BACON CHEDDAR CHEESE BALL

Bacon Cheddar Cheese Ball image

This was a very dangerous recipe for me--I could not stop eating it. Recipe courtesy of A Thrifty Mom. Serving size is estimated, but you may want to double the recipe if you dare.

Time 15m

Yield 8 serving(s)

Number Of Ingredients 10

8 ounces cream cheese, softened
1 cup cheddar cheese (shredded)
1 cup cheddar cheese (for outside of ball)
1/3 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 cup onion, chopped (you can use green onion or whatever you have)
1 teaspoon parsley flakes
1/3 cup bacon, crumbled and cooked

Steps:

  • Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
  • With a spoon pull mixture toward middle of the bowl and try to form a ball.
  • Then cover and place in refrigerator until chilled and firm.
  • After it has chilled, it will be easier to work with.
  • Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
  • Roll until all sides are coated and press the cheese into the ball.

SMOKY FOOTBALL CHEESE BALL WITH PECAN-BACON CRUST

Smoky Football Cheese Ball with Pecan-Bacon Crust image

Provided by Alejandra Ramos

Categories     appetizer

Time 2h20m

Yield 10 servings

Number Of Ingredients 10

6 strips bacon, at room temperature
Three 8-ounce packages cream cheese, softened to room temperature
1 cup (8 ounces) shredded Cheddar or Monterey Jack cheese
1/4 cup heavy cream
2 teaspoons hot sauce, such as Tabasco
1 tablespoon smoked Spanish paprika
1 tablespoon Worcestershire sauce
1 cup (8 ounces) chopped pecans
3 slices white Cheddar or provolone cheese
Crackers or your favorite bread, for serving

Steps:

  • Lay the bacon strips in a cold skillet, raise the heat to medium and cook, turning, until desired crispness, 5 to 10 minutes. Drain on paper towels.
  • Meanwhile, combine the cream cheese, Cheddar, heavy cream, hot sauce, paprika and Worcestershire sauce in a large bowl with an electric mixer until the mixture is smooth and even. Scrape the mixture onto a serving platter and use clean hands to shape it into a football.
  • Chop the bacon and combine with the chopped pecans in a medium bowl. Press the bacon-and-pecan mixture into the cheeseball to cover completely.
  • Cut the slices of cheese into one long 3/4-inch thick strip and 5 to 8 small strips. Arrange the cheese strips on the cheese ball to look like the laces on a football.
  • Cover with plastic wrap and let chill for at least 2 hours before serving with crackers or bread.

  • Place the bacon slices in a single layer on 2 rimmed baking sheets lined with foil. Bake until crisp, about 15 minutes. Drain the bacon on paper towels. Spoon 2 tablespoons bacon drippings into a skillet and reserve the rest of the drippings for another use. Once the bacon has cooled, coarsely chop it.
  • Heat the bacon drippings in the skillet over medium heat. Add the jalapeño and sauté until softened, about 5 minutes.
  • Using a stand mixer or a bowl and a spatula, mix together 1 cup chopped bacon, the sautéed jalapeño, the cream cheese, Cheddar, and the scallions until combined. Scrape the mixture onto a large sheet of plastic wrap and, using the plastic wrap to keep your hands from getting messy, shape the mixture into a round ball. Refrigerate for at least 2 hours and up to overnight.
