SLOW-COOKER BACON CHILI



Slow-Cooker Bacon Chili image

Bacon makes everything better. This easy chili combines beef, bacon and beans for a hearty slow-cooker dinner that's sure to fill you up!

1 lb bacon, chopped
1 lb lean (at least 80%) ground beef
1 medium red bell pepper, chopped (1 cup)
1 cup chopped onions
2 cloves garlic, finely chopped
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 cup Cascadian Farm™ frozen organic sweet corn
1/2 teaspoon salt
2 tablespoons chili powder
Sour cream
Shredded Cheddar cheese
Chopped onion
Chopped fresh cilantro leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 12-inch skillet, cook bacon 12 to 14 minutes over medium heat, stirring occasionally, until crispy. Drain on paper towels. Reserve 1/4 cup; cover and refrigerate until ready to serve. Add remaining bacon to slow cooker.
  • Reserve 1 tablespoon drippings in skillet. Add beef, bell pepper, onion and garlic. Increase heat to medium-high. Cook 6 to 9 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Add beef mixture to slow cooker; stir in remaining chili ingredients. Cover; cook on High heat setting 3 to 4 hours or on Low heat setting 6 to 8 hours. Serve with reserved bacon and Toppings.

1 lb ground beef
2 Tbsp olive oil
2 Tbsp bacon fat
1 medium yellow onion
1 Tbsp brown sugar
4 c beef broth
10 oz cherry tomatoes
6 tomatoes on the vine
3 bell peppers
1 Tbsp salt
1 Tbsp chili powder
1 Tbsp cumin
1 tsp pepper
6 oz tomato paste
12 oz white mushrooms
1 ear of corn
8 oz black beans
1 c hard apple cider
1 c dark brown ale beer
1/4 c beer - for deglazing pan

Steps:

  • 1. Brown beef on olive oil in saute pan.
  • 2. Remove beef with slotted spoon into big pot. Leave drippings in saute pan; add bacon grease.
  • 3. Add onions to saute pan.
  • 4. Top onions with brown sugar (more for carmelization of onions, rather than flavor). Sautee until onions are translucent and soft.
  • 5. Pour onions into pot, drippings and all.
  • 6. Deglaze saute pan with 1/4 cup beer, scraping up brown bits from bottom. Pour that into the pot.
  • 7. Into the pot, add broth, all tomatoes (add them whole), bell peppers, tomato paste, and all spices. Give it a really good stir, cover and simmer on very low heat, for about an hour.
  • 8. While waiting, dice mushrooms into itty bitty pieces, and shuck that ear of corn.
  • 9. After an hour, give your chili a few good stirs, and use back of big spoon or spatula, to push down on the tomatoes, breaking them up. Add mushrooms and corn. Cover and let simmer on very low heat for another hour.
  • 10. After that hour, now add beans and beer. Stir, cover and let simmer on very low heat for 30 minutes.
  • 11. Turn off heat, uncover and stir, break up some more tomatoes, and then cover it back up and let it sit, covered, for at least 30 minutes before serving. Top with shredded cheese and scallions when serving.

1/4 lb bacon
1 cup chopped onion
1/2 cup chopped celery
3 minced garlic cloves
1 (15 ounce) can pinto beans
1 (15 ounce) can diced tomatoes
1/3 cup apple juice
1/2 cup ketchup
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon cumin
1/2 teaspoon pepper
2 teaspoons chili powder
1 teaspoon liquid smoke

Steps:

  • In large pan, fry bacon until crisp. Reserve about 3 T bacon grease, and then discard the remaining grease.
  • Remove bacon from pan and chop into small pieces.
  • Add reserved bacon grease back into the pan.
  • Over medium heat, cook onions and celery until tender.
  • Add minced garlic and cook for about 3 minutes.
  • Add remaining ingredients and stir well.
  • Simmer for at least 20 minutes.
  • Add chopped bacon and simmer for another 5 minutes, or until bacon is heated.

3 slices thick-cut bacon, chopped
1 large onion, chopped
4 garlic cloves, minced
2 pounds lean ground beef
1 tablespoon chili powder
1 teaspoon smoked Spanish paprika
1 teaspoon salt
¼ teaspoon cayenne pepper
1 (14.5 ounce) can fire-roasted diced tomatoes
1 ½ cups hard apple cider (such as Samuel Smith®)
1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
1 (14.5 ounce) can pinto beans, drained

Steps:

  • Place bacon in a large pot over medium-high heat; cook until starting to brown, about 5 minutes. Add onion; reduce heat to medium and cook, covered, stirring occasionally, until translucent, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute.
  • Increase heat to medium-high and add ground beef to the pot; cook and stir until no longer pink, about 5 minutes. Stir in chili powder, smoked paprika, salt, and cayenne pepper; cook for 1 minute.

I wrote this recipe along with my Dad in November of 2007. It's a sweet, smokey, new twist on chili. It's great topped with Shredded sharp cheddar cheese. It also won first place for Non-Traditional Chili at a school cookoff.

1 lb hickory smoked bacon, cut into 1-inch pieces
1 1/2 large sweet onions, Diced
2 jalapeno peppers, De-seeded, De-veined, Diced
2 lbs ground beef
1 1/2 cups apple cider
1 tablespoon liquid smoke
1/2 teaspoon liquid smoke
2 teaspoons cumin
1 bay leaf
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder
15 ounces red kidney beans, drained
15 ounces diced tomatoes with juice
15 ounces tomato paste (1 1/2 small cans)
3 medium cortland apples

Steps:

  • In a large saucepan, fry Bacon until crispy over medium-high heat. Remove from pan and set aside.
  • Sautee onions and peppers in bacon grease. About 3-5 Minutes.
  • Add beef and cook until brown.
  • Add cider and one tablespoon liquid smoke. Bring to a boil.
  • Add cumin, bay leaf, salt, cayenne, garlic and chili powder and mix.
  • Add beans, tomatoes and tomato paste. Bring to a boil. Simmer for about two and a half hours or until thickened.
  • Remove the core from the apples and cut into a medium to large dice.
  • Add bacon, apples, and the half teaspoon of Liquid Smoke and mix.
  • Serve Hot topped with Shredded Cheese.
