until a knife inserted in the center comes out clean, 35 to 45 minutes.

A friend of mine made this, and I just had to have the recipe. And it is the best tasting quiche I have had in years. Never any complaints when I make it. Great for a fall/winter dinner with a cup of soup.

¾ pound sliced bacon
1 (9 inch) single refrigerated pie crust
6 eggs, beaten
1 ½ cups heavy cream
salt and ground black pepper to taste
2 dashes Worcestershire sauce
5 dashes hot pepper sauce, or to taste
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 ½ cups shredded Cheddar cheese
½ cup chopped green onion
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop when cool.
  • Fit the pie crust into a 9-inch pie dish, and set aside.
  • In a bowl, whisk together the eggs, cream, salt, black pepper, Worcestershire sauce, and hot pepper sauce. Spread the spinach into the bottom of the pie crust; top with bacon, Cheddar cheese, and green onion. Pour the egg mixture over the filling, and sprinkle the quiche with Parmesan cheese.
  • Bake in the preheated oven until the top is lightly puffed and browned, and a knife inserted into the center of the quiche comes out clean, 35 to 45 minutes.

A lovely mid week dinner, simple but very delicious!

Number Of Ingredients 8

250g plain flour
150g butter- cubed
1 egg yolk
a drop of water
450g spinach
6 rashers bacon
1 onion, chopped
a knob of Butter

Steps:

  • Process the flour and butter together until you have a crumb consistency (a few seconds should do it).
  • Add the water and egg yolk and process again until it combines. Use your hands to work it into a ball, wrap in clingfilm and let it rest in the fridge for 30mins.
  • Preheat the oven to 180C/fan 160/ gas 4.
  • Wilt the spinach in a frying pan with a couple of tablespoons of water, this should only take a minute or so. Drain and squeeze all the green juices from the spinach- you want this to be as dry as you can make it.
  • Cook the bacon and onion together until they are both golden. Combine this lovely mixture with the spinach in a large bowl. Add in your eggs and swirl the mixture together adding a generous pinch of salt and pepper
  • Get the pastry from the fridge. Roll 2/3 of the pastry out on to a floured surface, line a 23cm fluted pie dish with the pastry and cut of any excess. Brush a little of the egg wash around the side of the pastry.
  • Roll out the remaining pastry out and cover your pie. Pinch the sides together to form a seal. Brush the top of the pastry with a liberal helping of egg wash.
  • Pop this beauty into the oven and bake for 50 minutes to 1 hour or until golden brown.

Steps:

  • Whisk the eggs and milk together using a fork.

  • Pour into a 20x30 cm/8x12 inch square baking dish that has been greased and lined with baking parchment paper.
  • You may need to move the vegetables in the dish with the fork so they are evenly distributed.
  • Optional: Place the sliced cherry tomatoes and cheese on top.
  • Bake at 180C/350F for 20-30 minutes.

Of course, you can make many a variation on this savory pie (aka quiche), but this is my family's favorite. And a great dish to make ahead for guests (served at breakfast or brunch) or frozen and brought out on a night when cooking is the last thing on your mind. It is delicious! Tossed spinach salad is a wonderful accompaniment.

1 (9 inch) pie crusts (I use frozen)
6 -8 slices bacon, crumbled
6 ounces mushrooms
Baby Spinach, washed
3 large eggs
3/4 cup milk
1/2 cup monterey jack pepper cheese, shredded
sea salt
ground black pepper

Steps:

  • Preheat oven to 400 degrees. Bake frozen pie crust according to directions (10-12 minutes or until just starting to color). Remove from oven and lower temperature to 375 degrees.
  • Fry bacon until crisp, drain on papertowels, and use tablespoon of bacon drippings to cook mushrooms (8-10 minutes). Add spinach for last couple of minutes, just until tender. Turn off heat and add back crumbled bacon.
  • Whisk eggs and milk together. Stir in spinach-bacon-mushroom mixture plus 1/4 cup cheese. Sprinkle other 1/4 cup cheese on bottom of pie crust. Pour mixture into pre-baked pie-crust and set on cookie sheet to bake for about 35 minutes.
  • Let pie rest for 10 minutes before cutting it into wedges.

1/2 fresh spinach, chopped

1 tablespoon milk

  • Fry chopped bacon in a non stick skillet.
  • Beat together egg, egg whites, milk, salt, and pepper.
  • When bacon is almost done, add chopped spinach and saute until just wilted.
  • Add egg mixture and scramble.

  • MAKE PIESet pastry aside to defrost. Preheat oven to 190ºC (375ºF) fan bake. Peel the potato, prick with a fork and microwave for 4-5 minutes. Leave to cool. Crush garlic. Heat 1/2 tablespoon of oil in a frying pan over a medium heat. Add garlic and spinach and cook for a couple of minutes to wilt spinach. Set aside.
  • Use a pastry brush to spread the remaining 1/2 tablespoon of oil over the base and sides of a round cake tin (approx. 20cm x 6cm) with removable base. Cut a circle from one of the savoury pastry sheets to form the base of the pie (do this by placing the tin on top of the pastry and cutting around it). Place in the tin. Cut the remaining savoury pastry sheet into 3 strips and use to form the edges of the pie. Press the seams together to seal.
  • Thinly slice the potato and dice half the bacon. Place on the uncooked pastry base. Whisk together two of the eggs with the milk and mustard. Season well with salt and pepper and pour over the potato and bacon. Sprinkle the cheese on top, followed by the spinach. Layer the other half of the bacon over the spinach, cutting as necessary to fit. Crack the remaining six eggs on top of the bacon. Season with salt and pepper. Fold the pastry edges over, partially covering the eggs. Cut a circular lid for the pie from the puff pastry sheet and place on top.   • MAKE SALADWhile pie is cooking, trim ends off the beans and cut beans in half. Place in a heatproof bowl and pour boiling water over the top. Leave for 4 minutes then drain and set aside. Toast the almonds in a frying pan. Slice the tomatoes in half and thinly slice the cucumber; combine in a large bowl with the spinach and beans. Crumble feta over the top and sprinkle with almonds. Whisk together oil, vinegar and sugar and drizzle over the salad.
