CORN CHOWDER WITH BACON



Corn Chowder with Bacon image

Pureeing some of the corn-and-potato mixture in a blender gives this soup rich creaminess without much cream. Red bell pepper imparts a beautiful golden hue to the chowder (and is a great source of vitamin C). For a final touch, a little bacon crumbled over this easy corn chowder recipe goes a long way.

3 slices center-cut bacon
1 cup chopped red bell pepper
1 cup chopped onion
4 cloves garlic, minced
2 cups fresh corn kernels (3-4 ears)
3 tablespoons water, divided
½ teaspoon salt
1 tablespoon all-purpose flour
2 cups low-sodium chicken broth, divided
¼ cup dry white wine
8 ounces Yukon Gold potatoes, peeled and diced
5 sprigs fresh thyme, plus leaves for garnish
¼ cup half-and-half
½ tablespoon butter
½ teaspoon ground pepper

Steps:

  • Cook bacon in a large saucepan over medium heat until crisp, 8 to 9 minutes. Transfer the bacon to a paper towel-lined plate, reserving 1 Tbsp. drippings in the pan. Crumble the bacon and set aside.
  • Add bell pepper, onion, and garlic to the pan; cook, stirring often, until browned and tender, 6 to 8 minutes. Transfer the bell pepper mixture to a medium bowl; set aside. Add corn, 2 Tbsp. water, and salt to the pan; cook, stirring often, until the corn is golden, 4 to 5 minutes. Stir in the remaining 1 Tbsp. water, scraping the bottom of the pan to loosen any browned bits.
  • Return the bell pepper mixture to the pan. Stir in flour; cook, stirring constantly, for 1 minute. Stir in 1/4 cup broth and wine; cook, stirring constantly and scraping the bottom of the pan to loosen browned bits, for 1 minute. Stir in potatoes, the remaining 1 3/4 cups broth, and thyme. Cover and bring to a boil. Reduce heat to low and simmer until the potatoes are fork-tender, 15 to 18 minutes.
  • Remove and discard the thyme sprigs. Transfer 2 cups of the soup to a blender. Remove center piece of lid (to let steam escape), secure the lid on the blender, and cover with a kitchen towel. Puree until smooth (use caution when blending hot liquids). Return the blended soup to the pan. Stir in half-and-half and butter. Divide between 4 bowls; sprinkle with pepper and garnish with the crumbled bacon and thyme leaves, if desired.

Make your next Corn Chowder extra tasty by using the bacon drippings to make the soup base and after cutting the kernels off, throw the corn cobs into the broth to infuse it with extra corn flavour! The potato is cooked until very soft, so the edges are starting to breakdown and this helps thicken the soup. Recipe VIDEO below.

Number Of Ingredients 15

4 ears of corn
4 cups / 750g / 1.5 lb frozen or canned corn (, drained)
1 tsp butter ((or oil))
250g / 8 oz bacon (, chopped)
30g / 2 tbsp butter ((use 3 tbsp if bacon is lean))
1 garlic clove (, minced)
1 small onion (, diced (or half large onion) (yellow, brown or white))
5 tbsp flour
2 cups chicken broth (, low sodium)
3 cups milk ((I use low fat but full fat will work too))
600g / 1.2 lb potatoes (, cut into 1 cm / 2/5" cubes (about 2 large))
2 sprigs of thyme OR 1 tsp dried thyme
3/4 cup cream ((Note 1))
3/4 cup shallots / scallions (, green part finely sliced)
Salt and finely ground pepper to taste

Steps:

  • Cut the corn off the cob. This is how I do it: Place a small ramekin in a large bowl. Place corn on the ramekin then cut the corn off. See video. Keep naked cobs.
  • Place 1 tsp butter in a large pot over medium high heat. Add bacon and cook until golden. Use a slotted spoon to remove onto a paper towel lined plate. Leave fat in pot.
  • Lower heat to medium high. Add 2 tbsp butter, once melted, add garlic and onion. Cook for 2 - 3 minutes until onion is translucent.
  • Add flour and mix it in. Cook, stirring, for 1 minute.
  • Add broth, milk, potatoes, thyme and bay leaf. Break naked cobs into 2 or 3 and add into the liquid. Put the lid on and simmer for 25 minutes (adjust heat so it's simmering energetically but not bubbling like crazy or super gently).
  • Remove lid, remove corn cobs. Add corn and cook for 5 minutes or until cooked to your taste.
  • Stir through cream and 3/4 of the bacon and shallots. Adjust salt and pepper to taste. Ladle into bowls and garnish with remaining bacon and shallots.

1 pound sliced bacon
2 (10.75 ounce) cans condensed cream of potato soup
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10 ounce) can canned whole kernel corn
2 cups whole milk, or as needed
¼ teaspoon curry powder, optional
1 pinch salt and black pepper to taste

Steps:

  • Place potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes; drain.
  • Meanwhile, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside until potatoes are done.
  • Add the bacon, potato soup, mushroom soup, corn, milk, and curry powder to the potato pot, and simmer over medium heat at least 15 minutes, stirring often. Season to taste with salt and pepper, and serve.

1 small onion, chopped

1 quart half-and-half cream
1 package (16 ounces) frozen corn, thawed

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 teaspoon drippings. , In the drippings, saute the onion, celery and green pepper until tender. Add the potatoes, broth, salt, thyme and pepper. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until potatoes are tender., Combine flour and cream until smooth; stir into pan. Add corn. ½ pound thick sliced bacon, cut into 1/2-inch pieces
2 carrots, diced
4 stalks celery, chopped
1 bay leaf
2 tablespoons butter
2 tablespoons flour
4 cups milk
2 large potatoes, peeled and diced
1 (15.25 ounce) can whole kernel corn, drained
1 pinch paprika

Steps:

  • Cook the bacon pieces in a large skillet over medium heat until the fat has rendered, and the bacon is crispy, about 8 minutes. Remove the bacon, leaving the grease in the pan. Stir the carrot, celery, and bay leaf into the bacon grease; cook for 5 minutes.
  • Meanwhile, melt the butter in a large pot over medium-low heat. Whisk in the flour, and cook for 5 minutes, stirring constantly. Slowly whisk in the milk, and bring to a simmer over medium-high heat. Once simmering, cook for 5 minutes, whisking frequently. Add the bacon, cooked vegetables, potatoes, and corn. Return to a simmer, then reduce heat to medium-low, and cook until the potatoes are tender, about 20 minutes more. Use additional milk as needed to to achieve desired consistency. Garnish with paprika to serve.

1 pound bacon, diced
3 onions, diced
1 bunch celery, diced
3 tablespoons minced garlic
2 quarts water, divided
1 gallon heavy whipping cream
1 cup butter
1 ¾ cups all-purpose flour
18 potatoes, peeled and diced
2 (16 ounce) packages frozen corn
1 red bell pepper, diced
2 pinches red pepper flakes, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Place bacon in a large heavy-bottom pot and cook over medium-high heat until crispy, about 10 minutes. Add onions and celery to bacon and stir until coated in bacon grease; add garlic.
  • Pour 1 quart water over onion mixture and cover pot; steam vegetables until partially tender, about 5 minutes. Add remaining 1 quart water and cream; reduce heat to medium.
  • Melt butter in a saucepan over medium heat; stir flour into melted butter and cook until mixture forms a paste. Add potatoes to flour-butter paste and cook until paste is lightly browned and the raw flavor of flour is gone, about 5 minutes. Slowly stir potato mixture into vegetable and cream mixture and cook until soup is smooth, potatoes are tender, and temperature is 170 degrees F (75 degrees C) to 180 degrees F (80 degrees C), 30 to 40 minutes.
  • Cook and stir corn and red bell pepper together in a cast iron skillet over medium heat until golden brown, 10 to 15 minutes. Mix corn mixture into soup and season with red pepper flakes, salt, and pepper.

6 slices bacon, cooked, crumbled and set aside
2 cups water
2 cups diced potatoes
1/2 cup thinly sliced carrot
1/2 cup thinly sliced celery
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried thyme
1 (14 3/4 ounce) can creamed corn
7 1/2 ounces creamed corn (1/2 of one 14.75 oz. can)
1/4 cup butter
1/4 cup cornstarch
2 cups milk
1 1/2-2 cups shredded sharp cheddar cheese

Steps:

  • In a large soup pot, (12 cup capacity) add the water, potatoes, carrots, celery, onion, salt, pepper and thyme.
  • Bring to a boil, then reduce heat, cover, and simmer for 15 minutes (until vegetables are some what tender) do not drain.
  • Add the 1-1/2 cans of creamed corn, and bacon.
  • Keep covered, and cook over very low heat.
  • Intructions to cooking the White Sauce --.
  • In a medium- size saucepan, (over low heat) add the butter until melted.
  • In a glass measuring cup, combine the milk and cornstarch; mix well.
  • Raise the heat just abit, and add the milk-cornstarch mixture.
  • Keep stirring until it becomes somewhat thick.
  • Add the shredded cheese; stir until completely melted.
  • Add this to the corn chowder, stir and heat through thoroughly, but do not boil.

6 medium ears of corn, husks and silks removed
4 slices bacon, cut into 1/2-inch pieces
1 medium red onion, chopped
1 jalapeno, seeded and finely chopped
1 garlic clove, finely chopped
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 lb red potatoes, cut into 1/2-inch pieces (6 medium)
29 ounces chicken broth
2 cups half-and-half
1 medium ripe tomatoes, peeled, seeded, and chopped
thinly sliced fresh basil leaf

Steps:

  • Cut kernels from corncobs(about 3 cups), reserving 3 corncobs. Discard remaining corncobs.
  • In a 5-quart Dutch oven, cook bacon over medium heat until browned. With slotted spoon, transfer bacon to paper towels to drain and crumble. To bacon drippings in Dutch oven, add onion and jalapeno and cook stirring until onion is tender (about 5 minutes). Add garlic and cook 1 minute longer.
  • With wire whisk, whisk in flour, salt, and pepper. Cook stirring for 1 minute longer. Stir in potatoes, corncobs, broth, and half and half. Heat to boiling over high heat. Reduce heat and cover and simmer until potatoes are tender (10 to 15 minutes).
  • Discard corncobs and stir in corn kernels and heat through. Ladle chowder into tureen. Stir in tomato and sprinkle with bacon and basil.
