While we love a grilled burger, this one is our go-to for all seasons. Instead of making a typical patty, we smash the meat in a super-hot cast-iron pan to get crispy, ruffled edges. Once you smash your burgers this way, you'll never go back! We top them with all the fixings, including our perfectly balanced special sauce. It's what we consider an iconic burger.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

Garbage Bread is like a bacon cheeseburger Stromboli! Perfect for game day, or a weeknight meal....AND totally adaptable!

Number Of Ingredients 10

1/2 pound chopped bacon
1 cup chopped onion
1 pound lean ground beef
1 tablespoon steak seasoning (I used McCormick)
12 ounces Velveeta, cubed
1 (13.8 ounce) thin crust pizza dough (I used Pillsbury)
1 1/2 cups grated cheddar jack cheese
1/2 cup mayonnaise
2 tablespoons ketchup
salt & pepper to taste

Steps:

  • Preheat oven to 425°. Line a baking sheet with parchment paper and set aside.
  • In a large skillet over medium-low heat cook bacon until it's crisp. Remove the bacon from the pan and set aside. Drain most of the grease.
  • In the same skillet, heat to medium high. Add the onions and ground beef into the skillet and cook until the the onions are soft and the meat is cooked through. Drain anymore excess liquid/grease from the pan. Place the skillet back on the heat and turn the heat to low. Add bacon back into the pan and season with the steak seasoning. Add in the Velveeta and stirring continuously cook until the cheese is melted. Remove the pan from the heat.
  • Roll the pizza dough out onto the prepared baking sheet. The dough should be approximately a 15×10 rectangle. Spread the meat mixture evenly on top, leaving an inch at the edges to allow for spreading. Sprinkle the grated cheese on top of the meat. Roll up the pizza dough, starting with the long sides and pinch the crust together to seal. Bake seam side down for 15-20 minutes, or until golden brown. Allow the bread to cool for 5-10 minutes before slicing.

5 slices bacon
1/2 yellow onion (, diced)
1 pound ground beef
2 teaspoons Worcestershire sauce
1/2 teaspoon Kosher salt
1/4 teaspoon coarse ground black pepper
1/2 cup green onions (, sliced)
2 cups cheddar cheese (, shredded)
1 can French bread dough (, (~13.8 oz))
2 tablespoons unsalted butter (, melted)
2 teaspoons sesame seeds

Steps:

  • Preheat oven to 375 degrees.
  • In a skillet on medium heat, cook the bacon until crispy but still chewy, then remove from pan and chop finely.
  • Drain most of the fat then add the ground beef and onion to the pan cooking until the beef is cooked through, about 5-6 minutes.
  • Add in the cooked bacon, Worcestershire sauce, salt and pepper and green onions.
  • Roll out the French bread dough onto a cutting board.
  • Spread the cheddar cheese onto the dough, then add the beef mixture over the dough, leaving a 1" border around the edge.
  • Roll up the dough tightly, rolling along the longer side of the dough. Tuck the 1/2 inch on each side underneath the rolled dough log.
  • Brush the melted butter over the top of the dough and sprinkle with sesame seeds.
  • Bake in oven 20-25 minutes until bread is golden brown.

Add in the Velveeta and stirring continuously cook until the cheese is melted. Remove the pan from the heat.

Recipe of the Day: Bacon Cheeseburger Garbage Bread.

2 pounds ground beef chuck
12 ounces American cheese slices (about 30 slices)
All-purpose flour, for dusting
1½ pounds store-bought pizza dough, at room temperature (see Cook's Note)
5 tablespoons ketchup
2 tablespoons yellow mustard
1 medium red onion, finely chopped
12 strips cooked bacon, broken in half
One 32-ounce jar dill pickle chips (35 to 40 chips)
Sesame seeds, for garnish
½ cup mayonnaise
1 teaspoon dried onion flakes
1 teaspoon sugar
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Heat a large skillet over medium heat. Add the beef and cook, stirring to break it up into small crumbles, until cooked through, 8 to 10 minutes. Meanwhile, roughly chop half of the cheese, leaving other half as slices. Set aside.
  • Using a slotted spoon, remove the beef from the skillet and transfer to a large bowl; discard the fat and liquid in the pan. Let the beef cool completely in the bowl, then stir in the chopped cheese.
  • On a lightly floured work surface, roll the dough into a 20-by-14-inch rectangle. Arrange the beef and cheese mixture evenly on one half of the dough, starting on the shorter end and leaving a 1-inch border on the sides. Drizzle 2 tablespoons ketchup evenly over the beef mixture and the uncovered half of the dough; repeat with all the mustard, and then the red onion. Lay down the remaining cheese slices evenly over the half of the dough with no beef mixture, leaving a 1-inch border on the sides. Arrange the bacon pieces and 24 dill pickle chips just over the beef mixture.
  • Working from the short side with the beef mixture, tightly roll up the dough into a log, jelly-roll style. Pinch the open ends together to seal, then tuck them underneath the log. Transfer the log, seam side-down, to the prepared baking sheet, brush all over with water and sprinkle with sesame seeds. Bake, rotating the pan halfway through, until the bread is golden brown, about 40 minutes.
  • While the bread bakes, whisk together the mayonnaise, onion flakes, sugar, a pinch of salt and pepper and the remaining 3 tablespoons ketchup, 2 tablespoons finely chopped dill pickle chips and 1 teaspoon pickle brine in a small bowl. Taste, and season the special sauce with additional salt if needed. Let the bread cool for 10 minutes. Slice into 8 pieces and serve warm with the special sauce.
