BACON BLUE CHEESE POTATO SALAD



Bacon Blue Cheese Potato Salad image

I'm not crazy about potato salad, but this one is definitely the exception. It's creamy and the flavor is wonderful. I got the recipe from my friend Devon, who got it from somebody else. Don't be put off by the blue cheese - the flavor is not overwhelming at all. I didn't know it had blue cheese until I asked for the recipe.

2 1/2 lbs red potatoes, cut into eighths
5 slices bacon
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
4 green onions, chopped
3 ounces blue cheese, crumbled (about 3/4 cup)

Steps:

  • Boil potatoes until tender.
  • Cook bacon until crisp, and cut into one inch pieces.
  • In a bowl, combine mayonnaise, sour cream, vinegar, salt and pepper.
  • Fold in green onions, cheese, potatoes and bacon.
  • Can be served immediately or refrigerate until ready to serve.

Steps:

  • Combine the first 6 ingredients; toss to coat. Refrigerate, covered, at least 30 minutes. Stir in bacon before serving.

This broccoli salad recipe is from my mother-in-law Martie and is always a crowd pleaser at family events and church picnics. The combination of bacon, cheese, and raisins gives it a sweet and salty taste.

1 pound bacon
1 head broccoli, or more to taste
1 red onion, chopped
1 cup golden raisins
1 (8 ounce) package shredded sharp Cheddar cheese
¾ cup mayonnaise
¼ cup white sugar
1 tablespoon white vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Drain bacon slices on paper towels. Let cool enough to handle, about 5 minutes. Crumble into a small bowl.
  • Cut broccoli into florets, dice up the stems, and put all into a large bowl. Mix in onion. Add raisins and Cheddar cheese. Stir in crumbled bacon.
  • Combine mayonnaise, sugar, and vinegar in a small bowl. Pour over broccoli mixture. Mix until completely covered. Refrigerate for 1 hour before serving.

This is a delicious summer salad, however I make any time of the year. It is always a big hit with family, friends and at church functions. We love it. It is easily made as a lowfat version, using low fat cheese and low fat mayo, even can use Splenda instead of sugar. Serving size is 1/2 cup. I obtained this recipe from Pillsbury Simple Summer Recipes Cookbook in approximately 1990. This is my first post to Recipe Zaar. I really hope you enjoy it.

2 6 ounce packages cornbread mix, plus any additional ingredients called for on the package
1 cup shredded cheddar cheese (plus extra for garnish)
½ of a sweet onion (such as Vidalia, diced)
1 green bell pepper (diced)
2 ribs celery (diced)
1 16 ounce jar mayonnaise
1 teaspoon garlic salt
2 cups chopped fresh tomatoes
3 slices bacon (cooked and crumbled)
Optional: chopped fresh chives for garnish

Steps:

  • Prepare both packages of cornbread according to package instructions, adding 1 cup of shredded cheese to the batter before baking.
  • Allow cornbread to cool completely. Crumble into large pieces over a very large bowl.
  • Add onion, bell pepper, celery, mayonnaise, garlic salt, and tomatoes to the bowl. Stir gently until completely combined.
  • Cover and refrigerate until ready to serve.
  • Just before serving, top with crumbled bacon, additional cheese, and fresh chives.

1/2 cup crumbled blue cheese (about 2 ounces)
For the easy caesar dressing:
1/2 cup freshly grated Parmesan (about 2 ounces)
1/4 cup plus 2 tablespoons olive oil
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup fresh lemon juice
2 garlic cloves
1 teaspoon Worcestershire sauce Makes about 1 cup
1 cup Garlic Croutons
For the garlic croutons:
2 tablespoons (1/4 stick) butter
1/4 cup olive oil
2 large garlic cloves, pressed
4 French bread slices, cut into 3/4-inch cubes

Steps:

  • To make the salad:
  • Place first 3 ingredients in large bowl. Add enough dressing to season to taste and toss well. Garnish salad with croutons and serve.
  • To make the easy caesar dressing:
  • Combine all ingredients in blender or processor. Blend until smooth. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate.)
  • To make the garlic croutons
  • Preheat oven to 350°F. Melt 2 tablespoons butter with olive oil and garlic in small saucepan. Place bread cubes on baking sheet. Pour butter mixture over and toss well. Bake until bread cubes are golden brown and crisp, about 20 minutes. Season with salt and pepper. Cool completely. (Croutons can be prepared 1 day ahead. Store at room temperature in airtight container.)
  • Makes about 3 cups.

  • Scrub potatoes well and place in a large pot. Cover with water and bring to a boil on the stove. Reduce to heat to a medium and continue to cook for approximately 15-20 minutes or until potatoes are tender. Drain potatoes immediately and remove from pot. Allow the potatoes to cool completely.
  • While potatoes are cooling, peel the hard-boiled eggs and allow them to cool (if not cooled yet). When the eggs are cooled, chop them. Cook bacon according to package directions and when cooled, chop, or crumbled the bacon.
  • When potatoes are cool, gently peel potato skins from the potatoes with your fingers (or gently with a potato peeler if you prefer). Dice potatoes so they are in chunks and pieces are somewhat uniform in size. Place potatoes in a large mixing bowl, add cooled bacon, eggs, and mayonnaise. Combine gently. Add shredded cheese last to potato mixture and combine. Season, as desired, with salt and pepper.
